- Line 2 baking sheets with parchment paper. Cook bacon in a large skillet over medium-low heat, stirring occasionally, until deep golden brown and crisp. Using a slotted spoon, transfer bacon to paper towels. Whisk flour and next 3 ingredients in a medium bowl. Using an electric mixer, beat both sugars and butter in a large bowl, occasionally scraping down sides, until well blended, 2-3 minutes. Add eggs one at a time, mixing well between additions. Add vanilla; mix on medium speed until pale and fluffy, 4-5 minutes. Mix in dry ingredients. Fold bacon, oats, and raisins into batter and stir until evenly incorporated (dough will be sticky; chill briefly for easier handling, if desired). Using a 2-oz. ice cream scoop or 1/4-cup measure and forming dough into balls, scoop batter onto prepared sheets, spaced at least 3 inches apart. Chill dough for 1 hour or cover and chill overnight. Arrange racks in upper and lower thirds of oven; preheat to 375°. Bake cookies, rotating pans halfway through, until edges are light golden brown and centers are still slightly soft, 20-22 minutes. Let cool on baking sheets for 10 minutes. Transfer to a wire rack; let cool completely. do ahead: Can be made 3 days ahead. Store airtight at room temperature.

It's important to use plenty of raisins for this recipe, use more if you like. I really enjoy the texture of these cookies; their especially good with a glass of milk.

Steps:
- Preheat oven to 300°F.
- Place the butter, brown sugar, and granulated sugar in a work bowl; beat with an electric mixer on medium speed until the mixture is fluffy.
- Turn the speed to low and add the egg and almond extract, beat until well combined.
- In another bowl, sift together the flour, baking soda and salt; add it to the butter mixture and beat until mixed.
- Add the oatmeal and raisins and mix .
- Grease a cookie sheet, or use a non-stick spray.
- With a 2 tablespoon measure, drop the cookie dough onto the cookie sheet in dollops about 3 inches apart.
- Gently press down on the dough with the back of a spoon to spread out into 2-inch circles.
- Bake for about 20 minutes or until cookies are browned around the edges.

OATMEAL COOKIES WITH RUM-SOAKED RAISINS
If you like rum, give these a try. I was looking for an oatmeal cookie with rum and although I would only give it four stars if I was rating it, the rum flavor is nice for a change in an oatmeal cookie. I found it on by internet by Chef June.

- Simmer raisins and rum over low heat until raisins are plump (about 20-30 minutes) Drain liquid into measuring cup Add water to make 1/2 cup liquid.
- Heat oven to 400 degrees (I found 375 worked better for me.).
- Cream butter and sugar. Stir in eggs, vanilla, and raisin liquid.
- Mix all the dry ingredients (except nuts and oats).
- and add to butter mixture.
- Stir in oats, raisins and nuts.
- Drop rounded teasspoons of dough on ungreased cookie sheet. Bake for 8-10 minutes.

- Heat oven to 350°F Lightly coat two baking sheets with cooking spray.
- In blender, process oats until finely ground but not powdery. Combine with flour, baking powder, baking soda, and salt in a bowl.
- In cleaned blender, puree beans (adding bean liquid if needed) until smooth. Combine bean puree, butter, sugar, eggs, and vanilla in a separate bowl and mix very thoroughly.
- Vigorously by hand or with electric mixer on low speed, beat in oat and flour mixture. Stir in raisins (chocolate chips) by hand.
- Drop batter (by the tablespoon) onto baking sheets. Bake 15 to 17 minutes until centers are firm and edges are lightly browned. Transfer to wire rack to cool. Yum!
