Steps:
- Preheat oven to 375F degrees.
- Peel and core apples.
- Sift together flour, baking powder, and salt.
- Cut in shortening until crumbs are size of small peas.
- Sprinkle milk over mixture, and press crumbs together lightly, working dough only enough to hold it together.
- Roll dough as for pastry, and cut into 6 squares.
- Place an apple on each square and fold pastry to surround apple.
- Place in a casserole dish.
- Combine brown sugar, water, cinnamon, and nutmeg in a saucepan.
- Cook for 5 minutes then remove from heat.
- add butter and stir.
- Pour sauce over dumplings.
- Bake for 35 to 40 minutes, brush pastry with sauce twice during baking.

- Butter a 7x11 inch baking pan. Separate biscuit dough into 8 pieces. Flatten each piece of dough into a circle. Wrap one biscuit around each apple half and place, seam side down, in pan.

- Heat the oven to 425°F. In a large bowl, mix the flour and salt. Cut in the butter, using a pastry blender or fork, until particles are the size of small peas. Sprinkle with the cold water, 1 tablespoon at a time, mixing well with fork until all flour is moistened. Gather the dough together, and press it into a 6x4-inch rectangle.
- Lightly sprinkle flour over a cutting board or countertop. Cut off 1/3 of the dough with a knife; set aside. On the floured surface, place 2/3 of the dough. Flatten dough evenly, using hands or a rolling pin, into a 14-inch square; cut into 4 squares. Flatten the remaining 1/3 of the dough into a 14x7-inch rectangle; cut into 2 squares. You will have 6 squares of dough.
- Remove the stem end from each apple. Place the apple on a cutting board. Using a paring knife, cut around the core by pushing the knife straight down to the bottom of the apple and pull up. Move the knife and make the next cut. Repeat until you have cut around the apple core. Push the core from the apple. (Or remove the cores with an apple corer.) Peel the apples with a paring knife.
- Place 1 apple on the center of each square of dough. In a small bowl, mix the raisins and nuts. Fill the center of each apple with raisin mixture. Moisten the corners of each square with small amount of water; bring 2 opposite corners of dough up over apple and press corners together. Fold in sides of remaining corners; bring corners up over apple and press together. Place dumplings in a 13x9-inch (3-quart) glass baking dish.
- In a 2-quart saucepan, heat the brown sugar and 1 1/3 cups water to boiling over high heat, stirring frequently. Carefully pour the sugar syrup around the dumplings.
- Bake about 40 minutes, spooning syrup over apples 2 or 3 times, until crust is browned and apples are tender when pierced with a fork.
- Serve warm or cooled with syrup from pan.

- Preheat the oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Set apples aside in a cold water bath while you prepare the dough.
- Combine flour, baking powder, and salt in a medium mixing bowl. Add shortening and cut together with a pastry blender or a fork until crumbly. Add milk and stir until dough comes together.
- Combine 1 cup brown sugar and cinnamon in another bowl. Separate dough into six equal portions and roll out to about 1/4-inch thickness. Place an apple in the center of each dough portion and fill the core with the cinnamon-sugar mixture. Wrap each apple in dough and place into the prepared pan.

- Preheat oven to 350 degrees. Peel and core apples and cut into 8 slices each. Roll each apple slice in a crescent roll. Place in a 9 x 13 pan lined with cooking spray.

- Heat oven to 180C/160C fan/gas 4. Melt the butter, sugar and golden syrup in a pan with 100ml water. Bring to a simmer, add the apples and cook for 10-15 mins until they're starting to soften - it will be quite saucy. Add a generous pinch of salt, taste and check the balance, adding more if you like. If your pan isn't ovenproof, pour into a baking dish about 20 x 30cm, or two smaller ones.
- Tip the flour into a bowl. Mix with the baking powder, sugar, cinnamon and a pinch of salt. Rub the butter into the mixture with your fingertips until it resembles damp sand. Add the milk, stir with a cutlery knife until it starts to clump together, then use your hands to bring the dough together, picking up any flaky bits. Don't overwork it or your dumplings will be heavy. Divide into 12 golf ball-sized pieces and roll into dumplings. Arrange over the apples, leaving little gaps here and there. Sprinkle with a little extra sugar (brown or caster) and bake for 25 mins until the dumplings are puffed up and golden. Let rest for a few mins and serve with plenty of cold cream.

