- Mix 1/4 cup apricot preserves, 1 1/2 tablespoon mustard, and 1 teaspoon balsamic vinegar in a bowl to make glaze. Divide glaze between 2 separate bowls.
- Whisk 2 tablespoons balsamic vinegar, 2 teaspoon apricot preserves, 1 teaspoon mustard, salt, and pepper together in a bowl. Drizzle in 1/4 cup olive oil, whisking constantly, until dressing is emulsified.
- Preheat Panasonic Countertop Induction Oven to Medium-High on the "Grill" setting.
- Brush 1 teaspoon of olive oil over both sides of each piece of salmon. Season with salt and pepper.
- Place salmon flesh-side down in the center of the grill pan. Set timer for 3 1/2 minutes and press "Start." Flip salmon so skin side is down. Brush with glaze from one of the bowls. Set timer for 4 minutes and press "Start." Remove salmon to a plate and spoon glaze from the second bowl on top. Let salmon rest for 5 minutes.
- Place 1 1/2 cup arugula and 1/2 cup cherry tomatoes on each serving plate. Drizzle with dressing. Top with cooked salmon fillets.

- Bring quinoa and broth to a boil. Reduce heat, cover and simmer until liquid has evaporated, about 10-15 minutes. Fluff with a fork. *Note, this is less than the recommended amount of liquid.
- Prepare ingredients: Preheat broiler to high. Season salmon with 1/4 tsp. salt and 1/8 tsp. pepper. Stir together apricot preserves and dijon mustard and spread over salmon filets. Slice green onions. Mince garlic. Chop zucchini. Chop pepper.
- Heat large skillet over medium high heat. Add remaining 1 Tbsp. oil to pan, and when it's hot, add vegetables to pan, stirring occasionally for about 7-8 minutes.
- While the veggies are cooking, broil the salmon on the second or third rack for about 10-12 minutes, or until cooked through.
- When the quinoa is done cooking, add to veggie pan and toss together. Add soy sauce to pan and stir until the liquid has evaporated.

- Preheat oven to 425 degrees F. Line a large rimmed baking sheet with foil and coat with cooking spray.
- Combine mayonnaise and chili powder in a small bowl. Set aside.
- Toss sweet potatoes with 2 tsp. oil, 1/4 tsp. salt, and 1/8 tsp. pepper in a medium bowl.
- Spread on the prepared baking sheet. Roast for 15 minutes.
- Meanwhile, toss broccoli with the remaining 2 tsp. oil, 1/4 tsp. salt, and 1/8 tsp. pepper in the same bowl.
- Remove the baking sheet from oven. Stir the sweet potatoes and move them to the sides of the pan. Arrange salmon in the center of the pan and spread the broccoli on either side, among the sweet potatoes.

- 1. 1 Ninja Cooking System or you can grill or cook in the oven too.
- 2. In a small bowl combine apricot preserves and mustard and whisk together. Pour your 2 cups of water into the Ninja and then place rack down inside Ninja. Season your fish with generously with salt and pepper and then place fillets on rack and spread the apricot & mustard mixture on top of the fish.
- 3. Set OVEN to 400 degrees F for 20 - 25 minutes and cover. Depending on thickness of fillet it may be less time if they are thinner.

- Preheat Oven to 450˚F. Line a large baking sheet with parchment paper or silpat.
- Place broccoli florets on lined baking sheet and toss with 2 Tbsp olive oil, and season with 1/2 tsp salt and 1/4 tsp pepper, or to taste. Roast broccoli by itself at 450˚F for 5 minutes to soften, since broccoli needs a little more time to cook than salmon then remove from oven.

- Preheat oven to 400.
- Mix together the mustard, butter and honey - refrigerate for 5- 10 minutes (you want it on the thicker side).
- In another bowl mix together panko, pecans and parsley.
- Line a pan with foil and spray with Pam
- Place skin side down
- Season with salt/pepper
- Brush on mustard mixture to coat (do not over coat) - just cover with a thin coating
- Coat each fillet with pecan panko mixture
- Bake for 10 minutes per inch of thickness, or until the salmon flakes when tested with a fork.

- Preheat the oven to fan 180C/conventional 200C/gas 6. Boil the potatoes for 10 minutes until tender. Meanwhile, whisk the mustard, orange juice and honey together in a bowl to make a marinade. Turn the salmon fillets in the marinade until evenly coated, then set aside. Deseed the peppers and cut into thick strips.
