- Rub chicken breasts with olive oil and garlic; sprinkle with salt, black pepper, rosemary, and basil. Arrange chicken in a large baking dish and refrigerate at least 45 minutes.
- Preheat oven to 375 degrees F (190 degrees C).
- Bake in preheated oven until chicken meat is no longer pink at the bone and the juices run clear, 45 to 60 minutes. An instant-read thermometer inserted in the thickest part of the breast meat should read 165 degrees F (75 degrees C).

- Preheat your oven to 400 degrees F (205 degrees C) and line a rimmed baking sheet with parchment paper or aluminum foil (or coat a baking dish with olive oil or non-stick cooking spray).
- Rinse and pat dry your split chicken breasts. Coat with olive oil, rubbing the olive oil into the skin and breast surface side that will be facing upward during cooking.
- Place the chicken breasts, skin side up, on your prepared baking sheet. Season each piece of chicken, sprinkling with combined spices: salt, pepper, onion powder, garlic powder, and paprika.
- *For extra crispy chicken skin, heat a skillet or frying pan to medium high heat. No need to add oil (it's already on your split chicken breasts), place the seasoned chicken breasts skin side down and sear for 3-4 minutes or until nicely golden brown. Then place onto your baking sheet and continue with steps 5 & 6.
- Bake for 40-45 minutes, or until the internal temperature reaches a minimum of 165 degrees F (74 degrees C) when checked with a meat thermometer. *Check next to the bone at the deepest (thickest) point in the breast meat.
- Remove the baked chicken from the oven and allow it to sit for 3-5 minutes before being served.

THE BEST BAKED CHICKEN BREASTS
The downfall of most baked chicken breast recipes is the long time in the oven that dries out the lean meat before it can fully cook through. We've solved that problem with a couple of secret weapons. The first is white wine added to the baking dish, which creates steam. (While we think it's worth using wine, you could substitute stock or even water.) The second is a piece of parchment paper placed directly on top of the chicken to lock in the moisture during baking. The result is the best boneless, skinless chicken breasts that are plump and juicy, with a minimum of hands-on time. A bunch of parsley and lemon slices infuse the dish with fresh flavor and the seasoning is neutral enough that the chicken can be used for a variety of different meals. Serve it alongside vegetables and grains, shredded into soup, spiced up for tacos or chopped on top of salad. Feel free to switch up the herbs and citrus if you have leftovers in the fridge to use up.

- Preheat the oven to 350 degrees F.
- Place the parsley in the center of a 9-by-13-inch baking dish and top with the lemon slices. Pour the wine around the parsley. Brush the tops of the chicken with the olive oil and season with the paprika, 1 teaspoon salt and a few grinds of black pepper. Arrange the chicken breasts on top of the lemon slices. Cut an 8-by-10-inch piece of parchment and place it on top of the chicken.

- Oil or spray 9x13 baking pan.
- Pat chicken dry and place in the pan. Drizzle or brush with olive oil and sprinkle with the remaining ingredients in order of recipe.
- THE INGREDIENT AMOUNTS GIVEN ARE APPROXIMATE! Use more or less to suit your taste and to give a nice even coating of each ingredient on the chicken pieces. I never measure for this recipe, I just eyeball it. Feel free to use any seasoning salt you like instead of the Bon Apetit or substitute your favorite herb for the parsley flakes. You can also add to or reduce the number of chicken breasts according to your family size. I often cook extra to make sandwiches the next day. This is more of a technique to try than a recipe!
- Bake for about 30 minutes, until chicken is cooked through and juices run clear. I usually microwave 4 medium potatoes for 10 minutes and then put them in the oven at same time as the chicken to finish cooking-makes quick baked potatoes. I serve veggies, salad and bread for a nice, easy weeknight dinner.

I received this recipe years ago from a coworker. It remains one of our all time favorite chicken recipes and I love that the rice gets cooked at the same time in the same pan. I have never made this recipe without skin on and bone in chicken breasts so if you decide to use skinless, boneless the taste may be very different.

- Wash and dry chicken breasts.
- Place the uncooked rice in the bottom of a 9X11 baking pan.
- Mix soups, sherry and butter together and pour a little over the rice to moisten it.
- Salt the chicken breasts and place the salted chicken breasts on the rice.
- (It is okay if they overlap some).
- Pour the rest of the liquid on the breasts.
- Sprinkle parmesan cheese, almonds and paprika on top.
- Note: Do not add any moisture to the soups.
- The only liquid is the wine.
- Bake 2 1/2 hours uncovered at 275 degrees.