- PATE SUCREE: Pulse flour, sugar and salt in a food processor to combine. Add butter, and process until mixture resembles coarse meal, about 10 seconds.
- Lightly beat egg yolks with water in a small bowl. With machine running, add yolk mixture to the flour mixture, and process until dough just holds together (no longer than 20 second). Divide dough into 2 disks, and wrap in plastic, and refrigerate for 2 hours (or up to 2 days).
- Divide both disks of pâte into 3 portions. On a lightly floured work surface, roll each disk into a 1/8-inch-thick round. Combine sugar and cinnamon. Sprinkle 1 teaspoons of the mixture over each of dough rounds.
- Combine 2 tablespoons cinnamon-sugar mixture, the jam, walnuts, brown sugar and lemon juice in a small bowl.
- Peel and core apples, creating a cavity about 1-inch wide. Place each apple in the center of a dough round, spoon 1 1/2 tablespoons jam mixture into each apple. Starting on one side, press dough against apple. Gather the dough at the top and trim any excess, leaving just enough to pinch closed. Place apples on a parchment lined baking sheet.
- Refrigerate until firm, 45-60 minutes.
- Preheat oven to 350°F.

NO-KNEAD APPLE DUMPLINGS
A co-worker brought this pastry recipe to work one morning during the holidays. It just melts in your mouth and the flavors are so wonderful. If she hadn't given me a copy of the recipe, I never would have guessed you use Mountain Dew. This will quickly become one of your favorites! February 2004, I just wanted to update this recipe. I've been using Splenda and Diet Sierra Mist in place of sugar and Mountain Dew. It still tastes the same.

- Peel and slice apples into 16 slices.
- Roll 1 apple slice into each crescent roll and place into 13x9-inch baking dish.
- Melt butter, sugar and vanilla in a sauce pan (do not caramelize)!
- Just enough heat to melt the sugar.

- Preheat the oven to 375°F. Grease a 13x9-inch baking dish. Set aside.
- Peel and core each apple. To prevent browning while you roll out the pie dough, you can place the prepared apples in a bowl of cold water with a squeeze of lemon juice.
- If using homemade pie dough, roll the dough into a large rectangle, about 21x14 inches. Cut the dough into 6 equal pieces, about 7x7 inches each.
- If using store-bought pie dough, unroll the dough and divide it into 6 equal pieces.
- In a small bowl, stir together the granulated sugar and apple pie spice.
- Place a cored apple into the center of each dough piece. In the center of each apple, place one of the butter pieces and a scant tablespoon of the spiced sugar mixture. Bring the corners of the dough up over the apple and use your fingers to pinch the edges together to seal the dough around the apple. Place in the greased baking dish. Repeat for all of the remaining apples and dough pieces.
- Place the sauce ingredients in a saucepan and bring to a boil over medium heat, whisking frequently. Once the sauce comes to a rolling boil and the sugar is dissolved, remove from the heat and carefully pour it evenly over the apples. Sprinkle any remaining spiced sugar on top of the apples.
- Bake for 50-55 minutes, or until golden and a paring knife can be easily inserted into the apples. Let cool slightly. Serve warm with some of the sauce.

- Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch pan.
- On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. - Unroll the crescent roll dough and separate the triangles. Wrap each apple slice in one of the dough triangles and set in the greased baking dish.

APPLE DUMPLINGS
Apple dumplings are some of the best fall foods around! You can't go wrong with sweet cinnamon spiced apples covered in flaky dough and baked to perfection.

