QUICK AND EASY BACON, EGG AND CHEESE
Any New Yorker will tell you a good bacon, egg and cheese (BEC) sandwich is the best way to start your day, and most likely you already have everything you need in your pantry to whip one up. The key elements to a great BEC are the melted cheese, scrambled egg that nestles perfectly onto the bread without falling off and salty crispy bacon. To make sure the cheese stays melted, we fold it into the center of the eggs just as they finish cooking so it stays warm. We found that by preparing eggs like an omelet ''package'' instead of scrambling them and topping them with cheese allowed us to adjust the size of our eggs to perfectly fit the size of our bread and hold our cheese in the ideal melted state. When you can't get to your corner deli or coffee cart, you can whip up this breakfast icon in the time it takes to walk out the door.

Steps:
- Whisk the eggs, milk, a pinch of salt and a couple of grinds of black pepper in a small bowl until smooth and combined. Heat the vegetable in a medium non-stick skillet over medium-low heat.
- Once the skillet is warm, pour the egg mixture in and allow it to cook undisturbed until the edges are set, about 1 minute. Use a spatula to gently lift the edges of the egg and allow the uncooked egg to run underneath. Once the egg is fully set, about 4 minutes, place the slices of cheese in the center of the egg. Carefully lift each side of the egg and folder it over the cheese to form a square package about the size of your toasted bread. Flip the eggs over gently, keeping the package intact, and allow the folded side to cook and melt the cheese, about 30 seconds more.
- Assemble the sandwich by layering the bacon on 1 slice of toast and then topping with the warm eggs. Top with the remaining slice of toast and serve immediately.
BACON, EGG AND CHEESE PAPPARDELLE
This decadent pasta dish is easy to make and pure comfort food.

Steps:
- Cook pasta in a pot of salted water according to package instructions for al a dente. Drain and keep warm.
- In a small bowl, whisk together the eggs and cheese. Set aside.
- While pasta is cooking, heat olive oil on medium high heat in a large frying pan. Add bacon and garlic to the pan. Once the bacon and garlic start to sizzle, add chicken broth and bring to a simmer.
- Reduce heat to low and add drained, cooked pasta. Mix well and cook for a minute or two so that pasta blends with the liquid.
- Turn heat off and add egg mixture. Mix gently so that pasta is combined with the egg and cheese mixture.
- Transfer pasta to a bowl and sprinkle with parsley. Serve with extra Parmesan cheese.

- Preheat the oven to 350°; butter a shallow 2-quart casserole.
- In a large skillet, cook the bacon until crisp; drain well and crumble.
- Add the green onions and 1 tablespoon butter to the pan and cook for 2 minutes, stirring.
- Add the mushrooms and cook for 2 to 3 minutes more, then remove from the heat.
- In a medium bowl, beat the eggs, milk, salt, and pepper together.
- Stir in the cheese and mushroom mixture.
- Pour into the prepared dish and bake, uncovered, for 30-35 minutes, or until puffed and set.
BACON, EGG AND CHEESE BISCUIT
Say goodbye to those expensive but small frozen breakfast sandwiches. These are over the top. Make them up ahead of time and put them in the freezer. When ready to enjoy, defrost, wrap in paper towel and zap for a minute or two in the microwave. This recipe is for 6 but can easily be doubled to 12. The biscuits can be baked along with the eggs. Enjoy!

- Preheat oven to 425 degrees.
- Spray a 6 cup muffin tin with non-stick cooking spray and set aside.
- In a small bowl, beat together the eggs and milk; salt and pepper to taste.
- Divide the egg mixture evenly between the prepared muffin tins and place in preheated oven.
- Bake for 8 to 10 minutes or until eggs are set; immediately sprinkle with grated cheese.
- Remove from muffin tin and allow eggs to cool completely.
- Split the biscuits and top each with a slice of the Canadian bacon.
- When the eggs are cooled, place one on top of each slice of bacon.
- Wrap in foil and freeze until ready to enjoy.
- When ready to reheat, place in the refrigerator the night before, in the morning, wrap in a paper towel and reheat in the microwave at 70 percent power for 1 minute or until heated, turning after 30 seconds.

