CHEESY BACON MICROWAVE POTATOES
Since our RV has a microwave, we make use of it whenever we can. This is always a favourite with our family. The amount of potatoes seems alot but I find that when camping, people's appitites increase; at least my families' does. NB I have editid this to correct the "water" issue from the first review.

Steps:
- Wrap potatoes in foil and bake in a 400* oven for 45-60 minutes. When potatoes are done, unwrap and let them cool.
- When potatoes have completely cooled, slice them in half, and with a small spoon; gently remove the center and you should have a potato boat.
- Place scooped out potatoes in a bowl and add the rest of the ingredients, mixing well.
- Reserve a handful of shredded cheese for the topping.
- Using a spoon fill the boats with the mashed mixture and top with the reserved cheese.
- Bake on 375* for 10-15 minute then on broil, watching closely so they do not burn until the cheese is slightly browned.
- Top Potato Boats with sour cream and more chives (optional of course), and Enjoy!

- add potato stock and water bring to boil.
- reduce heat simmer covered til potato is just tender.
- add sour cream stir til heated through.

- IF you want your soup a bit thicker I quickly use a hand held blender and pulse it a couple of times but dont completely blend it or it will be too thick still leave some potato chunks. tastes even better the next day.

Steps:
- Cook bacon in a 12-inch heavy skillet over moderate heat, turning over occasionally, until browned and crisp, 6 to 8 minutes.

- Put oven rack in middle position and preheat oven to 450°F.

- Make deep crosswise cuts in potatoes 1/4 inch apart, leaving bottom 1/4 inch intact (do not cut all the way through).
- Place each potato on a sheet of foil and drizzle each with 1 tablespoon bacon-dripping mixture, separating slices to allow some to drip into cuts.
- Gather up foil around potatoes, crimping foil to tightly enclose.
- Roast potatoes until tender, 45 to 50 minutes.
- Just before serving, stir together sour cream and scallion greens and crumble bacon over mixture.
- Carefully open foil packets and transfer packets to a platter.
- Serve potatoes with sour-cream topping.
