CITRUSY ROAST CHICKEN WITH PEARS AND FIGS
This juicy, citrus-scented chicken is a perfect dish for that shoulder season between summer and fall, when pears and figs overlap in the market, and evenings cool down enough to turn on the oven. As the chicken roasts, its skin crisps and its fat renders, flavoring the caramelizing fruit in the pan. Before it's served, everything is topped with a garlicky orange relish flecked with parsley and drizzled with sherry vinegar. It's a sweet and savory meal that's simple enough for a weeknight (if you can marinate the chicken the night before), yet festive enough for guests.

- Peel 2 of the garlic cloves, and finely grate or mash to a paste. Grate 1 teaspoon zest from the orange (reserve zested orange and remaining garlic clove for serving).
- In a small bowl, combine garlic and zest with 1 tablespoon finely chopped rosemary, salt and pepper.
- Place chicken on a 13-by-17-inch rimmed baking sheet, and rub rosemary mixture all over chicken including underneath the skin and inside the cavity. Chill uncovered in the refrigerator for at least 4 hours and up to overnight.
- Heat oven to 450 degrees. Stuff chicken with rosemary sprigs. Drizzle chicken lightly with oil, and roast for 30 minutes.
- Remove baking sheet from oven and carefully arrange pears and figs, cut-side down, on the hot pan. Continue to roast until chicken is cooked through, another 15 to 25 minutes.
- Transfer chicken to a cutting board to rest for 10 minutes before carving. Roast pears and figs another 5 to 10 minutes, if necessary, until they are caramelized and tender.
- Cut the white pith off the orange, then cut out orange segments into bite-size pieces. Finely grate or mash the remaining garlic clove.
- To serve, transfer figs, pears and chicken to a platter. In the pan with chicken juices, toss orange segments, remaining garlic clove, and a drizzle of sherry vinegar; taste and season with flaky sea salt, if needed. Spoon oranges and pan juices over chicken and fruit on platter, and top with chopped parsley and more flaky sea salt.
BAKED CITRUS APPLES AND PEARS
This is a healthy dessert ideal for using up pears, apples, oranges and lemons that may be left in the fruit bowl. Serve warm as a light dessert with Greek yoghurt, or eat chilled with a bowl of granola for a healthy start to the day. This recipe is also good for children!

- Place the pear and apples quarters in a flameproof dish with the cinnamon stick, nutmeg, raisins, lemon and orange juice with the zest strips.

HONEY-GLAZED APPLE PEAR TART

- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper or grease with nonstick cooking spray.
- Dust a cutting board with flour and unfold the puff pastry onto it. Dust more flour over the puff pastry and gently roll out the creases. Transfer the puff pastry sheet to the parchment paper-lined baking sheet.
- Using a fork, pierce a border around the edge of the puff pastry, 1/2-inch from the edges. Prick the center of the pastry as well, about 10 times all over. In a bowl, combine the sugar, and cinnamon.
- Arrange the pear, and apple slices on top of the pastry in 4 rows or diagonally, overlapping fruit slices and avoiding the border. Brush the fruit with melted butter and top with cinnamon-sugar. Bake the tart for 15 minutes, or until the pastry is golden brown and beginning to puff.
- Brush honey over the fruit and bake for an additional 5 minutes. Serve warm with mascarpone cheese.
BROILED APPLES AND PEARS WITH ROSEMARY

- Preheat broiler.
- Brush 2 baking sheets with olive oil.
- Gently toss apples and pears in oil and rosemary.
- Arrange fruit in single layer on the 2 sheets.
- Broil until fruit is tender, about 5 minutes.
- Watch closely or it will burn-- you may need to turn the sheets to avoid burning.
- Transfer fruit to platter, sprinkle with pepper and a pinch of salt if you wish.

- Preheat oven to 425 degrees.
- Peel, quarter length-wise, and core pears. Set aside.
- In large skillet, melt butter over medium heat.
- Add pears and cook for one minute.
- Sprinkle with sugar and 1/4 cup of kirsch.
- Cook over medium heat turning pears frequently until they are tender.(About 15 minutes).
- Arrange pears, cut-side down in 9x9 baking dish.
- Add to the skillet 1/4 cup of cream. Bring to a boil over high heat until sauce begins to thicken, then pour over the pears.
- Bake for 10 minutes or until cream sets a skin.
- Serve immediately!
