ARTICHOKE FOCACCINI
Steps:
- Preheat oven to 350 degrees F. Lightly spray baking sheet with cooking spray and set aside.
- Unroll and separate biscuit dough. Pat each biscuit in to 1/4-inch thick rounds. Place on prepared baking sheet. Make "dimples" in each round with fingertips.
- In a small bowl, combine olive oil, garlic, and Italian seasoning. Using a pastry brush, brush tops with olive oil mixture. Place 2 artichoke quarters on each round and about 5 grape tomatoes halves and top with 2 tablespoons crumbled blue cheese
- Bake in oven for 13 to 15 minutes, or until golden brown.
- Serve warm.
ARTICHOKE AND BLACK BEAN NACHOS
Steps:
- Preheat the broiler.
- On a heatproof serving platter, layer the tortillas to cover the surface of the platter. Top with 1/3 of the black beans. Place 1/3 of the artichokes on top of the black beans. Sprinkle some of the cheese and tomatoes on top of the artichokes. Repeat the layers 2 more times. Place under the broiler until the cheese melts. Garnish with dollops of sour cream and the chopped scallions.
ARTICHOKE RATATOUILLE
Steps:
- In a high-sided skillet, heat the oil over medium heat. Add the eggplant, vegetable stir-fry blend, artichokes hearts, garlic, red pepper flakes and season with salt and pepper. Saute until vegetables are almost completely cooked through, about 5 minutes. Add the diced tomatoes, cover and simmer on low until the eggplant is soft and the ratatouille is thickened slightly, 15 to 20 minutes. Just before serving, stir in the basil. Taste and adjust seasoning, if necessary.

This is great for having company over as it is a great presentation, is tasty and is pretty easy to make. The lemon zest makes it as does the capers, spinach and bacon pieces. Oh so good. Steps:
- In a shallow dish, combine flour, salt, and pepper. Dip chicken in flour mixture; shake gently to remove any excess flour.
- In a large skillet, heat olive oil over medium heat.
- Add chicken, and cook for 3 to 8 minutes per side depending on pan, or until golden brown. Add chicken broth, artichokes, bacon, and capers; cover, and simmer for 10 to 12 minutes, or until chicken is cooked through.
- Uncover, and stir in lemon zest, lemon juice, and butter, scraping brown bits from bottom of pan with a wooden spoon.
- Arrange spinach on a platter.
- Spoon chicken and sauce over spinach.
- Serve immediately.
MARSALA ARTICHOKES
Steps:
- Combine all ingredients in a medium saucepan. Bring to boil over medium-high heat. Reduce heat and simmer for 6 to 7 minutes.
- To serve, use a slotted spoon to remove hearts from braising liquid.
ZUCCHINI ROUNDS SIDE DISH ( SANDRA LEE - SEMI-HOMEMADE )
This is a great little side dish Sandra Lee suggested serving with Spaghetti and Meatballs which we did but loved it so much I wanted to post it so it could be made with anything as a side dish. She concurs saying "it can accompany any entree." This is from her magazine's August/September 2009 issue. It is yummy and the kids even ate it happily. Great for garden leftover zucchini. CRISPY COATED ARTICHOKES
Steps:
- Drain the artichokes, pat dry, and cut them in half, lengthwise. In a small shallow bowl, beat the eggs. In another bowl, mix the flour, cornmeal, and Italian seasoning.
- In a small skillet, heat the oil on medium-high until hot. Dip the artichoke halves into the egg mixture, allowing excess to drain off, then into flour mixture, turning to coat. Drop a few at a time into the hot oil. Fry, turning once, until golden, about 6 minutes, total. Repeat with remaining artichokes. Serve immediately.
STUFFED BELL PEPPERS SOUTHWEST STYLE SANDRA LEE, SEMI-HOMEMADE
This recipe is for stuffed bell peppers southwest style. It is from Sandra Lee's Semi-Homemade magazine August/Sept. 2009. It is delicious and filling. The kids enjoyed it too. It is fast and to table in no time. If you want a bigger kick use hot sausage if not use mild. If you can't find McCormick Grill Mates mix, I found a generic in the packet section of the local supermarket. Beware you might have extra filling depending on your pepper size so buy another pepper or save the filling and serve as leftovers the next day. Good stuff. Enjoy! ChefDLH

- Preheat broiler. Line a baking sheet with aluminum foil.
- Place bell peppers, cut sides down, in a microwave-safe dish; add 1/2 cup water. Cover with plastic wrap, and microwave on High for 3 to 4 minutes, or until peppers are soft; drain, and set aside.
- In a large skillet, cook sausage over medium-high heat until browned and crumbly; drain. Add corn, black beans, tomatoes, rice, and green onions to skillet. Add 2 tablespoons marinade mix to sausage mixture; stir well to combine. (Reserve remaining mix for another use.)
- Spoon sausage mixture evenly into pepper halves. Place on prepared baking sheet. Sprinkle each evenly with shredded cheese. Broil 5 inches from heat for 2 to 3 minutes, or until cheese is melted.
- Serve immediately.

This recipe is very yummy and a great kid pleaser. Easy to get the food on the table fast. If you don't like coleslaw leave it off and they were just as delicious. If you have a favorite coleslaw make it from scratch and add it in instead of store prepared. This recipe is from Sandra Lee's Semi-Homemade magazine August/Sept 2009. - In large ziploc baggie, add marinade ingredients. Add steak and turn to coat. Close bag well, removing the air. Marinate for several hours or overnight, turning now and then.
- Put broth and butter into saucepan and bring to a boil over medium-high heat, stir in stuffing mix (*I only use Betty Crocker's Homestyle Beef Stuffing anymore), tomatoes and artichoke hearts. Cover saucepan and remove from heat. Let stand 5 minutes. Fluff stuffing lightly with a fork. Set stuffing aside to cool completely.
- Lay steak flat onto cutting board, leaving excess marinade behind. (Discard marinade left in baggie). Cover evenly with stuffing. Roll up steak lengthwise (grain running lengthwise as well) to create a pinwheel effect, enclosing stuffing completely. Skewer seam WELL with toothpicks. Place steak roll seam side-down, onto foil-lined and sprayed baking sheet. Sprinkle top with a little coarse ground black pepper if you'd like.