- To get started, you can preheat your oven to 375°.
- Grease a 13x9 inch glass baking dish with a non-stick cooking spray or butter.
- Next, you can prepare your apples by peeling and coring them.
- In a mixing bowl, combine brown sugar, spices, lemon zest, and butter.
- To each apple, add the sugar mixture to the cavity and press some around the outside of the apple. Set the apples aside.
- Remove the pie crusts from the packaging and roll out each on a lightly floured surface.
- Measure and cut a 7-inch square from each crust. It doesn't have to be perfect, just close. Do this with each pie crust. Re-roll your leftover dough and repeat until you have your seven squares.
- Next, place a filled apple in the center of one of the squares. Lightly brush the edges of the square with the egg white and fold the sides up over the apples, pleating and sealing the dough.
- Repeat this process with the remaining apples and dough squares.
- Place the apple dumplings in the prepared baking dish, making sure that they don't touch each other.
- Bake on the center rack of your oven for about 40 minutes or until the crust is golden brown.
- When the apples are done cooking, remove them from the oven and let them cool while you make your lemon sauce.
- To make the sauce, combine the water, cornstarch, and sugar in a small saucepan. Stir the mixture and continue to cook over medium heat until it comes to a boil.
- Let the sauce continue to bowl as it thickens, making sure to keep stirring.
- Once the sauce is thickened, remove it from heat and add the butter, lemon juice, and lemon zest. Stir to combine.
- Serve the dumplings warm with the sauce drizzled right over the top.

MAMA ROSE'S APPLE DUMPLINGS
Flaky biscuit dough is wrapped around crisp apples and topped with a rich butter sauce to create delicious cinnamon-spiced apple dumplings. My grandmother learned this recipe from her grandmother when canned biscuit dough was first invented. And our family has never stopped making it!

- Preheat the oven to 350 degrees F (175 degrees C). Spray a square baking pan with nonstick spray.
- Pour melted butter into a bowl; add sugar, flour, and cinnamon for dumplings and whisk until fully combined with the butter. Toss apples in mixture to coat; add 2 tablespoons warm water and mix to combine.
- Gently stretch out the biscuits one at a time until they're large enough to fit 1 tablespoon apple mixture. Be careful not to stretch them too thin, you don't want the dough to break.
- Add 1 heaping tablespoon apple mixture to the center of each stretched-out biscuit. Gently tuck the dough around the mixture to seal each dumpling into a ball shape.
- Line up the dumplings with the seal facing down. Use a sharp knife to slice a tiny slit into the top of each dumpling to allow them to vent while cooking.
- Bake in the preheated oven until nearly golden brown, 15 to 25 minutes.
- While dumplings are baking, melt butter for sauce in a medium saucepan over medium-low. Slowly sprinkle flour into the butter, whisking the entire time. Add water and stir to combine. Remove from heat. Whisk in sugar and vanilla extract.
- Remove dumplings from the oven and pour sauce on top. Continue to bake until the edges of the corner dumplings start to brown and pull away from the sides of the pan, 5 to 6 minutes more.

APPLE DUMPLINGS
Steps:
- For the pastry dough: Mix together the flour and salt in a large bowl. Add the lard and butter and mix with your hands until crumbly. Slowly add the water and mix until the dough comes together, then coat with flour to prevent sticking. Refrigerate the dough for a minimum of 2 hours and preferably overnight.
- Preheat the oven to 375 degrees F. Roll out the dough into a 1/8-inch-thick square on a lightly floured surface, then cut the into six 7-by-7-inch squares.
- For the apple filling: Peel and core the apples. Place an apple in the center of each dough square. Put 1 piece of butter into the center of each apple. Push some brown sugar down on top of the butter until packed tight. Put a second piece of butter on top of the sugar. Sprinkle cinnamon liberally across the dough and the filled apples. Fold opposite corners of the dough up around each apple, and then turn over and mold the rest of the dough over the apples, being careful not to leave any parts of the apples exposed. Tear off any excess dough on the bottom of each apple.
- Place the apples in a 9-by-13-inch baking dish.
- For the dumpling sauce: Combine the water, granulated sugar, butter and vanilla in a small saucepan and bring to a boil over high heat.
- Ladle 1/2 cup of the dumpling sauce over each dumpling and pour the excess sauce into the baking dish. Bake until the crust is golden brown and the fruit is tender, about 35 minutes. Serve warm.
