This is the best pasta salad I have had. A friend at work gave me the recipe and I always get compliments whenever I make it.

1 (16 ounce) package tri-color rotini pasta
2 tomatoes, seeded and diced
2 cucumbers - peeled, seeded, and diced
1 (4 ounce) can sliced black olives
½ cup Italian dressing, or more to taste
½ cup shredded Parmesan cheese
1 pinch salt and ground black pepper to taste
1 avocado, diced
1 squeeze lemon juice

Steps:

  • Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes. Drain and let cool, 10 to 15 minutes.
  • Mix rotini pasta, tomatoes, cucumbers, olives, Italian dressing, Parmesan cheese, salt, and pepper together in a large bowl. Chill until flavors combine, about 1 hour.
  • Toss avocado with lemon juice in a bowl. Mix into the pasta salad before serving.

300g orzo
1 tbsp sunflower oil
140g streaky bacon , chopped
140g cherry tomatoes , halved
½ x 190g jar pesto
2 avocados , stoned, peeled and sliced
70g bag rocket
Grana Padano shavings, to serve

Steps:

  • Bring a large pan of water to the boil. Cook the orzo following pack instructions, drain and set aside. Meanwhile, heat the oil in a frying pan and fry the bacon for 4-5 mins until crispy. Stir in the tomatoes and cook for a couple mins more. Stir in the orzo, pesto and avocado, and heat for 2 mins more.
  • Spoon onto a serving plate, then scatter with rocket leaves and Grana Padano.

This will be one of the tastiest pasta salads you've tried! It's packed with mini pasta, fresh mozzarella pears, fresh tomatoes, fresh basil, fresh avocados and a tasty balsamic glaze. In other words lots of fresh exciting flavors here!

10 oz. (2 3/4 cups) mini penne pasta shells
Salt and freshly ground black pepper
1 pint cherry or grape tomatoes, (halved)
2 small avocados, (diced (they should be fairly firm but ripe))
8 oz. fresh mozzarella pearls
1/4 cup chopped fresh basil leaves
1 1/2 Tbsp balsamic vinegar, then more for serving to taste ((use white balsamic vinegar for better coloring if desired))
1 cup (18g) slightly packed fresh basil leaves
1 cloves garlic, (peeled)
1/4 cup olive oil
2 Tbsp finely shredded parmesan, (plus more for serving if desired)
1 Tbsp pine nuts or chopped walnuts

Steps:

  • Cook pasta in boiling salted water according to directions on package. Drain and let cool completely.
  • In a food processor pulse 1 cup basil leaves, parmesan, pine nuts, and garlic until minced. Pour in olive oil and process until everything is finely minced. Season with salt and pepper to taste.
  • Add pasta and tomatoes to a salad bowl. Pour basil (pesto) mixture over pasta and tomatoes and toss to evenly coat.
  • Add in avocados, mozzarella, basil (set some aside to garnish over top if desired), and pour in balsamic vinegar and toss just lightly.
  • Serve immediately with more balsamic vinegar and parmesan if desired.

1/2 lbs Pasta, penne or farfalle, I used gluten free variety
4 Cup Egg(s), hard boiled or leftovers, small diced
2 Avocado, ripe, scooped and small diced
1 Cucumber, large hot-house cucumber, small diced
2 Cup Cherry Tomatoes, or heirloom cherry tomatoes, halved
4-5 tbsp Cilantro, small chopped
3 tbsp Lemon, juice
4 tbsp Olive Oil
1/2 tsp Tabasco Sauce, use more or less per preference
1/2 Jalapeno, seeds and stem removed
1/2 tsp Oregano, dried, or 8-10 leaves fresh
1/2 tsp Salt, adjust per taste
Black Pepper

Steps:

  • Cook pasta according to package directions. Once pasta has cooked, drain and set aside.
  • Dressing: In food processor, add all dressing ingredients and process until dressing is smooth and all ingredients are fully chopped.
  • Salad: In a wide salad bowl, add cooked, drained and cooled pasta. Add diced avocado, eggs, tomatoes and cucumber. Pour dressing over the salad. Toss to coat everything with dressing. Taste and adjust salt, black pepper. (I like to add few more dash of Tabasco if needed.) Serve and enjoy!

400g bag raw peeled tiger prawns , defrosted
4 tbsp olive oil
juice and zest of 1 large lemon
1 small garlic clove , finely chopped
1 large avocado , peeled, stoned, cut into cubes
250g cherry tomato , halved
2 spring onions , thinly sliced
100g bag rocket
small bunch basil leaves, torn

Steps:

  • Cook the pasta in boiling water for 10-11 mins. Just before the end, add prawns and cook through. Drain, cool under cold water, drain and transfer to a big bowl.
  • Put the oil, lemon juice and zest, garlic, avocado, tomatoes and spring onions in a separate bowl, then mix well - don't mash the avocado. Season. Gently toss the mix into the pasta, with the rocket and basil.

• 1 small green zucchini (, halved and sliced)
• 1 small yellow squash (, halved and sliced)

1 cup cherry tomatoes (, halved)
2 tablespoons extra-virgin olive oil
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper
1 16- ounce package short pasta such as rotelle or penne
1 avocado
1 cup Almond Breeze almondmilk Original
6 ounces of pesto
1/2 lemon (juiced)
1/2 cup halved Kalamata olives
1/4 cup grated Parmesan cheese
1/4 cup toasted pine nuts (pistachios, or sliced almonds)
Basil leaves

Steps:

  • Preheat the oven to 425° F and prepare a baking sheet with aluminum foil. Toss the sliced veggies with olive oil and 1 teaspoon of both kosher salt and freshly ground black pepper. Roast for 10-15 minutes or until the veggies soften and caramelize. Set aside to cool.
  • Meanwhile, cook the pasta in salted water according to package directions, drain, rinse, and cool.
  • Add the avocado to the blender jar and pulse a few times. Add the almond milk, pesto, lemon juice, and the remaining 1 teaspoon each of kosher salt and pepper. Blend on high until light and frothy. Add more almond milk if needed to create a lush sauce.
  • Add the cooked pasta to a large mixing bowl with the cooked veggies and kalamata olives. Drizzle with the avocado sauce and toss to coat. Taste and adjust the seasoning, garnish with the Parmesan cheese, nuts and more basil leaves if desired. Serve at room temperature or chilled. Will keep for 1-2 days.

Fiery Shrimp, Avocado and Pasta Salad image

3/4 pound peeled and deveined shrimp
2 green onions, roughly chopped
2 ribs celery, roughly chopped
1/4 cup olive oil
3 tablespoons lemon juice
1/2 teaspoon dried thyme
Tabasco sauce
2 ripe Haas avocados

Steps:

  • Bring a large pot of salted water to a boil for the penne. Before you boil the pasta, set the shrimp in a strainer and dip them in boiling water to cook them through, a few minutes. Drain, cool, pat dry and cut into 1/2-inch pieces. Add the penne to the same boiling water and cook for about 8 to 10 minutes or until tender but still firm. In a food processor puree the green onions, celery, oil, lemon juice, and thyme. Season to taste with Tabasco sauce.
  • Drain pasta and rinse under cold water to cool thoroughly. Drain again and pat dry.
  • Combine the pasta, shrimp and toss with the dressing. Right before serving, peel, pit and dice the avocados and add them to the pasta. Toss gently and adjust the seasoning.
