Steps:
- In a small bowl, cream butter and sugar until smooth. Add egg; mix well. Beat in the banana, buttermilk and vanilla. Combine the flour, oats, baking soda and salt; add to creamed mixture just until moistened. Fold in cherries. , Fill paper-lined muffin cups three-fourths full. Sprinkle with walnuts. Bake at 350° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack to cool completely.

MARY BERRY'S BANANA BREAD
Mary Berry's banana bread recipe is small, but perfectly formed and loaded with chocolate chips. You can double this classic loaf cake recipe if you have lots of bananas to use up.

Steps:
- Preheat the oven 160C/140C Fan/Gas 3. Grease and line a 450g/1lb loaf tin with non-stick baking parchment.
- Use a fork to mash the peeled banana in a mixing bowl. Add the remaining cake ingredients (except the chocolate chips) and beat with an electric hand whisk until combined and smooth.
- Stir in the chocolate chips and spoon the mixture into the prepared loaf tin. Level the top.
- Bake for 40-45 minutes or until well risen, shrinking away from the sides of the tin and golden-brown.
- Set aside to cool for 10 minutes, then remove from the tin and leave to cool on a wire rack.
- For the decoration, break the chocolate into small pieces and add to a heatproof bowl.
- Melt the chocolate in the bowl over a pan of simmering water (ensuring that the bowl does not touch the water). Stir regularly, until almost completely melted, then remove from the heat. The heat of the bowl will melt any remaining lumps.
- Spoon the melted chocolate into a piping bag and pipe zig-zags across the top of the loaf. Set aside for the chocolate to set. Slice and serve.
BANANA CHERRY CUSTARD MUFFINS

- Preheat the oven to 375 degrees F. Spray a 12-cup muffin tin with cooking spray.
- Line a plate with 2 layers of paper towels and place the cherries on top to dry briefly.
- Put the bananas in a large bowl and mash them very thoroughly with a fork. Add the vanilla and mix and mash to combine. Add the eggs and whisk until well beaten.
- Divide the cherries evenly among the muffin cups, then pour in the banana custard (each cup will be about three-quarters full). Bake until the muffins are domed and set, 12 to 14 minutes.
- Run a thin knife around the edge of each muffin and remove with a small offset spatula. Cool slightly. Dust with powdered sugar if using and serve.

- Heat oven to 350°F.
- Beat first 5 ingredients with mixer on low speed just until moistened, stopping frequently to scrape bottom and side of bowl. Beat on medium speed 2 min. Pour into greased and floured 13x9-inch pan.

This is a moist, fruity cake. It can be made as a regular cake or in a bundt tin (I used a 10" bundt tin). Cherries can be substituted for blueberries, raspberries - anything you have on hand. The cooking time shown is for a non-fan oven.

- In a large bowl, combine the flour, baking powder, salt, suger.
- In a smaller bowl, mash the bananas.
- To the bananas, add the eggs, vanilla extract, milk and oil and mix. Combine cherries into the mix.
- Add the wet mixture to the other dry ingredients in the large bowl and mix.
- Spray the baking tin with cooking spray (alternatively, grease tin with butter).
- Pour batter into baking tin and cook in a oven pre-heated to 375 degrees for 1 hour 10 minutes.
- Remove cake from oven and allow to cool for 20 minutes. Turn cake onto a plate and allow to cool.

CHERRY BANANA MUFFINS
These are my own creation, full of flavor and healthier without the butter! As soon as you bite in you get a burst of cherry and banana and they are pretty moist, though firm. I hope you enjoy them! I made half with the coconut on top and half with the pecans and couldn't decide which was better. To get the mandarin orange juice I pureed a can of mandarin oranges (drained of syrup) and just drained them in a sieve. (my son gets the oranges for lunch)

- Mix all the dry ingredients together in medium bowl.
- Mix wet ingredients together in small bowl.
- Mix mashed bananas into dry ingredients, then add the wet and combine. (do not overmix).
- Stir in cherries.

EASY CHERRY CAKE
An easy cherry loaf cake that's moist and tender with ground almonds that just needs a cup of tea. Remember to coat the cherries in a little flour so they don't all sink to the bottom of the cake.

