CILANTRO LIME CHICKEN WINGS
Oh-so-perfectly crispy, charred + smoky with the easiest marinade. Cilantro, lime, cumin, chili powder. So simple yet so good!

Steps:
- In a medium bowl, combine 1/4 cup cilantro, 2 tablespoons lime juice, 2 tablespoons olive oil, lime zest, chili powder, cumin, salt and pepper. In a gallon size Ziploc bag or large bowl, combine chicken and cilantro mixture; marinate for at least 2 hours to overnight, turning the bag occasionally. Drain the chicken from the marinade. Preheat grill to medium heat. Brush chicken with remaining 1 tablespoon olive oil; season with salt and pepper, to taste. Add chicken to grill, and cook, turning occasionally, until chicken is completely cooked through, reaching an internal temperature of 165 degrees F, about 12 minutes. Let rest 5 minutes. In a large bowl, combine chicken, remaining 1/4 cup cilantro and remaining 2 tablespoons lime juice. Serve immediately.
LIME AND CILANTRO CROCK POT CHICKEN WINGS
Put this together today...I took what I love from 3 recipes and put my own spin on them. Brought them to a pot luck luncheon and my co-workers loved them. Let's see if I can put measurements on everything...Enjoy!!

- Put cut up chicken in zip lock bag. Mix marinade ingredients together in small bowl and pour over chicken. Refrigerate for a few hours (if you have time, 3-5 hours -- if you don't do just 1 hour).
- When ready, pour bag into crockpot and cook on low for 8 hours, stir a few times if possible.

CILANTRO LIME BAKED CHICKEN
I don't really remember why I decided this would be good to try. The family loved it so I kept fixing it. I also do these on the grill/smoker sometimes. If using a grill set up for indirect cooking. You could also use lemon, but my DIL seems to love the lime taste.

Steps:
- Wash chicken and pat dry (always remember to protect your family from salmonella).
- Place lime quarters in the cavity of the chicken.
- Stuff the remainder of the cavity with cilantro.
- Salt and pepper to taste.
- Bake at 350°F according to your favorite chart until juices run clear (depending on weight 1 1/4 to 1 3/4 hours).
- Serve with American southwest, Mexican, or SE Asian side dishes.

Steps:
- Preheat over to 450 degrees. From limes, grate 2 tsp peel and squeeze 1/4 cup juice.
- In small bowl with fork, mix honey, garlic, coriander, salt, pepper, lime juice, and 1 tsp lime peel.
- Arrange chicken on two 15 1/2" by 10 1/2" jelly roll pans. Drizzle lime mixture over chicken; toss to coat evenly. Place pans on oven racks. Bake drumsticks 30-35 minutes, rotating pans between upper and lower racks halfway through baking and occasionally brushing chicken with glaze in pan, until chicken is cooked through.
- Transfer chicken to serving dish. Drizzle with pan juices. Garnish with lime wedges and sprinkle with remaining lime peel.
