- In a small skillet, cook beef over medium heat until no longer pink; drain. Place tortilla chips on a microwave-safe serving plate. Layer with the beef, bacon and cheese. , Microwave, uncovered, on high for 1-2 minutes or until cheese is melted. Top with guacamole and sour cream. Sprinkle with tomatoes and onions if desired.

These are adapted from the El Paso Chile Company's cookbook. They are incredibly good and are my favorite late-night snack.

Steps:
- Preheat the oven to 475.
- Cook bacon on stovetop until crisp. Drain on absorbent paper. When the bacon is cool, coarsely chop it.
- Arrange the tortilla chips on a large rimmed baking sheet. Scatter the bacon, onions, and jalapenos evenly over the chips. Sprinkle the grated cheese over all. Bake about 5 minutes, or until the cheese is melted and the nachos are sizzling (watch carefully to prevent overbrowning).
- Serve immediately, accompanied by sour cream and salsa for dipping. (As the nachos already have jalapenos on them, choose a salsa that's not too hot).

- Stir the cheeses, cornflour, cream and 1 tbsp maple syrup in a saucepan over a low heat. Continue stirring - it may split or look lumpy but will eventually come together. Season with the Tabasco and a little more maple syrup to taste. Keep warm to prevent it setting quickly.
- Grill the bacon until very crisp, and warm the tortilla chips on the shelf below in the oven. Heap the chips onto a platter and pour over the cheese sauce. Break the bacon into small pieces and sprinkle over, followed by the spring onions, jalapeño (if using) and coriander.

- Drain chicken and shred, thinly slice green onions, dice tomato, fry bacon until crisp and crumble.
- Preheat oven to 425 degrees. Line large cookie sheet with aluminum foil, layer almost the entire bag of tortilla chips, chicken, olives, green onions, tomato, bacon and cheese. Repeat layers over that if you wish to double the recipe. I put the cheese on over the ingredients to better hold them in place on the tortilla chips. Bake 5 to 10 minutes or until cheese is melted. Serve with salsa and sour cream on the side. Generously serves 6.

- Preheat the oven to 425° and line a rimmed sheet pan with parchment paper.
- Slice the potatoes into 1/4" thick rings and add the sheet pan. Drizzle with 1 tablespoon of oil and sprinkle with 1 1/2 teaspoon salt and pepper. Toss the potatoes to evenly distribute the seasoning and lay out in a single layer on the sheet pan.
- Bake for 30-32 minutes, until the potatoes are golden brown across the tops. While the potatoes are baking, fry the bacon and make the cheese sauce.
- Add the diced bacon to a large pan over medium-high heat. Cook, stirring occasionally, until the bacon is crispy, 6-8 minutes. Set bacon aside on a plate lined with a paper towel.
- For the cheese sauce, add 1 tablespoon of oil to a saucepan over medium heat. Allow to come to temperature and sprinkle over the flour. Whisk about 1 minute. Do not allow the flour to brown.
- Begin adding the half-and-half one generous splash at a time, whisking well after each addition. Once all of the half-and-half has been added, allow the mixture to simmer 4-5 minutes, just until slightly thickened.
- Remove from the heat and stir in 1 cup of Cheddar cheese and a generous pinch of Kosher salt. Set aside.
- Remove the potatoes from the oven, drizzle with the cheese sauce, cheese curds (if using), the remaining 1/2 cup of Cheddar, and diced bacon.
- If desired, return to the oven for 4-5 minutes, just until the cheese curds have melted. Top with sliced green onions and sour cream (if using), serve, and enjoy!

A beautifully appointed home is nice, but I'm talking about food advertisement. Yes, food advertisement. Ohhh, the joy of family ladling soup from an old crock, bread served on a weathered wooden bread board or maybe nachos cleverly presented in a black iron skillet. Make it an event...eat it alfresco. - Preheat the oven to 350 degrees.
- For The Chips: Cut each tortilla into quarters. Heat the oil in a skillet on medium heat. The oil should be about 1/2 inch deep in the skillet. Place about 8 to 10 of the tortilla quarters in the hot oil at a time. Turn the tortilla chips as they cook so each side is golden brown.
- When the chips are golden brown on both sides, remove them from the skillet and lay them on a plate over a paper towel to absorb the excess oil. Repeat with the remaining tortillas; set aside.
- For The Bacon Guacamole: In a small bowl, add the avocado, 1 tablespoon of the red onions (reserving the other 2 tablespoons for the nachos), 1 tablespoon salsa (reserving 3 tablespoons to serve with the nachos), 1 tablespoon of the crumbled bacon (reserving 2 tablespoons for the nachos) and the juice from 1 quarter of the lime (reserving the other 2 quarters for garnish).
- Mix the guacamole ingredients using a spoon so that the avocado is broken into small chunks (rather than smashing up the avocado with a fork). Then salt and pepper to taste and top with additional crumbled bacon.
- For The Nachos: Add the chips to an oven-proof plate or skillet. Top the chips with the chili, shredded cheese, sliced jalapeno, remaining diced onions and the remaining crumbled bacon.
- Bake in a preheated oven until the cheese is melted, about 6 - 8 minutes.
- Top the warm nachos with the diced tomatoes and serve them with side dishes of sour cream, the remaining salsa and the bacon guacamole.
- Garnish with the remaining lime wedges.

This recipe is inspired by appleydapply Bacon and Onion Nachos. We had unexpected company come by and I wanted to make lunch for them. This is the result I got. It's hot and spicy but you can decrease the amount of jalapeno peppers. If you do not like crisp vegetables, microwave them to the desired consistency you like. We like crisp.

- Line a baking sheet with aluminimum foil.
- Spread 1/2 bag of Tostitos over the foil.

- Mix the onion, lime juice, sugar and a generous pinch of salt in a small bowl. Set aside.
- Heat the grill to medium-high and line a large baking tray with foil. Squeeze the sausagemeat from its skin and roll into small meatballs, you should get 5-6 per sausage. Arrange over the tray and grill for 8-10 mins, turning halfway through cooking, until browned and cooked through. Tip into a dish and set aside.
- Arrange the bacon on the same baking tray and grill until crisp, about 5 mins on each side. Remove to a plate and leave to cool. Turn off the grill and set the oven to 200C/180C fan/gas 6.
- Pour away any juice or fat from the tray, but don't worry about washing it. Spread half the tortilla chips over the tray. Top with half the sausage balls, half the turkey, a few blobs of cranberry sauce and half the cheese. Scatter the rest of the tortilla chips, sausage, turkey, sauce and cheese on top then bake for 15 mins, until the cheese has melted.
- Meanwhile, heat the oil in a pan over a medium-high heat and fry the sage leaves until crisp. Serve the nachos scattered with the pickled red onions, fried sage leaves and crumbled crispy bacon.
