CREAMY SPINACH AND MUSHROOM LASAGNA

- Preheat the oven to 350 degrees F. Butter a 9- by 13- by 1-inch glass or ceramic baking dish. Set aside.
- For the vegetables: In a large nonstick skillet, heat the oil over high heat. Add the mushrooms, onions, salt and pepper. Cook, stirring frequently, until the onions are soft and any liquid from the mushrooms has evaporated, about 20 minutes.
- For the sauce: In a heavy-bottomed 5-quart saucepan, bring the cream, milk and flour to a simmer over medium heat, whisking constantly for 3 minutes. Reduce the heat to low. Add the Pecorino and the mozzarella. Whisk until the cheeses have melted and the sauce is smooth. Remove the pan from the heat and stir in the spinach, basil, garlic, salt and pepper.
- Add the mushroom mixture to the sauce and stir to combine. Set aside to cool slightly.
- Cut the Fresh Pasta dough in quarters and press flat. Run each piece of pasta dough several times through a pasta-rolling machine adjusting the setting each time until the pasta is about 1/16-inch thick. Cut the pasta into six 12- by 4-inch rectangles (reserve any pasta trimmings for another use). The pasta dough can also be rolled out by hand. Cut the chilled dough into quarters and using a rolling pin, roll out the dough until 1/8 to 1/16-inch thick.
- Spread 1 cup of the sauce over the bottom of the prepared baking dish. Arrange 2 sheets of pasta on top in a single layer. Spread 2 cups of the sauce over the pasta sheets. Repeat the layers with the remaining pasta sheets and sauce, ending with the sauce. Sprinkle with mozzarella. Drizzle with olive oil and bake until the filling is bubbling and the top is golden, 30 to 35 minutes. Cool for 20 minutes. Cut into squares and serve.
- Place the cake flour, all-purpose flour, egg yolks and salt in a food processor. Pulse to combine. With the machine running, gradually add the oil then 1/3 to 1/2 cup water until the mixture forms a dough (the dough should stick together if pinched between your fingers). If necessary, add additional water, 1 teaspoon at a time if the dough is too dry.
- Place the dough on a lightly floured surface. Gather the dough into a ball and knead until the dough is smooth, 5 to 8 minutes. Cover with plastic wrap and refrigerate for 30 minutes.
ARTICHOKE SPINACH LASAGNA
This is a fabulous lasagna made with an artichoke and spinach mixture which has been cooked with vegetable broth, onions and garlic. The mixture is layered with lasagna noodles, pasta sauce, mozzarella cheese, and topped with crumbled feta.

- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13 inch baking dish with cooking spray.
- Bring a large pot of lightly salted water to a boil. Add noodles and cook for 8 to 10 minutes or until al dente; drain.
- Spray a large skillet with cooking spray and heat on medium-high. Saute onion and garlic for 3 minutes, or until onion is tender-crisp. Stir in broth and rosemary; bring to a boil. Stir in artichoke hearts and spinach; reduce heat, cover and simmer 5 minutes. Stir in pasta sauce.
- Spread 1/4 of the artichoke mixture in the bottom of the prepared baking dish; top with 3 cooked noodles. Sprinkle 3/4 cup mozzarella cheese over noodles. Repeat layers 2 more times, ending with artichoke mixture and mozzarella cheese. Sprinkle crumbled feta on top.
- Bake, covered, for 40 minutes. Uncover, and bake 15 minutes more, or until hot and bubbly. Let stand 10 minutes before cutting.

