APPLE BAKED OATMEAL

- Preheat oven to 350 degrees F. Grease 8×8-inch baking dish.
- In a large bowl, whisk the butter, egg, milk, maple syrup, vanilla, pumpkin pie spice, baking powder and salt.
- Stir in oats, apples, and 1/4 cup walnuts.
- Pour oatmeal mixture into prepared baking dish. Bake at 350 degrees until puffed and center is just set, about 45-55 minutes. During last 5 minutes of baking, sprinkle remaining walnuts over top.

- Spray a small baking dish or casserole with cooking spray. I used an 8.5" x 11" 2.5qt casserole dish for this.
- Add the overripe bananas to the bottom of a mixing bowl, and mash them with a fork.
- Add the applesauce, maple syrup, 1 tsp cinnamon, baking powder, salt, and vanilla extract, and stir to combine.
- Add the milk. Whisk together.
- Add the oats. Fold in.

- Preheat oven to 350°F (177°C). Generously spray a muffin pan with nonstick spray. If using muffin liners, spray them with nonstick spray. The oatmeal cups stick to the liners a bit regardless, so I recommend skipping them.
- Whisk all of the ingredients together, except for the apples (and nuts and coarse sugar), in 1 large bowl. Using a spoon or rubber spatula, fold in the apples and nuts (if using). Batter will be a little liquid-y. Spoon batter evenly into muffin cups, making sure both the oats/apples and liquid are in each. Fill all the way to the top. See photo above. If desired, sprinkle the tops with coarse sugar.
- Bake for 25-30 minutes or until the edges are lightly browned and top appears set. If the tops appear to brown very quickly, tent a piece of aluminum foil on top.

- To prepare the apples and nuts, heat a skillet over medium-low heat and add the butter. Once melted, stir in the apples, nuts, and cinnamon. Sauté for 3 minutes, then stir in maple syrup and sauté for 1 more minute. Remove from heat and set aside to cool.

- Preheat the oven to 400°F gas mark 6, 200°C (180°C fan-assisted). You will need a 34 cm oven proof dish.
- To make the chia or flax “eggs” measure the seeds into a small bowl with 6 tbsp water, mix well and leave to stand for 15 minutes, stirring regularly.
- Peel and core the apples, cut into ½ inch cubes and place in a mixing bowl with the agave/maple syrup or honey and cinnamon, mix well. Spoon 6 tbsp. of the apples into another mixing bowl, add half (50g) of the broken pecans, stir and set aside for the topping.
- Place the rolled oats, raisins, remaining apple cubes and pecans, baking powder, sea salt, vanilla bean paste/seeds and almond (or alternative) milk in a large mixing bowl and stir to combine.

- Preheat the oven to 375F. Lightly grease an 8×8 (or similar – I use a smaller 7.5×5 Staub baking dish) baking dish with avocado or coconut oil.
- Mix together the oats, ground flax, baking powder, cinnamon, nutmeg, and salt. Add in the applesauce, almond milk, vanilla, diced apples, and collagen peptides and nuts (if using). Mix until combined. Let stand for about 5 minutes so the oats and flax have time to absorb some of the liquid.
- Pour the mixture into the baking dish. Place in the oven for 40-50 minutes. The larger your baking dish the less time it will take for the oatmeal to set. Check after 35-40 minutes. It’s ready when the top starts to brown and the middle is set. You can test this by poking the center with a toothpick or knife. It will come out clean when it’s ready. Remove and let cool for 15 minutes before serving.
- Serve with this 5-minute healthy caramel sauce, a splash of milk or top with yogurt or nut butter of choice. Store leftovers in an airtight container in the fridge for 4-5 days.