BACON, EGG AND CHEDDAR SCONES
This wonderful recipe is from The Cheese Lover's Cookbook and Guide by Paula Lambert, adapted slightly cause I want MORE of everything. These scones also freeze beautifully (fully-baked). I individually wrap in double-foil and then breakfast is ready for me when I don't have time to make it.

- Note before you get started: Shredding or cubing the cheese depends on personal preference; the shredded blends into the pastry, but the cubed leaves little chunks of cheese throughout. I'm a Libra, so I do both. (shred half and cube half ,-)
- Preheat the oven to 450°F (230°C). Lightly butter a baking sheet or line it with parchment paper.
- Sift the flour, baking powder, and salt together. Place in either a medium bowl or the work bowl of a food processor fitted with a steel blade. Cut the butter into the flour so that it is completely incorporated, using two knives, a pastry blender, your hands, or food processor until incorporated.
- Beat 2 of the raw eggs and the cream together and add to the dry ingredients. Mix or process just to incorporate the eggs into the flour and butter; do not overmix. Dump the flour-and-butter mixture into a clean bowl.
- Fold the cheese, scrambled eggs, and bacon into the flour mixture. It will be sticky and chunky. Stir and knead the dough as little as possible while distributing the cheese, scrambled eggs, and bacon throughout.
- Transfer the dough to a well-floured work surface. Pat the dough into a rectangle about 12 x 4 x 3/4 inch high. Cut the dough into three 4-inch squares. Cut the squares on the diagonal to form six triangles. Place the scones at least 1 inch apart on the baking sheet.
- Beat the remaining 1 egg with 2 tablespoons water and use this wash to brush the tops of the scones.
- Bake for 10 to 12 minutes, or until golden brown. Remove and serve warm.

BACON, EGG AND CHEESE QUESADILLAS
Came up with this when I didn't want a regular breakfast biscuit. Cooking bacon isn't included in cooking time. If you want to save time,and a step or two just mix in the cooked bacon with the eggs before you scramble them. Heat level of salsa is Chef's choice. - Scramble eggs until desired doneness is reached.
- While eggs are cooking, heat tortillas in microwave for about 15 seconds or until softened.
- Spread 1 tablespoon of salsa on bottom half of tortilla.
- Place half the eggs over the salsa.
- Top eggs evenly with 1/4 cup of cheese.
- Place half of the bacon over the eggs and fold the top half of the tortilla over.
- Repeat steps 3, 4, 5 and 6 for remaining tortilla.
- Place both tortillas in a 10-inch skillet sprayed with cooking spray.
- Cook until lightly browned over medium heat on both sides, about 6 to 8 minutes.
- Cut each quesadilla in half; eat and enjoy.

- Preheat the oven to 350 degrees F.
- If making one: Cook the bacon in a skillet over medium-high heat until browned but still flexible.
- If making more than one: Lay out bacon on a foil and parchment-lined cookie sheet. Bake in the 350 degree F oven for 10 to 12 minutes. (You want the bacon to be cooked and flexible; not crispy.) Or cook in a skillet over medium-high heat until browned but still flexible.
- Set up ramekins (4-ounce) or you can use a muffin tin. But if you are using the ramekins, place them on a cookie sheet. If you are using the muffin tin, put a little water in the unused muffin cups; this saves the cups from burning.
- When bacon is done, wrap a slice around the inside of the ramekin or muffin cup.
- Place a teaspoon of melted butter (or bacon grease) in the bottom of the ramekin or muffin cup.
- Drop in the egg.
- Bake in the preheated oven.
- After about 10 to 15 minutes, place a 1/4 slice of cheese over the egg, and continue to bake until egg is cooked and the cheese is melted.