- Preheat oven to 400 degrees, with racks in middle and upper third. Divide mushrooms between two rimmed baking sheets. Toss each with 1 tablespoon oil and season with salt and pepper. Bake until tender, 20 minutes, stirring mushrooms and rotating sheets halfway through. Let sheets cool on wire racks.
- Meanwhile, in a large skillet, heat 1 tablespoon oil over medium-high. Add artichokes and cook, stirring occasionally, 4 minutes. Add lemon zest, chives, and thyme, and season with salt and pepper. Cook, stirring occasionally, until fragrant, 3 minutes. Transfer artichokes to a medium bowl.
- Spread 1 cup sauce in an 8-inch square baking dish. Top with 2 noodles. Layer with half the artichokes, then 1 cup sauce and 1/4 cup Parmesan. - In a skillet, melt butter over medium heat. Add onion and cook until softened. Add mushrooms and garlic and cook, stirring, just until mushrooms begin to release their liquid. Stir in artichokes and wine and bring to a boil. Cook, stirring, for 1 or 2 minutes, until liquid reduces slightly. Set aside.
- Cover bottom of slow cooker stoneware with 4 noodles, breaking to fit where necessary. Spread with half of the ricotta, half of the mushroom mixture, half of the spinach, one-third each of the mozzarella and Parmesan. Repeat. Arrange final layer of noodles over cheeses. Pour any liquid remaining from mushroom mixture over noodles (see Notes) and sprinkle with remaining Parmesan and mozzarella. Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours, until hot and bubbling.
- Unlike many recipes for lasagna, this one is not terribly saucy. As a result, the noodles on the top layer tend to dry out. Leave a small amount of the cooking liquid from the mushroom mixture behind in the pan, after adding to the slow cooker. Pour that over the top layer of noodles, particularly around the edges, where they are most likely to dry out.
- Use white or cremini mushrooms or a combination of the two in this recipe.
- Make ahead: This dish can be prepared the night before it is cooked. Refrigerate overnight in slow cooker stoneware and cook as directed.

Ingredients 1 tablespoon olive oil 1 small onion, chopped 1 cup sliced fresh mushrooms 1 T chopped garlic 1 T butter 1 can (14 ounces) water-packed artichoke hearts, drained and coarsely chopped 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry 1/4 teaspoon pepper, ½ t salt 1 jar (16 ounces) Lite Alfredo sauce 9 lasagna noodles 1 small carton of cottage cheese 2 eggs 1 cup parmesan cheese 1/8 teaspoon garlic powder 2 cups shredded part-skim mozzarella cheese Directions In a large saucepan, heat oil over medium-high heat. While this is cooking boil and cook the lasagna noodles according to package directions. In a separate bowl combine the spinach, artichokes, parmesan, salt and pepper, garlic powder, cottage cheese and eggs. Mix well with an electric hand mixer. Spread half of the sauce into a greased 13x9-in. baking dish. Layer with three noodles and then half of the spinach mixture. Top with 1/3 of the mozzarella. Repeat with a second layer of the same. Top with the final 3 noodles, add the rest of the mushroom sauce and top with remaining mozzarella cheese. Heat oven to 350 degrees. Bake, covered, 40 minutes. Bake, uncovered, 15 minutes longer until cheese is melted and it's hot and bubbly. Let stand 10 minutes before serving.

- Preheat oven to 375. Coat a large baking dish (I use an 8 X 11 glass Pyrex dish) with cooking spray of choice. Bring a large pot (make sure noodles will fit without being broken) of salted water to boil and cook lasagna noodles according to package direction. Drain and let cool. If noodles are too hot to handle when you’re ready to start building your lasagna, run them under cold water.
- Meanwhile, drop garlic cloves through food processor tube with machine running (this will help to mince them evenly). Stop the machine, scrape down the sides and add onion, spinach and artichoke hearts. Pulse in three second intervals until finely chopped, scraping down sides as needed. In a large bowl, beat egg. Add ricotta, parmesan or Romano cheese and seasoning. Mix to combine. Add the veggie mixture to ricotta mixture and stir them together, combining completely.
- Spread a few spoonfuls of sauce along the bottom of your baking dish. Arrange four noodles, overlapping as needed so that the bottom of the dish is fully covered. Top with a generous amount of sauce. Use a spatula to evenly spread about half of the ricotta-veggie mix over the noodles. Add four more noodles, cover generously with sauce and spread out the rest of the ricotta-veggie mix. Sprinkle with about half the mozzarella cheese. Top with the last four noodles and cover completely with sauce. Evenly sprinkle the remaining mozzarella cheese. Bake covered for 25 minutes. Uncover and bake for 10 more minutes. If you like browned cheese, broil on high for 4-5 minutes paying close attention so that you don’t burn all that hard work! Let cool slightly before serving. Leftovers stay well for a few days or can be frozen.
