CHOCOLATE AVOCADO PUDDING
Steps:
- Bring a medium saucepan 1/3 full of water to a simmer over medium heat. Put the chocolate into a heatproof bowl, set it on the saucepan and turn off the heat. Let stand 5 minutes; stir the chocolate until smooth. Stir in the espresso powder. Cool to room temperature.
- Put the avocados, honey, cocoa powder, almond milk, vanilla and salt in a food processor and pulse until coarsely mixed. Add the melted chocolate mixture and process until very smooth.
- Spoon the mixture into 6 small dessert glasses and sprinkle chocolate shavings over the surface. Garnish with the raspberries.
- The pudding can be served immediately or covered tightly (without garnishes) and refrigerated for up to 4 hours.
CUCUMBER AVOCADO SALAD

Steps:
- 1.PEEL cucumbers. Slice in half lengthwise. Remove seeds in center of cucumbers by scraping them out with a teaspoon. Slice each cucumber half in half again lengthwise. Chop into 1/4 to 1/2 inch thick chunks. Place in a mixing bowl. 2.MIX in Sabra® Roasted Garlic Greek Style Veggie Dip salt and parsley. 3.CUT avocados in half and remove pit. Scoop avocado away from skin using a spoon. Chop avocado into chunks and fold into salad. Serve or refrigerate until ready to serve.
BAKED AVOCADO
Steps:
- Preheat oven to 375 degrees F.
- Cut the avocado in half and scoop out the flesh, leaving the skin intact, and roughly dice the avocado. Place avocado in an ovenproof dish, and add the crumbled blue cheese, walnuts, pancetta, and Worcestershire sauce and season with salt and pepper.
- Spoon the mixture back into the avocado shells and bake for 5 minutes. Remove from oven and place in the broiler for 2 minutes right before serving.
- To serve, place on a serving tray with sliced baguette or crackers.
AVOCADO SMASH

Steps:
- Cut the avocados in half and discard the pits. Using the tip of a paring knife, score the avocado flesh into medium squares. Use a large spoon to scoop out the cubes into a bowl.
- Add the lemon juice and salt. Mix, smashing gently with a fork or spoon. The dip should be chunky and well combined.
