EASY APRICOT-GLAZED SALMON
This super simple apricot-glazed salmon recipe uses only 3 ingredients! The apricot flavor is sweet with a little kick from the spicy mustard. It's easy enough for a quick summer supper!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
- Mix apricot preserves with mustard.
- Place salmon fillets on the prepared baking sheet. Brush 1/2 of the apricot mixture over top.
- Bake on the top rack of the preheated oven for 16 minutes. Pull from the oven and brush with remaining apricot mixture. Cook until salmon flakes easily with a fork, about 2 more minutes.

This is a wonderfully simple and tasty recipe from the Oct/Nov 2004 issue of Cooking Pleasures magazine. It's so good I don't bother making salmon any other way.

Steps:
- Heat oven to 425 degrees F. Line shallow baking pan with foil; spray with non-stick cooking spray.
- In small saucepan, add all ingredients except salmon. Heat 3-4 min or until slightly thickened, stirring occasionally. Remove from heat; cool slightly.
- Place salmon on baking sheet; top with glaze. Bake 10-12 min or until salmon begins to flake.
BALSAMIC-GLAZED APRICOTS WITH RICOTTA CLOUDS
Steps:
- In a medium skillet over medium heat, melt the butter and cook until the foam subsides. Place the apricots cut side down in the skillet and cook, stirring occasionally, until apricots are slightly tender and warmed through, 5 to 6 minutes. Meanwhile, in a small bowl, whisk together balsamic vinegar and the honey. When apricots are ready, and add honey-balsamic mixture to the skillet. Increase the heat to medium-high and cook, stirring frequently, until the apricots have cooked through and the glaze is bubbling, uniformly coating the apricots. To serve, place a scoop of ricotta on each serving plate, top with 2 apricot halves and drizzle with the honey-balsamic glaze from the skillet.
BALSAMIC-GLAZED SALMON

- For the glaze: In a small saucepan, bring the vinegar, maple syrup, mustard and garlic to a boil over medium heat. Reduce the heat to a simmer and cook until thick, about 12 minutes. Set aside to cool for 5 minutes.
- For the salmon: Position a rack in the center of the oven and preheat the oven to 400 degrees F. Line a small baking sheet with parchment paper. Arrange the salmon on the baking sheet. Drizzle both sides of the salmon with the olive oil and season with 1 teaspoon salt and 1/2 teaspoon pepper. Roast until the salmon is cooked through and flakes easily with a fork, 8 to 10 minutes. Set aside to cool for 10 minutes.
- For the vegetables: In a medium skillet, heat the olive oil over medium-high heat. Add the shallots, 1 teaspoon salt and 1/4 teaspoon pepper, and cook until the shallots are softened, about 3 minutes. Add the garlic and cook until aromatic, about 30 seconds. Add the edamame and snap peas and cook until warmed through, about 3 minutes. Season with salt and pepper.
- Divide the vegetable mixture among 4 serving plates. Top with a piece of salmon and drizzle with the glaze.
MAPLE BALSAMIC GLAZED SALMON

- In a small saucepan, combine maple syrup, vinegar, lemon juice, mustard, shallot, salt and pepper.
- Heat maple syrup mixture to boiling; reduce heat. Simmer uncovered, about 5 minutes, or until syrupy. Remove from heat ; stir in rosemary.
- Preheat broiler. Place fish on the greased unheated rack of a broiler pan and brush with half of the glaze. Broil 6-7 inches from heat for 5 minutes. Turn fish over; brush with remaining glaze. Broil for 3 to 5 minutes more, or until fish begins to flake when tested with fork.
ZESTY APRICOT GLAZED SALMON
This sounds great!! It is made with jalapenos, mustard, and apricot preserves. It was a Guy Fieri Foodnetwork recipe that I simplified. The glaze should be cooked then cooled, so add about 30 minutes for the cooling step.

- In a small saute pan over medium heat, heat oil.
- When hot, add jalapenos and saute until caramelized.
- Add garlic, and after a minute, deglaze with white wine. Then add the mustard and apricot preserves and bring to a simmer. Simmer over low heat for 20 minutes and let completely cool.
- Preheat oven to 400 degrees F.
- Place salmon fillets on parchment paper or non-stick foil on a baking sheet and lightly season the fillets with salt and pepper, and place a rosemary sprig on each fillet.
- Spoon cooled apricot mixture over fillets.
- Bake salmon approximately 13 minutes.
- Garnish with lemon zest.

APRICOT-BALSAMIC GLAZED AND GRILLED CHICKEN
From Rachael Ray's Sept. '08 "Everyday" magazine, so you know it's savory and simple--all at once. Her recipe called for apricot preserves, but I'm using up MIL's Peach Jam, and we loved it just fine. Also, I used only 2 chicken breast halves (paillard-cut) for four of us and we had leftovers (our chickens are very large!), so adjust the recipe up or down accordingly.

- Preheat grill to medium-high, brush off the grates to remove crusty, gritty stuff.
- While that's heating up, bring preserves and vinegar to a boil in a medium saucepan; lower the heat and simmer until thick and syrupy (7-8 minutes or longer).
- While THAT's cooking, drizzle oil over the chicken (on a plate or in a bowl); season with S & P; grill until cooked through (about 6 minutes per side).
- Remove chicken from grill to a serving platter, drizzle jam-vinegar mixture over the meat and serve!
- We had this with potato wedges baked in foil on the grill.
- PLANNED OVERS --
- Use any leftovers to make sandwiches for lunch the next day, or cut into bite-size pieces and add to a "grilled chicken" salad. Delicimosio!

- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil, and spray with non-stick cooking spray.
- Coat a small saucepan with non-stick cooking spray. Over medium heat, cook and stir garlic until soft, about 3 minutes. Mix in white wine, honey, balsamic vinegar, mustard, and salt and pepper. Simmer, uncovered, for about 3 minutes, or until slightly thickened.
- Arrange salmon fillets on foil-lined baking sheet. Brush fillets with balsamic glaze, and sprinkle with oregano.
