MEDITERRANEAN BAKED WHITE FISH
Loaded with bright Mediterranean flavors, this baked white fish takes is seasoned with oregano and garlic and topped with a mixture of tomatoes, olives, and red onions. Ready in about 25 minutes! Be sure to check out my fish tips and the video for how to make this recipe below!

Steps:
- Heat the oven to 425 degrees F.
- Pat the fish dry and season with salt and pepper on both sides. Brush a 9 ½ x 13-inch baking dish with a little extra virgin olive oil and put the fish in it. Squeeze ½ lemon juice all over the top of the fish.
- In a medium mixing bowl, combine the tomatoes, olives, onions, garlic and spices. Add a very small pinch of salt and ground pepper. Add a generous drizzle (about 3 tablespoons extra virgin olive oil) toss to combine.
- Pour the tomato and olive mixture over the fish.
- Bake in the heated oven for 15 to 20 minutes (this will depend on the thickness of your fish).
- Remove from the heat and serve.

ZESTY BAKED FISH WITH TOMATOES AND FETA
If you want to add more fish to your diet, here's an easy way to start. When you are baking fish, choose a thicker fish fillet (more like COD, tilapia is too thin). Total baking time will be very dependent on the thickness of the fillet, so if you notice that the fish is splitting apart, it is done!

Steps:
- Pat thawed fish with paper towels to remove excess moisture. Place fillets in a glass baking dish (spray dish with non-stick spray).
- Place 2 tomato slices on each fish fillet.
- Pour Italian Dressing over fish and tomatoes; season with salt and pepper.
- Bake 350 degrees for 20 minutes; then top with Feta Cheese and bake another 6-8 minutes, depending on thickness of fish.
- Optional: If you like olives, sprinkle them on top at the same time as the Feta Cheese.
- For a well balanced meal, serve with brown rice and steamed broccoli.

GREEK ROASTED TILAPIA FILLETS (LOW FAT)

- Preheat the oven to 400°F.
- Lightly mist a medium ovenproof baking dish with spray.
- Mix the garlic, olive oil, parsley, tomatoes, and feta in a medium bowl.
- Lightly mist both sides of the tilapia fillets with spray, and then season both sides with salt and pepper to taste. Lay the fillets side by side, barely touching, in the prepared baking dish. FILET OF FISH STUFFED WITH SPINACH AND FETA
A light and easy way to serve fish. The stuffing can also be used to stuff boneless chicken breasts or mushrooms--Adjust baking time accordingly

Steps:
- Heat oil in saucepan.
- Add garlic and onion and saute for a minute or two.
- Add spinach to pan.
- Saute until all water evaporates. About 3 minutes.
- Take off heat. Add feta and parmesean. Season with nutmeg, salt and pepper.
- Set aside to cool.
- Season fish with salt and pepper.
- Place about 2 tablespoons of filling onto the center of each piece of fish.
- Roll fish aroung stuffing.
- Place fish seam side down into baking dish.
- Drizzle with olive oil (if desired).
- Sprinkle fish with oregano and paprika.
- Bake at 400 degrees uncovered for 30 minutes or until fish flakes easily with a fork.

BAKED FISH FILLETS
This is a wonderful alternative to fried fish, coating the fish with butter and baking at high heat is the secret to the success of this recipe --- use meaty fillets of fish for this if possible --- FOR LOW-FAT OPTION; whisk together 2 egg whites with 2 tablespoon cold water, dip the fish into the mixture, allow excess to drip off, use in place of melted butter.

- Finely chop chives and dill.
- Crumble the feta cheese and mix with the herbs and breadcrumbs. Add oil.
