CITRUS BAKED FISH
This recipe allows me to combine two things abundant in Florida-fresh fish and orange juice. The orange juice gives the fish a wonderful, tangy flavor.

- In a large resealable plastic bag, combine the orange juice concentrate, oil and dill; add fish. Seal bag and turn to coat; refrigerate for at least 15 minutes. , Drain and discard marinade. Place the fillets in a greased 15x10x1-in. baking pan. Cover and bake at 350° for 15-20 minutes or until fish flakes easily with a fork. , Dip cut edges of orange slices in paprika; serve with fish.

- Place an 18x12-in. piece of heavy-duty foil on a large baking sheet. Arrange fillets in a single layer on foil; sprinkle with salt and pepper. Top with onion, parsley, and lemon and orange zest. Drizzle with oil. Top with a second large piece of foil. Bring edges of foil together; crimp to seal, forming a large packet., Bake at 450° for 15-20 minutes or until fish flakes easily with a fork. - Arrange the fish in a shallow baking dish.
- In a small skillet sautee the onion and the garlic until the onion is tender but not brown.
- Into the pan, stir in the cilantro, salt and pepper. Spread the mixture over the fish. Combine the orange juice and lemon juice and pour evenly over the fish.
- Bake, uncovered, in a 400 degree oven for about 20 to 25 minutes, or until the fish flakes easily with a fork.

BAKED WHOLE SEA BASS CITRUS
Steps:
- Preheat oven to 400 degrees F.
- Clean the bass by removing the guts and the gills and trimming off the belly flap. Season the season with salt and pepper. Place the fish on foil and sprinkle with some citrus zest. Close the foil and cook for about 10 minutes oven. In a small sauce pot reduce the juice and the remaining zest. Slowly add the butter whisking constantly, season sauce and add all the segments, simmer. Saute the spinach and drain off any liquid. Remove the bass from the oven and from the foil, discard the citrus zest on it. Place the fish on top the spinach and ladle with the citrus sauce

- Mix together the orange zest and juice, soy and vinegar. Line the top of a steamer with baking parchment and heat water in the base. Top the fish with a little of the ginger, add to the steamer and spoon over 2 tbsp of the dressing. Cover and steam for 5-6 mins until the fish flakes easily.
- Meanwhile, heat the oil in a non-stick wok and stir-fry the spring onions, garlic, pepper and remaining ginger for 2 mins. Add the beansprouts and cook for 2 mins more. Pour any juices from the fish into the veg. Stir through the dressing, then divide between bowls, top with the fish and scatter over the sesame seeds.

- Heat oven to 400 degrees F.
- Sprinkle fish with teaspoon salt and pepper.
- Place fish in glass baking dish.
- Cut one half onion into thin slices.
- Cut 4 thin slices from half of lime.
- Arrange lime and onion slices on each fillet.
- Bake fillets 12 to 15 minutes, or until just cooked.
- Meanwhile, peel and remove white pith from oranges; cut into segments, then cut each segment in half.
- Transfer orange pieces to small bowl.
- Mince remaining onion half and squeeze 1 tablespoon lime juice from remaining lime half; add to orange pieces with avocado, jicama, cilantro, jalapeño, and remaining 1/8 teaspoon salt.
- You can make this sauce earlier in the day and keep it refrigerated until dinner.
- Serve with baked fish.

- OVEN COOKING:.
- Rinse halibut in cold water and dry using paper toweling.
- Arrange halibut in a 9" x 13" oven-proof baking dish.
- Preheat oven to 400 degrees Fahrenheit.
- In a frying pan, add butter, onion and garlic. Saute until translucent.
- Remove from heat; stir in parsley, orange rind, salt and pepper.
- Spread mixture over halibut steaks.
- In a small bowl, mix together orange juice and lemon juice.
- Sprinkle juice over steaks, but be careful not to wash away the onion/garlic mixture.
- Bake fish in preheated 400 degree Fahrenheit oven for 20 to 22 minutes, turning over at about 10 minutes of cooking time.
- Continue cooking until time expires or until fish flakes easily with a fork.
- DO NOT OVERCOOK FISH.
- Spoon hot juices over fish.
- Serve at once.
- MICROWAVE COOKING:.
- Prepare and arrange fish and onion/garlic as above.
- Reduce orange juice by 2 tablespoons.
- Cover fish with a clear plastic wrap vented.
- Cook on HIGH (full power) for 4 minutes.
- Turn fish over and cook for an additional 3 to 4 minutes on HIGH (full power) or until fish flakes easily with a fork.
- Spoon juices over fish and serve at once.
- If desired, serve with Tartar Sauce.
