An easy to prepare and delicious recipe for baked Honeycrisp apples. The best you'll ever eat!

4 - Honeycrisp apples
1/2 cup brown sugar
2 tsp ground cinnamon
1/4 cup dried cranberries
1/4 cup chopped walnuts
4 tblsp butter
creamy caramel sauce (optional)
vanilla ice cream (optional)

Steps:

  • Preheat oven to 350° fahrenheit.
  • Slice approximately 1/3 off of the top of the apples and scoop out the core, leaving a well in the center.
  • In a bowl, mix brown sugar, cinnamon, cranberries and walnuts (using a spoon or fork) until blended.
  • Stuff each apple with 1/4 of brown sugar mixture.
  • Place apples in a deep baking dish, topping each apple with 1 tblsp butter and a sprinkle of cinnamon.
  • Pour about 1/2" of water into the baking pan, around the apples, and bake for 50 - 60 minutes, until apples are tender.
  • Serve warm, topped with caramel sauce drizzled on top of each apple, if desired.
  • Also excellent served with vanilla or butter pecan ice cream.

4 baking apples, cored
1 1/2 cups apple cider
1 teaspoon rum, if desired
1/2 cup fat-free caramel topping
1 container (6 oz) Yoplait® Original 99% Fat Free apple crisp yogurt
1/4 cup Cascadian Farm® organic French vanilla almond granola

Steps:

  • In large microwavable bowl, place apples, and pour apple cider 1 inch up sides of apples. Cover with microwavable plastic wrap. Microwave on High 5 to 8 minutes or until soft. Reserve the juice.
  • In small microwavable bowl, stir rum and 1 teaspoon of the reserved juice into caramel topping. Microwave uncovered on High a few seconds or just until warm.
  • To serve each apple, spoon 2 tablespoons yogurt in bottom of serving bowl. Add 1 apple; fill center of apple with yogurt. Sprinkle with 1 tablespoon granola; top with caramel mixture.

1/4 cup strawberry jam, jelly or preserves
2 tablespoon all-purpose flour
3 tablespoons butter, cold and diced

1/4 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F.
  • Cut each apple in half along its equator. Using a melon baller, cut out each side of the core, creating a rounded hole. Rub exposed apple flesh with lemon juice. Place 1 tablespoon of jam into each hole. For the topping: in a small bowl mix together flour, butter, brown sugar, oats, cinnamon and salt. Press this mixture on the top of each apple, covering jam. Place in a baking dish filled with about a 1/4-inch of water. Bake until top is golden brown and apple is tender, about 35 to 40 minutes.

4 to 6 dried figs
1/4 cup chopped almonds, toasted
1 cup sugar
1/3 cup plus 2 tablespoons butter
1 tablespoon heavy cream or creme fraiche
Juice of 1 lemon
Serving suggestion: cinnamon whipped cream or creme fraiche

Steps:

  • Preheat the oven to 350 degrees F.
  • Core the apples. Using a paring knife, score a ring around the midriff of each apple, just cutting through the skin to prevent the apples from bursting during baking. Stuff the apples with the figs and almonds. Set on a baking sheet, and bake until puffed up and soft all the way through, about 30 minutes.
  • Meanwhile, put the sugar in a saucepan with a spoonful of water, and boil to a golden caramel, about 5 minutes, depending on how much water you've added. Do not stir the sugar with a spoon, gently swirl the saucepan over the heat until the desired color. You want a nice rich caramel color, but don't let it get too dark.

I would use something like Granny Smith, Cortlands, Jonathans, Empires, Yellow Delicious, Honey Crisp, Ida Reds or Winesap (Winesap are my favorite and are usually found late season during October). I would avoid such apples as Red Delicious or Macintosh. They are great for eating but fall apart when cooked. And one of my secrets is to make a blend of baking apples, so the flavors are more well rounded and less one dimensional. Some apples, such as the Granny Smith, have that nice bite to them but are short on sweetness other apples have and aren't that great by themselves.
