2 tablespoons extra virgin olive oil
6 slices cured Spanish chorizo, chopped
1 cup halved cherry tomatoes
salt and ground black pepper to taste
4 eggs, beaten
¼ teaspoon hot paprika, or to taste

Steps:

  • Heat olive oil in a skillet over medium-high heat. Add chorizo and cook until just beginning to crisp, about 2 minutes. Add cherry tomatoes and season with a pinch of salt. Cook and stir until tomatoes soften and release their juices, about 5 minutes.
  • Beat eggs with salt, pepper, and paprika in a small bowl. Stir seasoned eggs into tomato mixture in the skillet. Reduce heat to medium-low and cook and stir until the eggs are set, 3 to 5 minutes.

100g bag spinach
400g can chopped tomatoes
1 tsp chilli flakes
4 eggs

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the spinach into a colander, then pour over a kettle of boiling water to wilt the leaves. Squeeze out excess water and divide between 4 small ovenproof dishes.
  • Mix the tomatoes with the chilli flakes and some seasoning, then add to the dishes with the spinach. Make a small well in the centre of each and crack in an egg. Bake for 12-15 mins or more depending on how you like your eggs. Serve with crusty bread, if you like.

2 tablespoons canola oil, plus more to coat
8 ounces chorizo sausage, casings removed
1/2 Spanish yellow onion, chopped
4 cloves garlic, finely chopped
1 jalapeno, coarsely chopped
1 cup dry red wine
2 1/2 cups canned plum tomatoes and their juices, pureed until smooth and strained
1/2 cup water
2 tablespoons ancho chile powder
2 tablespoons chipotle in adobo puree
2 tablespoons pasilla chile powder
2 tablespoons honey
Salt and freshly ground black pepper
Juice of 1 fresh lime
2 tablespoons unsalted butter
4 large eggs
Salt and freshly ground black pepper
1/2 cup Lime Crema, recipe follows
Finely grated zest of 1 lime
4 fried corn tortillas, fried whole, plus more cut in strips, for garnish
3/4 cup coarsely grated aged white Cheddar cheese
5 fried eggs, over easy, recipe follows
Chopped fresh cilantro leaves, for garnish
Juice of 1/2 lime (1 tablespoon)
1/2 cup heavy cream

Steps:

  • For the chorizo: Heat the oil in a medium saucepan over high heat. Add the chorizo and using a wooden spoon break it up into small pieces. Cook the chorizo until it is golden brown and crisp. Remove with a slotted spoon to a paper towel-lined plate and let cool slightly. Reserve the chorizo for the egg recipe, below. Reserve 1 tablespoon of the rendered fat for the eggs.
  • For the tomato-red chile sauce: Add the onions to the pan with the sausage drippings and cook until soft. Add the garlic and cook for 1 minute. Deglaze with the wine and cook until reduced by half. Add the pureed tomatoes, water, ancho chile, chipotle chile in adobo, pasilla chile, and honey and cook over medium-high heat until the sauce has thickened, stirring occasionally, about 20 to 30 minutes. Season the sauce with salt and pepper and stir in the lime juice just before removing from the heat.
  • For the eggs: Heat a large nonstick skillet over high heat. Add the 1 tablespoon rendered fat from the sausage. Add the butter to the pan, after the butter melts, turn the heat down to medium. Carefully crack the eggs into the pan and add the cooked chorizo sausage, season with salt and pepper and cook, until the whites are completely firm but the yolks are still soft, about 2 minutes - sunny-side up.
  • For serving: Combine the crema and lime zest in a small bowl. Place a few spoonfuls of the tomato-red chile sauce on 4 plates. Place a fried tortilla on each plate and sprinkle with Cheddar cheese, put the plates in the oven and melt the cheese on top of the sauce. Divide the fried eggs and crisped chorizo over the tortillas and ladle the warm tomato-red chile sauce over top. Sprinkle each tortilla with about 3 tablespoons of the cheese and some of the lime crema and garnish with the chopped cilantro. Serve immediately.
  • Combine the lime juice and cream in a small bowl, loosely cover with plastic wrap and allow to sit at room temperature for 8 hours. Stir well, cover tightly and store in the refrigerator for up to 5 days.;

80 g chorizo sausages, skinnned,chopped
3 tablespoons olive oil
1 large onion, chopped finely
1 large red capsicum, cored,seeded,chopped finely
1 large green capsicum, cored,seeded,chopped finely
2 large tomatoes, peeled,seeded and chopped
3 tablespoons butter
10 large eggs, beaten lightly
salt and pepper
6 fresh basil leaves, finely shredded
4 -6 slices country bread, toasted to serve

Steps:

  • Heat 2 tablespoons olive oil in a large, heavy based pan.
  • Add the onion and red and green capsicums, cooking until soft, without browning (approx 4 minutes).
  • Add the tomatoes, heat through, transfer to oven dish and keep warm in preheated oven on low setting.
  • Add another tablespoon of oil to pan.
  • Add chopped chorizo and cook for 5 minutes to release flavours.
  • Add the sausage to onion and capsicum mixture.
  • Add butter to pan and melt.
  • Season the eggs with salt and black pepper.
  • Lightly beat,add to pan and scramble until cooked to desired firmness (not too firm though as they will continue to cook).
  • Return vegetables and sausage to pan and stir through with basil.
  • Serve with hot toast.

4 beefsteak tomatoes
Kosher salt and freshly ground black pepper
1 tablespoon vegetable oil
1 cup baby Yukon Gold potatoes, cut into 1/2-inch cubes
6 ounces pork chorizo, casing removed, sausage crumbled
4 large eggs
Queso fresco, for garnish
Chopped fresh cilantro, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Slice off the top part of the tomatoes horizontally and scoop out the pulp and seeds. Reserve for another use. Season the tomatoes heavily with salt and pepper.
  • Heat the oil in a medium saute pan over medium-high heat. Add the potatoes and cook until crisp, about 6 minutes. Transfer the potatoes to a plate lined with a paper towel to drain off excess oil. Add the chorizo to the pan and cook for about 3 minutes. Transfer the potatoes back to the pan with the chorizo. Keep cooking until the chorizo is crisp, about 3 more minutes. Season to taste with salt and pepper. Remove from heat and drain off excess fat on a paper towel.
  • Divide the chorizo mixture evenly between the scooped out tomatoes. Crack one egg onto each of the tomatoes. Place the tomatoes in a baking dish and bake for about 25 minutes or until the egg whites are fully cooked. Crumble queso fresco on top and sprinkle with cilantro. Serve immediately.

  • Adjust rack to lower-middle position. Preheat oven to 375 degrees F.
  • SAUCE.
  • Heat olive oil over medium-high heat. When oil is shimmering, add chorizo and cook, stirring, until fat is rendered, about 3 minutes.
  • Add bell peppers and serrano peppers, onion, and garlic. Continue cooking, stirring often, until vegetables soften, 5-7 minutes.

1tbsp tomato paste
4 medium eggs
2 tbsp chopped parsley
