BLACK-EYED PEA SUPPER DISH
This is one of our favorite cool weather dishes - it's so good with cornbread! The recipe came from Bush's. It's one I never really tinker with, and that's unusual for me. The ingredients are just right in the original.

Steps:
- Brown sausage in large skillet, crumbling with fork as it browns. Drain any accumulated fat.
- Add green pepper & onion to skillet with sausage and cook for 5 minutes.
- Add tomatoes & seasonings, stir well.
- Pour in blackeyed peas with the liquid in the can. Cover & simmer for 15 minutes.
- Serve hot with grated cheese on top.
BEEF AND SAUSAGE SOUP
Everyone enjoys this soup, which is hardy and tasty. Each time I serve it, people seem to want the recipe. When that happens, I know it's appreciated!

- In a Dutch oven over medium-high heat, brown beef in oil on all sides. Remove with a slotted spoon and set aside. Brown sausage on all sides; drain. , Return beef to the pan. Add the tomatoes, water, onion and seasonings. Bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours or until beef is tender. Add the potatoes and celery. Cover and simmer for 30 minutes or until vegetables are tender.

- Preheat oven to 350. Lightly grease a 9x9 casserole dish.
- Combine crumbs and broth. Press half into bottom of dish.
- Brown sausage in skillet. Drain fat and place on crum crust. Spoon rice over sausage.
- In small saucepan over medium heat, combine milk and soup. Stir in eggs and cheese and cook until cheese is just melted. Pour into dish. Sprinkle remaining crumbs on top.
- Bake for 45 minutes.

I love this casserole! Although it's called a supper dish, it works beautifully for breakfast, too. It freezes well and you can get a head start by using leftover rice.

Very easy to assemble comfort dish. Goes well with side dish of green beans and/or cole slaw. DH asked me to add this to the "regulars". Those who like things spicy can add kickers.
