Here's a healthy alternative to fried wings: one of my famous recipes! The meat will fall off the bone! Unbelievable!

1 lb chicken wings
1 tablespoon cayenne pepper
1 teaspoon crushed red pepper flakes
1 tablespoon salt
1/2 cup louisiana hot sauce
1 tablespoon margarine

Steps:

  • Fill a large pot half way with water and then add the first 4 ingredients.
  • Bring water mixture and wings to a boil and then boil for 15 minutes.
  • Transfer wings to an oven safe container coated with cooking spray. Bake wings on "Broil" (high) for 15 minutes on each side.(For crispier wings, cook longer on each side, maybe 20 minutes per side).
  • While waiting for wings, combine the Hot Sauce and Margarine in a microwave safe container and cook in microwave for 2 minutes or until melted. (You can cook the sauce longer for a thicker sauce).
  • When wings are done, shake 'em up with the sauce and enjoy!

But we're throwing it back with the recipe that started all the #cauliflowerlove: buffalo cauliflower. They're so flavor-packed that won't even miss wing night with these around.

¾ cup all-purpose flour
1 teaspoon paprika
2 teaspoons garlic powder
1 teaspoon salt
½ teaspoon pepper
¾ cup milk or milk alternative
1 head cauliflower
¼ cup buffalo sauce or hot sauce
2 tablespoons coconut oil or vegetable oil
1 tablespoon honey

Steps:

  • Preheat the oven to 450˚F (230˚C). Line a baking sheet with parchment paper.
  • In a large bowl, add the flour, paprika, garlic powder, salt, pepper, and milk, and stir until well-combined.
  • Break the head of cauliflower into florets, about 1½-inches wide. Add the cauliflower florets to the batter, making sure each piece is evenly coated. Arrange the coated cauliflower on the baking sheet. Bake for 20 minutes, flipping halfway.
  • Meanwhile, in a small bowl, combine the buffalo sauce, coconut oil, and honey and stir until evenly combined. Brush the buffalo sauce mixture on the cauliflower and bake for another 20 minutes.
  • Enjoy!

12 teaspoons red chili powder (a little less for a more mild sauce)
6 teaspoons paprika

2 teaspoons salt
3 teaspoons sugar
12 teaspoons canola oil
2 tablespoons butter
6 cups seitan

Steps:

  • 1) DELETE RECIPE! MEASUREMENTS ARE ALL WRONG AND I NEED TO RE-DO IT!
  • 2) In a large stock pot, combine sauce and seitan and cook over medium heat for five minutes, making sure all pieces get coated with the sauce. This will absorb all the flavors into the seitan.
  • 3) With a slotted spoon, transfer seitan to a large frying pan. Fry over medium heat for about 10 minutes, gently turning pieces over every 1-2 minutes. This will help firm and dry the seitan a bit. Serve.

1 tbsp sweet smoked paprika
1⁄2 tbsp ground cumin
1 tsp garlic powder
100g plain flour
200ml buttermilk or kefir
1 head of cauliflower (500g), broken into florets
80g hot sauce
1½ tbsp maple syrup
1 tbsp butter
celery sticks, to serve
100g Greek yogurt
3 tbsp mayonnaise
2 tbsp chopped chives
1-2 tbsp milk

Steps:

  • Heat the oven to 220C/200C fan/gas 7 and line a baking tray with baking parchment. Mix together the paprika, cumin, garlic powder, flour and ½ tsp salt in a large bowl. Make a well in the centre and whisk in the buttermilk. Tip in the cauliflower and toss to coat. Spread out the cauliflower on the baking tray and cook for 20-25 mins, turning halfway through, until crisp at the edges.
  • Warm the hot sauce, maple syrup and butter in a small pan set over low heat, for 2-3 mins. Liberally brush over the cauliflower and put back in the oven for 8-10 mins.
  • For the ranch dip, whisk together the yogurt, mayo, chives, milk and a pinch of salt in a bowl. Serve the with the cauliflower alongside some celery sticks for dipping.

i haven't tried this yet. saving for safekeeping. i don't usually like cauliflower but this seems different enough to be tasty. i'm told this works fine with gluten-free flour and/or soy milk if desired. a cup of hot sauce seems like an awful lot to me. i'll probably start with less. i'd also like to incorporate jack cheese into this somehow but haven't figured it out yet. i'll adjust after i've tried it. i see no reason you couldn't do this with bbq sauce or whatever instead

1/4 cup Franks Red Hot Sauce
2 tablespoons unsalted butter
1 head cauliflower
¼ cup lager beer (or alcohol-free beer or vegetable broth)
1/4 cup all-purpose flour or gluten-free flour
2 tablespoons corn starch
1 teaspoon avocado oil
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon onion powder
½ cup Blue Cheese Dressing
Celery Sticks and Carrot Sticks for serving

Steps:

  • Melt hot sauce and butter in a small saucepan. Set aside and keep warm.
  • Remove leaves from cauliflower. Cut in half and remove core. Cut the cauliflower through the stem end, and break (or cut) into florets about the size of a golf ball.
  • If your air-fryer requires pre-heating, preheat it to 425 degrees F, Air Fry. Whisk beer, flour, cornstarch, oil, salt, pepper and onion powder in a large bowl.
  • Add cauliflower florets and toss well with a slotted spoon to coat thoroughly.
  • Coat frying basket with cooking spray. Arrange the battered cauliflower in the frying basket in a single layer. (If necessary, you may need to do two batches.)
  • Air fry at 450 degrees F, until the cauliflower wings are crispy, lightly browned and the cauliflower is tender, 12 to 15 minutes.
  • Toss the cauliflower in the sauce in a large bowl. Serve immediately. Alternatively, if cooking in two batches, hold the air fried cauliflower in a warm oven until the second batch is done, then toss it all together in the sauce before serving.

1 cup 1% low-fat milk
3/4 cup whole wheat flour
1 tablespoon garlic powder
1 tablespoon butter
1/2 cup Frank's red hot sauce
1/2 cup blue cheese dressing

Steps:

  • Preheat oven to 450 Degrees. Trim the head of cauliflower into appetizer sized bites and set aside. In a bowl stir together milk, flour and garlic powder. Dip each piece of cauliflower into the batter and allow the extra batter to drip off. Place on a greased baking sheet. Spray the tops of the florets with cooking oil. Bake for 18 minutes.
  • Melt the butter in a saucepan over low heat and add the Frank's hot sauce and stir. Toss cooked cauliflower pieces with the sauce. Put back on cookie sheet and bake for 5 to 7 more minutes in the oven. Remove and serve with a side of Blue Cheese Dressing.
