- Preheat broiler. Place 2 avocado halves in a large bowl; mash lightly with a fork. Add mayonnaise and lemon juice; mix until well blended. Stir in crab, 3 tablespoons cilantro, chives, serrano pepper, capers and pepper. Spoon into remaining avocado halves., Transfer to a 15x10x1-in. baking pan. Sprinkle with cheese and paprika. Broil 4-5 in. from heat until cheese is melted, 3-5 minutes. Sprinkle with remaining cilantro; serve with lemon wedges.

BAKED AVOCADO BOATS WITH BACON
These Baked Avocado Boats with Bacon are such a great keto breakfast option with so much room to personalize with your favorite toppings.

Steps:
- Preheat the oven to 350 degrees. To keep from sticking to the baking pan when baking, line with parchment paper.
- Cut the avocados in half lengthwise and take out the pits. Use a spoon to take out a bit of the flesh around the pit area to create a bigger space for the egg. (Save that extra avocado to use for something else later or top the avocado boats once done baking)
- Crack the egg into a bowl and put it into the avocado half. Put the avocado half on the baking sheet and do this for all until complete. Season with salt and pepper to taste.
- Put the halves into the oven and bake for 20-25 minutes. Take out of oven and top with shredded cheese and bacon pieces. Garnish with chopped chives, crushed red pepper flakes or other toppings and enjoy.

This is another recipe from the "1 of a Kind" cookbook of the Junior League of Mobile, AL. Altho somewhat similar to another recipe here on RZ that I liked & reviewed, this version expands the concept. Yield was given as 6 servings, but I like this so much that I would want 2 for me! Enjoy!

- Combine bacon, sour cream, tomato, onion, lemon juice & salt in a bowl.
- Scoop out avocado pulp, dice & add to other ingredients.
- Fill avocado shells w/mixture & serve immediately.
- NOTE: While not a part of the recipe, I favor adding diced black olives to the avocado mixture.

- Heat grill to high. Put the bacon and cherry tomatoes, cut side up, on a grill rack and grill for 10 mins, turning the bacon halfway through, until crisp. Meanwhile, roughly mash the avocado with a fork and stir in the lime juice, chilli flakes, some salt, if you like, and pepper.
- Toast the bread until golden and spoon on the mashed avocado. Top with the tomatoes and bacon, then serve.

- Wash outside of the avocados. Cut the avocados in half and dispose of the pit. Scoop out a little bit of the avocado with a spoon and dice the part you removed. Place to the side. The section with the shell will be your avocado boat.
- Dice the bacon. Cook bacon pieces on a medium-high heat in a non-stick pan for 3 minutes or until at your desired crispness.
- Remove bacon from and place on a paper towel. Place to the side while you cook the eggs. Wipe the non stick pan out clean with a paper towel to remove bacon grease.
