PUMPKIN CHOCOLATE CHIP MUFFINS ( MIX IN A JAR)

Steps:

• To make the Pumpkin Chocolate Chip Muffin Mix: Layer first 7 ingredients attractively in any order in the 1-quart food storage jar with tight-fitting lid. Pack ingredients down slightly before adding another layer. Cover top of jar with fabric; attach gift tag with baking directions below. Yield: 1 batch (about 2 cups total). , To prepare muffins: Preheat oven to 375°. Combine egg, applesauce, butter and vanilla. Stir in muffin mix just until moistened. Fill greased muffin cups three-fourths full. Sprinkle with sugar. Bake until a toothpick comes out clean, 15-20 minutes. Cool 5 minutes before removing from pan to a wire rack.

APPLE-WALNUT MUFFIN MIX

Steps:

• In a large bowl, combine the first 9 ingredients. Store in an airtight container for up to 2 months. ., To prepare muffins: Place 1/2 cup muffin mix in a small bowl. Whisk the milk, yogurt and oil. Stir into dry ingredients just until moistened. Coat muffin cups with cooking spray or use foil liners; fill three-fourths full with batter. Sprinkle with coarse sugar. Bake at 400° for 10-12 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

MARSHMALLOW MUFFINS (GIFT MIX IN A JAR)

Steps:

• Creating the Gift in a Jar:
• Wash and thoroughly dry a 1-quart wide-mouth canning jar.
• Layer the ingredients in the jar as listed above starting with the flour, baking powder, cocoa powder, sugar, marshmallows and then chocolate chips - make sure to press firmly with a flat bottomed object after each addition; make the layers as level as possible.
• Secure the lid and decorate as desired; attach the instructions for making these cookies found below.
• MARSHMALLOW MUFFINS GIFT TAG:
• Additional ingredients to be added by the recipient: 1 1/4 cup milk, 5 tbsp melted butter and 1 egg.

Fill 48 greased or paper-lined mini-muffin cups three-fourths full. Bake at 400° until a toothpick comes out clean, 9-10 minutes. Serve warm.

BLUEBERRY BANANA MUFFINS (GIFT MIX IN A JAR)
