Here's a recipe for classic, Homemade Italian Meatballs. Serve them for dinner topping a plate of spaghetti and send the leftovers with your kids for lunch to make a meatball sub sandwich.

Steps:
- In a large bowl, mix all of the ingredients together.
- Roll into 1 1/2" balls and place them closely together in 9x13 pans that have been sprayed with cooking spray. **You can place a wire rack on the baking sheet and bake the meatballs on the rack so that the fat drips down if you'd like.**
- Bake at 350 degrees for 35 minutes, or until the meatballs are cooked through.
- Serve the meatballs immediately with sauce and spaghetti, put them in the slow cooker along with sauce to have them simmer, or freeze the meatballs in Ziploc bags to use another time.
- If you freeze the meatballs, allow them to cool completely before packaging them.

- Cover a baking sheet with foil and spray lightly with cooking spray.
- Soak bread crumbs in milk in a small bowl for 20 minutes.
- Heat olive oil in a skillet over medium heat. Cook and stir onions in hot oil until translucent, about 20 minutes.
- Mix beef and pork together in a large bowl. Stir onions, bread crumb mixture, eggs, parsley, garlic, salt, black pepper, red pepper flakes, Italian herb seasoning, and Parmesan cheese into meat mixture with a rubber spatula until combined. Cover and refrigerate for about one hour.

Meatball recipes are often challenged by chefs who claim, "Mine are the best!" Even though my meatballs ARE the best, I will make no such claim. Try them for yourself! This meatball recipe was given to me by my father who got it from a little old lady from Italy that he knew. It's amazing that she gave up her recipe to him, but I sure am glad she did!

- With clean hands, mix all ingredients except for milk and salt in very large bowl. Mixture will feel somewhat dry.
- Start adding milk approximately one cup at a time until the mixture feels more moist and pliable.
- Sprinkle the top of the mixture finely with the season salt and work that in as well.
- (The size of the meatball is up to you- I like them on the bigger side so I roll them bigger than a golfball but smaller than a tennnis ball. I also prefer baking them in the oven over frying them. They seem to brown more evenly and they hold their shape better.).
- Line them in a 9x13 pan sprayed with cooking spray (12 per pan) and bake in a 375 degree oven for about 20-30 min.'s or until browned.
- Transfer them carefully into your pot of simmering tomato sauce and simmer them only for about an hour. If you cook them too long in the sauce, they will lose their flavor.
- This is a good amount for a large crowd. You can freeze half if needed.

- In a large stock pot, drizzle in about 1-2 Tablespoons of olive oil and heat over medium.
- Once oil is hot, saute onion and garlic until translucent, about 2 minutes.
- Add the (peeled) tomatoes and tomato paste. Bring to a boil over medium heat, stirring constantly.
- Once the paste is completely mixed in, reduce to simmer.
- Stir in fresh herbs and seasonings. Allow sauce to simmer while preparing the meatballs.
- Place a large skillet over medium heat and add 2 Tablespoons olive oil.
- In a large bowl, mix together all meatball ingredients (Parmesan, beef, sausage, egg, bread crumbs and seasonings) until well combined. Adjust the consistency by adding a bit of cream or more bread crumbs, as needed.
- Roll the meatball mixture into 3-4" meatballs. (They will reduce slightly once cooked.)
- Add meatballs to the skillet, being careful not to overcrowd (you may need to do two batches). Sear each on all sides and cook for about 5 minutes until cooked through (you may want to test one).
- Add cooked meatballs to sauce.
- Cover and simmer for up to one hour. Stirring occasionally.
- Serve with pasta or eat with bread right out of a bowl!

My mom's friend who is Italian gave me a copy of her family cookbook that they had bound and published. It was a wedding shower gift that I treasure. As a newlywed I used this recipe a lot! I've been married 16 years and I make these with spaghetti, for meatball sandwiches, and smaller versions for appetizers to take in a crockpot to parties. Some friends think it is strange to put uncooked meatballs in the sauce, but that's what the recipe says to do. It cooks for a long time, and the meatballs keep their shape. I do not make my own spaghetti sauce. I buy two large jars of Ragu. No one seems to notice, or care!!Always a hit!!! Makes a lot and freezes well.

- Let's start with preparing the meat. Mix in a bowl: the mince meat, the egg, the breadcrumb, the Parmesan cheese, the milk and the parsley. Massage until you reach a good consistency, as shown in the video;
- Separately, slice the scamorza in cubes: one small cube per each of the meatballs you'll prepare;
- Form several meatballs with the meat mix we created. In my case, I ended up with 14 meatballs. For each meatball, insert one cube of scamorza inside and then roll until you get a sphere;
- Let the meatballs rest while we take care of the tomato sauce;
- Finely chop the carrot and the onion;
- Heat a pan and pour some olive oil. When well hot, add the chopped onion and carrot inside and gently fry for a few minutes at low-medium heat;

- (Add 1/4 cup of red wine to the mixture 3-4 days ahead of the cooking time if you want.).
- The first step is to gently mix all the ingredients, except olive oil, together in a large bowl. Now coat your palms with a thin layer of oil. Divide the mixture into about 16 portions, or lesser, if you desire bigger meatballs.

- Grate the bread or pulse into crumbs in a food processor. In a small bowl toss the bread crumbs with milk to re-hydrate.
- In a large bowl, combine the bread crumbs, pork, veal, beef, Parmesan, parsley, salt, onion, garlic, and egg and mix until combined. Season the meat mixture with pepper.
- Using your hands, gently form the meat mixture into 18 slightly larger than golf ball-sized balls. (Packing the meat mixture too tightly together will result in tough meatballs). Refrigerate for at least 1 hour or up to 24 hours.
- Heat half the oil in a large nonstick skillet over medium-high heat. Add half of the meatballs and cook, turning occasionally, until well browned on all sides, about 6 minutes. Transfer the meatballs to a plate. Drain the oil and wipe out the skillet, return to the heat, and repeat with the remaining oil and meatballs.
- Drain and wipe out the skillet again. Return all the meatballs to the skillet and pour in the marinara sauce. Bring to a boil, lower the heat, and simmer, covered, swirling the pan occasionally, until the meatballs are cooked through about 15 minutes. The cheese in the meatballs will start to melt when the meatballs are ready. Serve immediately with the Quick Marinara Sauce and spaghetti or on sandwiches.
