Impress everyone at your dinner table when you tell them you made these Baleadas from scratch. Delicious Baleadas tortillas can be puffed up in a skillet and then topped with warm beans and your guests' choice of tasty toppings.

Yield Makes 8 servings.

Number Of Ingredients 9

Ingredients

2 cups flour
1 tsp. baking powder
1/8 tsp. salt
1/2 cup water
3 Tbsp. vegetable oil
1 can (16 oz.) low-fat refried black beans, warmed
1 ripe avocado, sliced into 16 pieces
1/2 cup sour cream
1 pkg. (4 oz.) crumbled feta cheese

Steps:

Mix flour, baking powder and salt in medium bowl. Stir in water and oil to form dough.
Knead dough 5 min. on lightly floured surface. Shape into disk. Cover with plastic wrap; let rest 20 min.
Divide dough into 8 equal pieces. Roll each dough piece into 6-inch disk; cover with plastic wrap. Repeat with remaining dough to make 8 tortillas.
Heat large skillet on medium-high heat. Add tortillas in batches; cook 1 min. on each side until browned and lightly puffed.
Spoon warm beans evenly over hot tortillas; top with remaining ingredients. Fold in half. Serve immediately.
