BAKED ZITI WITH ROASTED VEGETABLES

This amazing baked ziti recipe is lightened up with roasted vegetables. Golden mozzarella, sizzling red sauce and tender pasta make this vegetarian ziti super delicious! Recipe yields 8 servings.

1 medium head of cauliflower, cut into bite-sized florets
1 red bell pepper, cut into 1″ squares
1 medium yellow onion, sliced into wedges about ½″ wide
2 tablespoons extra-virgin olive oil, divided
1/4 teaspoon fine sea salt, divided
8 ounces ziti, rigatoni or penne pasta
4 cups (32 ounces) marinara sauce (homemade or store-bought), divided
1/4 cup chopped fresh basil, plus extra for garnish
8 ounces (2 packed cups) grated part-skim mozzarella cheese, divided
2 cups (16 ounces) cottage cheese or ricotta cheese, divided

Steps:

  • To roast the veggies: Preheat the oven to 425 degrees Fahrenheit with racks in the middle and upper third of the oven. Line two large, rimmed baking sheets with parchment paper to prevent the vegetables from sticking.
  • Place the cauliflower florets on one pan. On the other pan, combine the bell peppers and onion. Drizzle half of the olive oil over one pan, and the other half over the other pan. Sprinkle the salt over the two pans. Gently toss until the vegetables on each pan are lightly coated in oil.
  • Arrange the vegetables in an even layer across each pan. Bake until the vegetables are tender and caramelized on the edges, about 30 to 35 minutes, tossing the veggies and swapping their rack positions halfway (lower rack to upper rack, and vice versa). Leave the oven on at 425, because we're going to bake the dish at the same temperature. If you end up with any stray burnt onion pieces, discard them, and set the vegetables aside.
  • Meanwhile, bring a large pot of salted water to boil. Cook the pasta just until al dente, according to package directions (it will continue to cook while it bakes in the oven, so you want the pasta to still have a little bite to it). Drain and return the pasta to the pot.
  • Add 2 cups of the marinara, the chopped basil, and 1/2 cup of the mozzarella to the pasta. Gently stir to combine.
  • It's assembly time! Spread 1 cup of additional marinara sauce inside a 9×13″ baker. Top with half of the pasta mixture, and gently spread it into an even layer. Evenly sprinkle the roasted cauliflower on top, then dollop 1 cup of the cottage cheese over the cauliflower (it doesn't need to be spread into an even layer), followed by 1/2 cup of the mozzarella.
  • Top the mozzarella with the remaining pasta. Then sprinkle the roasted peppers and onion on top, dollop the remaining cup of ricotta on top, then dollop the remaining cup of marinara on that, then sprinkle the remaining cheese all over.
  • Place a clean, rimmed baking sheet on the lower oven rack to catch any drippings. Place the ziti, uncovered, on top of the baking sheet. Bake for 30 minutes, then transfer to the upper rack for 2 to 5 more minutes until the cheese is deeply golden, if desired.
  • Remove the baker from the oven and let it cool for 10 minutes before serving (trust me). Sprinkle freshly torn basil on top, slice with a sharp knife, and serve.

1 lb ziti pasta
1 lb feta cheese
6 eggs, separated
4 cups milk
1 shallot, minced
6 tablespoons kefalotiri, grated (or parmesan)

Steps:

  • Preheat oven to 350°F.
  • Grease a 9x13 baking dish.
  • Cook the ziti according to package directions. Drain well, then put in the prepared baking dish.
  • Crumble the feta into small pieces.
  • Beat the egg whites until frothy.
  • Beat the egg yolks in a separate bowl.
  • Folk the yolks gently into the whites; then add the milk, feta and shallot.
  • Pour the egg mixture over the pasta, then top with the grated cheese.
  • Bake for 1 hour, or until the top is golden brown and the sides are bubbly.
  • Let cool for a few minutes before serving.

2 Tbsp olive oil plus enough for coating your baking dish
1 onion, sliced thin
2 large cloves garlic, sliced thin
3 cups drained chopped canned plum tomatoes
2 tsp minced fresh oregano, or 1 tsp dried & crumbled
1/2 tsp dried red pepper flakes
salt & freshly ground pepper to taste
2 Tbsp minced fresh basil ( I need a dry substitute)
1 lb large shrimp, shelled & deveined
1/4 cup minced fresh parsley leaves
3/4 lb ziti, cooked & drained according to package directions
1/2 lb feta cheese, crumbled

Steps:

  • Preheat oven to 400F. In a large saucepan set over moderate heat, heat oil until hot, and add the onion and cook it, stirring occasionally for 4 minutes. Add the garlic and cook for 3 to 4 minutes more, or until the onion and garlic are golden in color. Now add the tomatoes, oregano, red pepper flakes and salt and pepper to taste and simmer the tomatoes for 6 to 8 minutes, or until lightly thickened. Add the basil and shrimp and cook, stirring gently, for 1 to 2 minutes, or until the shrimp are just turning pink. Place cooked pasta in a large bowl, gently stir in shrimp and tomato mixture, 2 tablespoons of the parsley and half of the feta cheese. Transfer to an oiled 3 quart shallow flameproof baking dish and sprinkle with the remaining feta cheese and parsley. Cover loosely with foil, place in the oven and bake for 20 minutes, or until bubbling. Run under the broiler until golden.

