Steps:
- Heat a griddle or pan to medium heat. Mix cream cheese, sugar, vanilla, and cinnamon with a hand mixer until smooth and creamy. Spread over 1/2 of the tortilla, and fold the other 1/2 of the tortilla over. Cook the quesadilla in the pan until golden on both sides. Brush both sides of hot quesadilla with butter and sprinkle with cinnamon & sugar mixture.

Steps:
- Crust: Beat and combine the sugar, butter and shortening.
- Add the vanilla, flour and salt till crumbly.
- Pat into 10" springform pan and set aside.
- Filling: Beat together the cream cheese sugar and vanilla till fluffy.
- Add the eggs.
- Pour into crust.
- Topping: Place apples in pan, cover with foil and bake for 15 minutes at 400 degrees.
- Allow to cool then pour onto cream cheese filling, spreading evenly.
- Combine the sugar& cinnamon and sprinkle on top of apples.
- Top with the almonds.
- Bake at 400 degrees for 40 minutes or till golden brown.
- Cover and chill 4-24 hours.

One of my favorite quick, breakfast treats. You can make it gluten-free by using corn tortillas! Top this delicious quesadilla with honey, maple syrup, powdered sugar, or whipped topping. Serve as either breakfast or dessert!

- Heat a large skillet over medium-low heat. Cook apple, corn syrup, honey, maple syrup, ground cinnamon, and brown sugar in hot skillet, stirring every few minutes, until apples are slightly softened and caramelized, 8 to 10 minutes. Transfer apple mixture to a bowl.
- Place 1 tortilla in the same skillet over medium-low heat; spread apple mixture on top of tortilla. Top with remaining tortilla. Cook until the bottom tortilla is golden brown, 1 to 3 minutes. Carefully flip the quesadilla and cook until the other tortilla is golden brown, 1 to 3 minutes more.

Steps:
- Using a fork in a small bowl cream the cream cheese, sugar, vanilla and cinnamon together.
- Either spread the cream cheese mixture on half of each tortilla or on all of 2 tortillas.
- Place a layer of apples and either fold over each tortilla or simply place a 2nd tortilla on top of the whole ones.
- Heat a fry pan or griddle. Melt just a little butter. Fry both sides of the tortillas until golden brown.
- Place on a plate and sprinkle with cinnamon and sugar. Cut and serve.
- If you want to stretch the recipe, spread the cream cheese mix thinner on the tortilla.

- In the bowl of a stand mixer, add the cream cheese, sugar, vanilla, & cinnamon. Whip together until smooth and completely incorporated.
- Spread 1/4 of the mixture evenly out over one side of a tortilla. Layer apples over one 1/2 of the tortilla. Fold over to close.
- Melt 1 tbsp of butter in a flat bottomed skillet over medium low heat. When melted, transfer the quesadilla to the pan. Cook 1-2 minutes, or until golden brown.
- Using two spatulas, flip the quesadilla, cooking another 1-2 minutes, until that side's also golden brown. Repeat for the remaining 3 quesadillas.
