This version of Irish Soda Bread combines the sweetness of raisins and the richness of caraway with the lightness of a bread. The result is an inviting loaf equally at home in soft slices on your table or fresh from the toaster for a winning breakfast! From Electric Bread.

Steps:
- Combine according to your manufacturer's directions.
- Success Hints: Golden raisins give this bread its light flavor and look.
- Dark raisins may be subsituted but will make a darker, slightly heavier loaf.
- The sugar in the raisins creates a darker crust; use your machine's"light crust setting" if it has one.
- Dried butter milk can generally be found in the baking goods section of your supermarket.
- If you can't find buttermilk, regular dried milk can be substituted.
- If using delayed time bake, place raisins atop dry ingredients away from liquid.
- This recipe can be made using the regular, rapid and delayed time bake cycles.

Steps:
- Process all ingredients in your bread machine set on the dough cycle.
- Remove from bread machine, punch down, cover and let rest for 15 minutes.
- Prepare a baking sheet (I cover it with parchment paper). Punch the dough down, and shape it into an 8-inch circle, slightly flattened. Cover with wax paper, and let rise in a warm place for 1 hour.
- Preheat oven to 375°F Slash the top of the dough with a large X. Bake for 15 minutes, then reduce the temperature to 350 and continue to bake for 15 more minutes.
- Don't forget leftovers, if any, are great for sandwiches.
ANGIE'S IRISH SODA BREAD
This is the soda bread I grew up with that my mother always made. We had it year-round and not just for St. Patrick's Day.

Steps:
- Preheat oven to 350 degrees. Grease loaf pan and set aside.
- Combine flour, baking powder, and baking soda; stir in sugar and butter to combine. Add raisins, stirring to combine. Add eggs and buttermilk.
- Pour into prepared pan and bake for 1 hour. Let cool and serve.
CLASSIC IRISH SODA BREAD

- Preheat oven to 375°. Whisk together first 5 ingredients. Cut in butter until mixture resembles coarse crumbs. In another bowl, whisk together 1 egg and buttermilk. Add to flour mixture; stir just until moistened. Stir in raisins., Turn onto a lightly floured surface; knead gently 6-8 times. Shape into a 6-1/2-in. round loaf; place on a greased baking sheet. Using a sharp knife, make a shallow cross in top of loaf. Whisk remaining egg; brush over top., Bake until golden brown, 30-35 minutes. Remove from pan to a wire rack. Serve warm.

AUTHENTIC IRISH SODA BREAD
For those that don't know what "cream flour" is: cream flour is ground more times and sifted with finer-meshed sieves (removing more by-product) than in standard milling. It's a bit hard to come by, but staffordcountyflourmills.com has a store finder to find a place near you where it's sold or you can order it online and have it shipped at foodireland.com where I found the recipe. You could substitute regular flour if you don't want to go to all the trouble, but cream flour's smoother texture produces lighter and fluffier results.

Steps:
- Sift the flour, baking soda and powder into a bowl.
- Add the sugar and raisins, and stir.
- Add the buttermilk and form a dough.
- On a floured surface, knead the dough by continuously folding it into itself.
- Form a round shape and cut a cross shape on the top to keep the bread from"bursting" while baking.
- Bake for 35-40 minutes at 350°F.

AUTHENTIC IRISH SODA BREAD-YEAST FREE
This soda bread recipe is my personal one and very simple to make. Most homes in Ireland still make this bread daily and all have slight variations in ingredients or baking times. If you have ever traveled to Ireland, this is the soda bread you ate with your seafood chowder, soup, stew and breakfasts!

- Grease and flour a 8" (20cm) cake tin (high walls are better but not necessary.).
- Preheat oven to 190°C/375°F or 180C/350F if using a fan assisted oven.
- Sieve self-rising flour with bicarbonate of soda, baking powder and salt into a large bowl. (It is important to sieve the bicarbonate of soda with the self-rising flour, if it is added at a later stage it will give the bread a greenish tinge!).
- Add the wheat flour to the bowl (no need to sieve).
- In a jug mix the yogurt, honey and olive oil then pour onto the flour mixtures in the bowl.
- Stir with a wooden spoon until well mixed and a soft sticky dough is formed.
- Flour a surface for kneading and knead lightly (20 turns max). Form into a round shape, this does not have to fit the tin as it will spread when cooking.
- Transfer to the floured cake tin and with a knife cut a cross across the top and place in the oven for 45 minutes. (The cutting of the cross helps to portion the bread for slicing in quarters.).
- Eat when cool with just real butter or your favourite topping and a cup of sweet tea. It is lovely toasted too!