Think of this recipe as summer on a sheet pan. The warm grilled vegetables and bulgur wilt the escarole just enough to soften its flavor and texture. The balsamic reduction adds a final note of sweetness. If you are in a rush, you can use purchased balsamic reduction, but making your own takes only a few minutes. It's worth cooking up a big batch to keep on hand for drizzling on roasted or grilled vegetables, poultry, pork and fish fillets.

1/2 cup balsamic vinegar
1 sprig fresh rosemary plus 2 tablespoons leaves
1 tablespoon honey
Kernels from 4 ears sweet corn
8 baby bell peppers, stemmed, halved and seeded
1 medium zucchini (about 8 ounces), cut into 1/2-inch chunks
6 scallions, trimmed and cut into 2-inch lengths
1/4 teaspoon crushed red pepper flakes
Kosher salt
4 tablespoons extra-virgin olive oil
12 ounces feta, cut into 1/2-inch-thick slabs
1 cup fine bulgur
8 cups torn inner escarole leaves or baby spinach

Steps:

  • Place a rimmed baking sheet on the lower rack of the oven. Preheat the oven to 425 degrees F.
  • Combine the vinegar, rosemary sprig and honey in a small saucepan. Bring to a boil, lower the heat, and simmer until thick and syrupy and reduced to about 2 tablespoons, about 2 minutes. Set aside to cool slightly. Remove and discard the rosemary sprig.
  • Carefully remove the hot baking sheet from the oven. Scatter the corn, peppers, zucchini and scallions on the baking sheet. Sprinkle with the red pepper flakes and 1 teaspoon salt. Drizzle with 3 tablespoons of the olive oil and toss. Nestle the slabs of feta in among the vegetables. Roast until the vegetables are tender and the feta is warmed through and softened, about 15 minutes.
  • While the feta and vegetables roast, combine 1 cup water, 1 teaspoon salt and the remaining 1 tablespoon oil in a small saucepan. Bring to a boil and stir in the bulgur. Remove from the heat and cover. Let sit for 8 minutes, then fluff with a fork.
  • Once the vegetables are tender, turn on the broiler and move the baking sheet to the top rack of the oven. Broil until the cheese and vegetables are browned in places, about 2 minutes.
  • To serve, divide the escarole among 4 shallow bowls. Top with the warm bulgur, vegetables and feta. Drizzle with the balsamic reduction and serve.

4 tablespoons extra virgin olive oil
1 onion
1/2 lb feta
3 carrots
1 green pepper
1 (16 ounce) package ziti pasta

Steps:

  • Prepare ziti as described on the package label.
  • Cut green peppers, carrots, and onion into small pieces.
  • In a non-stick skillet pour the olive oil and cook in medium heat all the vegetables until lightly browned.
  • Stir approx.
  • 1/2 cup of hot water and continue cooking until vegetables are crisp and soft.
  • Preheat oven to 350 degrees.
  • Drain ziti; set aside.
  • In the same pot add the cooked vegetables, stir in the crushed tomatoes, a little sugar salt and dry basil.
  • Remove pot from the heat and place the ziti in the pot.
  • In the pot stir some Parmesan cheese, and place mixture into a casserole, break the fate cheese and crumble over the mixture, mix.
  • Cover and bake for about 30 minutes, or until feta has melted.

Steps:

1 pint grape tomatoes
1 bunch asparagus, trimmed and chopped
1 medium zucchini, halved lengthwise and cut in 1/4 inch slices
1 medium yellow onion, chopped
1 medium red bell pepper, chopped
1 ear fresh sweet corn, kernels cut from the cob
4 tablespoons extra-virgin olive oil, or as needed
1 teaspoon red pepper flakes
sea salt and freshly cracked black pepper to taste
1 (16 ounce) package block feta cheese
4 sprigs fresh thyme
1 (16 ounce) package rigatoni pasta
½ medium lemon
¼ bunch fresh parsley, chopped
1 tablespoon grated Pecorino Romano cheese, or more to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine grape tomatoes, asparagus, zucchini, onion, bell pepper, and corn kernels in a baking dish large enough to accommodate all vegetables. Drizzle generously with olive oil and sprinkle with pepper flakes as well as a hit of salt and pepper. Toss to coat and make a well in the center of the dish.   • When the vegetables and feta are finished cooking, turn the broiler to 500 degrees F (260 degrees C) and broil vegetables for 1 minute for some final browning.
  • Squeeze lemon over vegetables and feta and stir in fresh parsley. Stir in rigatoni and reserved pasta water to help feta coat pasta evenly. Season with salt and pepper as needed and sprinkle with Pecorino Romano cheese.
