ROASTED HALIBUT WITH WALNUT CRUST

- Preheat oven to 450°F. Spray rimmed baking sheet with nonstick spray. Mix walnuts, panko, and all herbs in small bowl; sprinkle with salt and pepper. Brush each fish fillet with 1 tablespoon melted butter; sprinkle with salt and pepper. Place fish on prepared baking sheet. Sprinkle panko-herb mixture atop fish, dividing equally and pressing to adhere. Roast fish until just opaque in center, about 8 minutes. If crisper topping desired, preheat broiler and broil fish about 1 minute, watching carefully to prevent burning. Transfer fish to plates; garnish with lemon wedges.

- Heat oven to 180C/160C fan/gas 4. To make the crust, use a mortar and pestle or processor to grind the hazelnuts with the shallots, garlic, coriander, wasabi and lime juice.
- Lay the fish fillets in a baking dish and smear the tops with the nutty mixture. Spoon a little water round the fillets, just enough to thinly cover the bottom of the baking dish. Bake in the oven for 15-20 mins until the fish is cooked through. Serve with rice, lime wedges and a green salad.

- Combine nuts, cilantro, garlic, oil and zest until well blended; set aside.

- Mix the breadcrumbs with the grated lemon zest, grated Parmesan, chopped parsley, salt and pepper.
- Season the 4 skinless fish fillets. Pan fry in a little oil for 2-3 minutes until just tender. Turn over and sprinkle with the crumb mixture. Brown in the pan under a hot preheated grill for 2-3 minutes. Add the butter to the pan with the juice of 1 lemon. Melt around the fish and serve.

- Preheat oven to 180°C (360°F ) and spray a baking dish with cooking spray.
- Place fillets into dish and brush with the macadamia oil.
- In a small bowl combine the crust ingredients and mix to form a thick paste.
- Spread the macadamia crust over the top of the fish fillets. press on evenly using your hands or the back of a soon.
- Bake for approx 10 minutes , or until the fish flakes when tested with a fork. The cooking time will very depending on the thickness of the fish. Check for doneness after each few minutes.

- MAKE SAUCE/MARINADE AND PREPARE SALMON: Sprinkle salmon with salt and pepper. Place all marinade/sauce ingredients in a small bowl or measuring cup. Microwave for 15 seconds until butter is melted. Use half of sauce to coat top and sides of salmon. Reserve remaining sauce for drizzling. (If you have time, to enhance flavor, place half of cooled marinade in ziploc bag and add salmon. Marinate for 15 minutes then discard marinade).
- TOP WITH PECANS: Place pecans on flat plate and dip top and sides of salmon in pecans to adhere. Or sprinkle top and sides of salmon with pecans, pressing lightly to adhere.
- BAKE AND SERVE : Bake, with nut topping side up, for 10-12 minutes depending on thickness of salmon (bake 10 minutes per inch of thickness). Salmon should be easy to flake but still be warm pink in middle (not dry and pale light pink). If salmon has skin on bottom, to remove it, slip spatula between skin and flesh. Lift and transfer to plate. Drizzle with remaining sauce. And serve with lemon wedges if desired.
