SUNNY'S EASY BBQ BRAISED BRISKET WITH SWEET POTATO AND CARROT MASH

- Coat the brisket on all sides with the rub and actually rub it in. Pull out a length of plastic wrap for the brisket and drizzle some oil where you plan to place the brisket. Place the brisket on top and drizzle the top with oil. Wrap tightly and rest at room temperature for 2 hours. If you are making this ahead of time, you can refrigerate, then rest on the counter for 2 hours before braising.
- Add 2 tablespoons of oil to a large Dutch oven over medium-high heat. When the oil begins to swirl, add the brisket and sear on all sides until browned, 3 to 4 minutes per side. Remove to a plate.
- Add the onions, carrots and potatoes to the pot and cook for a few minutes to coat them in the fat and get a bit of color. Make the contents of the pot as level as possible, toss in the garlic, then place the seared brisket on top of the vegetables.
- Stir together the BBQ sauce and stock in a medium bowl. Add to the pot around the brisket, being careful to only fill halfway up the brisket, leaving a bit of the seared meat above the liquid line (you may not use all the liquid). Raise to a boil and lower to a low simmer. Cook, covered, for 2 to 3 hours without peeking, until the brisket is tender!
- Remove the brisket from the pot to a plate and cover gently with aluminum foil. Remove the vegetables from the pot with a slotted spoon and place in a food processor. Blitz until smooth, adding liquid from the pot if needed for texture. Use the remaining liquid as a sauce for the brisket, if desired. Transfer the mash to a bowl and fold in the parsley. Serve with the sliced brisket and additional sauce.
AUNT LINDA'S BRISKET

- Preheat oven to 350 degrees F.
- Mix the brown sugar, vinegar, soup mix, chili sauce and white wine in a saucepan and bring to a boil.
- Simmer for a couple of minutes.
- Place a large piece of foil in the bottom on a large casserole so that the brisket could be covered with some tenting by the foil.
- Put the brisket on top of the foil in the casserole pan.
- Pour the sauce over the meat and and seal the foil over the brisket close but with a little bit of a tent on top.
- Cook for 3-4 hours until tender.
- Slice meat thinly, against the grain.

AUNT LINDA'S BROCCOLI CHEESE CASSEROLE
My husband's aunt makes this for Thanksgiving and Christmas pot lucks. If she does not bring this to the function, she's in trouble-lol. It is very good and really cheesy. Easy to make, I am sure it will be one of your favorites as well.

Steps:
- Make rice as directed on box.
- Steam the cauliflower and broccoli.
- While the rice and veggies are cooking, go ahead and cube the cheese. Save a few cubes for the top of the casserole.
- When rice is done place in a large casserole dish, add veggies, cubed cheese, and soup. Mix together.
- Place saved cubed cheese on top of casserole and cook at 350 degrees for 45 minutes.

AUNT SADIE'S BRISKET

Steps:
- Remove any excess fat from brisket, but leave a little on top. Place one half of the onions on bottom of pan. Season the onions with a litle salt, pepper, garlic powder and lots of Hungarian paprika.
- Place brisket on top of onions.
- Place other half of onions and allspice on top of the brisket.
- Cover tight and roast in a 300 degree oven for 3 hours.
- Test your brisket and when it is fork tender, take it out. Let it cool and then slice it very thin. Strain juice and either thicken it with a little cornstarch or serve as is au jus, with onions (as I do).
- This is best made in advance. Note: I refrigerate the juices and get rid of the fat that rises to the top. Before serving I pour it over the sliced brisket and reheat in the oven until heated through.

Steps:
- In a large pot boil brisket until fork tender, approx 4 hours. (Do not discard liquids as they make an excellent beef broth for use in other recipes.)
- Remove meat from pot and cool to touch. Carefully scrape away any visible fat from the outside of the roast.
- Meanwhile, make brisket sauce by combining sauce ingredients in a saucepan. Heat and stir until combined and slightly thickened.
- Thinly slice beef (an electric knife works well) and place in a foil lined, shallow baking pan. Pour sauce over meat and bake 45 minutes at 350 degrees.