- Preheat the oven to 170C/160C Fan/Gas 3½. Grease and line a 900g/2lb loaf tin (approximately 13x23cm/5x9in) with baking paper.
- Cut the cherries in half, tip into a sieve and rinse well under warm water to remove the sticky syrup. Dry well on kitchen paper and tip the cherries into a bowl, add the plain flour, mix well to coat and set aside.
- Cream together the softened butter and 175g/6oz caster sugar until really pale and light. This will take 3-4 minutes and is quicker and easier using a freestanding mixer but an electric hand whisk also works well. Add the eggs, one at a time and mix well between each addition.
- Add the vanilla extract and lemon zest and mix again to combine.
- Sift the flour, baking powder and a pinch of salt into the bowl, add the ground almonds and milk and beat until smooth and thoroughly combined.
- Fold the cherries into the mixture and spoon into the prepared loaf tin. Spread level with the back of a spoon, sprinkle with the remaining caster sugar and scatter with the flaked almonds. Bake on the middle shelf of the preheated oven for 1 hour until the cake is golden-brown, well-risen and a skewer inserted into the middle of the cake comes out clean. If the cake is browning too quickly loosely cover the top with a sheet of foil for the last 15 minutes.
- Leave the cake to cool in the tin for 10 minutes and then carefully lift out onto a cooling rack and leave until cold before slicing.

- Preheat the oven to 350°F (177°C) and grease a 9×13 inch pan.
- Mash the bananas. I usually just use my mixer for this! Set mashed bananas aside.
- Whisk the flour, baking powder, baking soda, cinnamon, and salt together. Set aside.
- Using a handheld or stand mixer fitted with a paddle attachment, beat the butter on high speed until smooth and creamy - about 1 minute. Add both sugars and beat on high speed for 2 minutes until creamed together. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. Add the eggs and the vanilla. Beat on medium-high speed until combined, then beat in the mashed bananas. Scrape down the sides and up the bottom of the bowl as needed. With the mixer on low speed, add the dry ingredients in three additions alternating with the buttermilk and mixing each addition just until incorporated. Do not overmix. The batter will be slightly thick and a few lumps is OK.
- Spread batter into the prepared pan. Bake for 45-50 minutes. Baking times vary, so keep an eye on yours. The cake is done when a toothpick inserted in the center comes out clean. If you find the top of the cake is browning too quickly in the oven, loosely cover it with aluminum foil.
- Remove the cake from the oven and set on a wire rack. Allow to cool completely. After about 45 minutes, I usually place it in the refrigerator to speed things up.
- In a large bowl using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the cream cheese and butter together on high speed until smooth and creamy. Add 3 cups confectioners' sugar, vanilla, and salt. Beat on low speed for 30 seconds, then switch to high speed and beat for 2 minutes. If you want the frosting a little thicker, add the extra 1/4 cup of confectioners sugar (I add it). Spread the frosting on the cooled cake. Refrigerate for 30 minutes before serving. This helps sets the frosting and makes cutting easier.
- Cover leftover cake tightly and store in the refrigerator for 5 days.
BEST EASY BANANA CAKE RECIPE
Steps:
- Preheat oven to 350 degrees F
- Grease a 9x13" pan, set aside.
- In a medium bowl, mix together flour, baking soda, sea salt and cinnamon. Set aside.
- In a large bowl, mash bananas.
- Add melted butter and vanilla and stir until combined.
- Add sugar and stir until dissolved.
- Add eggs and sour cream and stir until combined.
- Add milk and gently mix until combined.
- Add dry ingredients and stir until the mixture is homogenous (uniform throughout) and there are no lumps.
- Pour batter into prepared pan.
- Bake in preheated oven for 35-45 minutes or until a toothpick comes out clean.
- Let the cake cool to room temperature.
- While the cake is baking, make the cream cheese frosting.
- Beat together butter and cream cheese until smooth.
- Add vanilla and 2 cups of powdered sugar and beat (starting on low speed and increasing to medium-high) until smooth.
- Add up to ½ cup more powdered sugar until you reach a spreadable, but thick consistency.
- When the cake is cooled, spread frosting evenly over the top.
- Chill for at least 3 hours, or overnight. Then serve cold or at room temperature.
