2-1/2 pounds beef stew meat, cut into 1-inch pieces
2 to 3 tablespoons olive oil
1 large onion, chopped (about 2 cups)
3 garlic cloves, minced
1 can (15 ounces) tomato sauce
1 can (14-1/2 ounces) beef broth
1 cup pitted dried plums (prunes), coarsely chopped
1 tablespoon honey
2 medium Fuji or Gala apples, peeled and cut into 1-1/2-inch pieces
Hot cooked rice or couscous, optional

Steps:

  • Mix salt, cinnamon, pepper and allspice; sprinkle over beef and toss to coat. In a Dutch oven, heat 2 tablespoons oil over medium heat. , Brown beef in batches, adding more oil as necessary. Remove beef with a slotted spoon., Add onion to same pan; cook and stir until tender, 6-8 minutes. Add garlic; cook 1 minute longer. Stir in tomato sauce, broth, dried plums and honey. Return beef to pan; bring to a boil. Reduce heat; simmer, covered, 1-1/2 hours. , Add apples; cook, covered, until beef and apples are tender, 30-45 minutes longer. Skim fat. If desired, serve stew with rice or couscous. Freeze option: Freeze cooled stew in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth if necessary.

Steps:

  • Brown your ground chicken by heating the oil in a large skillet and cook until the meat is no longer pink.
  • Next, add your garlic, sliced mushrooms, diced onion and chopped fresh basil and sauté until the vegetables start to soften.
  • Add the fire roasted tomatoes (including the juice), chicken broth and your favorite pasta (approximately half a box if you're eyeballing it).
  • Finally, Cover the skillet with the lid and reduce the heat to medium. Cook 15-20 minutes until the pasta absorbs the liquid and is al dente. (Cooking times may vary depending on the size pasta you use. With Rigatoni, it took 20 minutes, whereas if you use macaroni, it may only take 10-12 minutes.)Sprinkle the grated cheese on top and serve.

Steps:

  • Pat the pork tenderloin dry and generously season with salt and pepper on all sides.
  • Heat 2 tablespoons of canola oil in a large cast iron skillet over medium-high heat, until the oil is shimmering and just starting to smoke.
  • Place pork in the hot skillet and sear until well browned, about 1½-2 minutes. Flip and repeat searing on all sides.
  • Remove the pork from the skillet and set aside.
  • Preheat the oven to 375˚F (190˚C).
  • Heat the remaining tablespoon of oil in the skillet.
  • Add the onion to hot skillet and toss to coat in the oil. Add the garlic and apples and cook until the apples and onion begin to soften.
  • Pour the cider over apples and onion and bring to a simmer.
  • Return the pork to the skillet, on top of the apple and onion mixture. Spoon the cooking liquid over the pork and transfer the entire skillet to the oven.
  • Bake for 15-20 minutes, until the internal temperature of the pork reaches 145˚F (62˚C.)
  • Remove the skillet from the oven and let the pork rest for 10 minutes before slicing. Serve the sliced pork over a bed of the apples and onions.

1 tablespoon olive oil
1 pound ground beef
1/2 medium sweet onion, diced
2 cloves garlic, minced
1 1/2 teaspoons Italian seasoning
2 tablespoons all-purpose flour
2 cups beef stock
1 (15-ounce) can tomato sauce
3/4 cup heavy cream
Kosher salt and freshly ground black pepper, to taste
6 ounces shredded extra-sharp cheddar cheese, about 1 1/2 cups

Steps:

  • In a large pot of boiling salted water, cook pasta according to package instructions; drain well. Heat olive oil in a large skillet over medium high heat. Add ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat. Set aside. Add onion to the skillet, and cook, stirring frequently, until translucent, about 2-3 minutes. Stir in garlic and Italian seasoning until fragrant, about 1 minute. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in beef stock and tomato sauce. 1 onion (chopped)
1/2 cup chopped parsley (plus more for garnish)

Steps:

  • Cook pasta according to al dente package directions less 1 minute. Reserve 1/2 cup pasta water. Drain pasta without rinsing.
  • Meanwhile in a large skillet over high heat add 1 tablespoon olive oil and brown beef while breaking up with a wooden spoon, about 2 minutes. Reduce to medium heat. Season with 1 teaspoon salt and 1/2 teaspoon black pepper. Stir in garlic, onions, chili flakes, Worcestershire sauce, tomato paste, parsley, and 1/2 cup pasta (or plain) water. 1 lb. Ground Beef (85% lean)
1 Tablespoon Butter
2 cloves Garlic (minced)
1 oz. packet Taco Seasoning
1 Tablespoon Worcestershire sauce
2 Tablespoons Tomato paste
1 cup Beef broth
1 cup Chicken broth
1 cup Whole milk (at room temp)
1 (10 oz.) can Rotel Tomatoes with green chilies (undrained)
½ lb. Medium pasta shells (see notes)

Steps:

  • Shred the cheddar and Monterey Jack cheese from a block and set aside. It should be near room temperature when added to the pasta sauce.
  • Cook and crumble the ground beef over medium-high heat in a high-walled pot or dutch oven. Drain grease.
  • Melt the butter in the same pot and add and garlic. Cook for 1 minute.
  • Add all remaining ingredients except the cheese and pasta. Stir to combine.
  • Bring to a gentle boil. Add the pasta and submerge it in the liquid. Cover and cook according to package instructions. Slide a silicone spatula along the bottom of the pot halfway through to lift any ingredients that may be settling to the bottom.
  • Remove cover and ensure the pasta is sufficiently cooked. Taste-test a noodle for doneness before proceeding If needed, cover and cook longer, until your desired doneness is obtained.
  • Turn heat to low. Gradually stir in cheese until melted.
  • There will be plenty of sauce but it will thicken upon standing and the pasta will continue to absorb it.
  • Serve once desired consistency is obtained.

She didn't have exact measurements for most items though so I've worked it into how we like it. It's a lovely dish for cold nights with lovely spicy sweet flavors to compliment the savory meat.

3 apples, chopped
1 onion, chopped
3 garlic cloves, minced
2 (28 ounce) cans diced tomatoes, undrained
1/2 teaspoon cumin
1 teaspoon cinnamon
2 teaspoons ground cloves
1/2 teaspoon salt
3 dashes pepper
1 pinch sugar
12 ounces whole wheat pasta (bowtie or spiral works well but use what you love)

Steps:

  • Cook pasta according to package directions.
  • While pasta cooks, crumble beef into frying pan and brown with onions and garlic.
  • When pasta is done, rinse with cold water to stop the cooking and set aside.
  • Drain fat from the pan of ground beef.
  • Place contents of cans of tomatoes into pan, along with apples and spices.
  • Allow to simmer for about 20 minutes, or until everything becomes saucy and the apple pieces become tender.
  • Serve sauce over pasta.
  • And leftovers from this are heavenly.
