THE ORIGINAL PANCAKE HOUSE APPLE PANCAKE
Found this online while searching for TOPH recipes. Fabulous recipe from The Original Pancake House! The Apple Pancake contains eggs, flour, milk, sugar, cinnamon, vanilla, butter and lots of apples. It takes about 30 minutes to bake in an iron skillet and is served all puffed up and steaming hot. The Apple Pancake really isn't much like a pancake at all. It's more a like a soufflé or really, really moist bread pudding. The only way to truly appreciate it is to try one yourself.

Steps:
- In a mixing bowl, add flour, milk, vanilla and eggs. Mix well.
- In another bowl, mix the brown sugar, granulated sugar, and remaining cinnamon.
- Add butter to a 10 inch Pyrex pie deep dish and put in the oven (deep dish Pyrex is great) At 400 degrees.
- When the butter is completely melted remove from oven.
- Pour the batter into the Pyrex dish and put back in the oven for 20-25 minutes. The edges will begin to puff.
- Remove the half-way cooked batter from the oven and now add the apple mixture to it.
- Just simply place the apples all over the top of the batter.
- Next, cover the entire surface with the brown sugar/sugar/cinnamon blend and put it back in the oven for another 20-25 minutes.

APPLE FRITTERS
Steps:
- In a mixing bowl, combine the flour, sugar, baking powder, cinnamon, and salt.
- In a separate bowl, beat the eggs with a fork, then add milk, melted butter, and vanilla.
- Gently fold dry and wet ingredients together until just combined (do not over mix.) Fold in the apples. Add enough apples to make a very chunky batter. You want the apples to shine though!
- Heat a couple of inches of canola oil in a dutch oven over medium heat. When it gets hot (about 350 degrees), drop a little drop of batter into the oil. If it sizzles immediately and rises to the top, the oil is ready; if it burns quickly, turn down the heat.
- Drop 1 tablespoon of batter into the hot oil, six or eight at a time. Sometimes they'll flip over by themselves; sometimes you have to flip them. Just watch them and make sure they don't get too brown, but cook them long enough to make sure the batter's cooked through, about 2 to 2 1/2 minutes total. Repeat with the remaining batter. Remove fritters and drain on a paper towel.
- For the glaze (if using): In a medium bowl, whisk together the powdered sugar, salt, vanilla extract and whole milk.
- Dust the fritters very generously with powdered sugar, or dip fritters in the light doughnut glaze. Serve warm!

- Peel and core apple; cut into 1/8-inch thick slices. Set aside.
- In a 10-inch skillet with all metal handle (or handle covered with heavy duty foil), over medium low heat, melt butter (do not use margarine because is separates from sugar during cooking). Stir in cinnamon and 1/4 cup sugar; remove skillet from heat.
- In butter mixture in skillet, arrange apple slices, overlapping them slightly. Repeat with smaller circle of apple slices in center.
- Return skillet to low heat; cook 10 minutes or until apples are tender crisp.
- Meanwhile, preheat oven to 400°F In medium bowl, with fork beat flour, milk, baking powder, salt, and egg yolks until blended; set aside.
- In small bowl, with mixer at high speed, beat egg whites and remaining 1/3 cup sugar until soft peaks form. With rubber spatula, gently fold egg-white mixture into egg yolk mixture.
- Cover apple slices in skillet with egg mixture; with rubber spatula, spread batter evenly.
- Bake pancake 10 minutes or until golden brown. Remove skillet from oven. Carefully invert dessert onto large platter to serve. 8 servings.

- melt the butter in a 9-inch square baking dish in the oven.

- In medium bowl, mix brown sugar, flour, oats, cinnamon and nutmeg. Cut in butter using pastry blender or fork until mixture is crumbly. Set aside.
- In large bowl, stir all pancake ingredients until well blended. Heat nonstick griddle to 350°F. or 12-inch skillet over medium-high heat. (To test griddle, sprinkle with a few drops of water. - Preheat oven to 400 degrees F (200 degrees C). Line a rimmed baking sheet with parchment paper.
- Combine 3/4 cup plus 2 tablespoons sugar, 1/4 cup butter, and 2 teaspoons vanilla sugar in a large bowl; beat with an electric mixer until smooth and creamy. Add eggs one at a time, beating well after each addition. Beat in lemon zest with the last egg.
