- Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line with paper liners.
- Combine bran flakes cereal, whole wheat flour, all-purpose flour, baking powder, and salt in a bowl. Whisk applesauce, sugar, vegetable oil, and egg together in a separate bowl; stir into flour mixture until just combined. Fill muffin cups about 2/3-full with batter.
- Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, about 15 minutes. Cool in the pan for 5 minutes on a wire rack; serve warm.

- Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper liners.
- Whisk flour, bran, 3/4 cup brown sugar, baking powder, baking soda, 1 teaspoon cinnamon, and salt in a large bowl until thoroughly combined. Beat milk, vegetable oil, and eggs in a separate bowl. Pour liquid ingredients into the flour mixture and stir just until mixed. Gently stir apples into the batter and fill prepared muffin cups about 3/4 full.
- Mix 1/4 cup flour and 1/4 cup brown sugar with 1/2 teaspoon cinnamon in a bowl; cut the butter into the brown sugar mixture until the streusel topping is crumbly. Sprinkle about 1 heaping teaspoon of topping onto each muffin.
- Bake muffins in the preheated oven until browned and a toothpick inserted into the center of a muffin comes out clean, 25 to 30 minutes.

- In a skillet, saute apples in butter until tender, about 10 minutes. Combine cereal and water in a large bowl; stir in buttermilk, eggs, sugar, raisins and apples with butter. Combine dry ingredients; stir into apple mixture just until moistened. Refrigerate in a tightly covered container for at least 24 hours (batter will be very thick). Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° for 20-25 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack.

REFRIGERATOR APPLE BRAN MUFFINS
I made these at the request of my oldest granddaughter who likes healthy food. Even though these may be put in the refrigerator for up to two weeks, you may bake them all at once and freeze them. They are so moist and good. Very healthy as they are lower in fat than some and eggs whites are used in place of the whole eggs. They make about 24 muffins.

- In a medium bowl combine all bran cereal and buttermilk; let stand 5 minutes till cereal is softened.
- Meanwhile in another large bowl combine both flours, sugar, baking powder, baking soda, cinnamon, ginger, salt, and raisins and mix well.
- To the cereal and buttermilk mixture add the applesauce, oil, and egg whites and blend well.
- Add this to the flour mixture all at once and stir till just moistened.
- You may bake this immediately or stored in tightly covered container and put in refrigerator for up to two weeks.
- When ready to bake, heat oven to 400 degrees; spray cupcake papers with nonstick cooking spray.
- Stir batter and fill about 3/4 full.

APPLE BRAN MUFFINS WITH APPLE BUTTER
I love apples and I love baking with apple butter. I searched zaar looking for a muffin recipe that used both as ingredients but found nothing so I decided to experiment and create my own recipe using the ingredients that I like. This was the end result and I was so pleased with how they turned out that I had to share! You could add 1/4-1/2 cup of nuts or raisins if you'd like but I like them just the way they are. Enjoy!

- Preheat oven to 375°.
- Grease a large muffin tin (I use my "Texas" sized muffin pan).
- In a medium bowl combine flour, baking soda, baking powder, salt, sugar, and cinnamon and mix to blend.
- In another bowl add wheat bran and milk and blend well.
- Then to the bran mixture add eggs, apple butter and 2 tbsp oil and mix to blend.
- Let bran mixture sit 5-10 minutes.
- Meanwhile, peel, core and shred the apples.
- Squeeze out any excess moisture from apples with your hands.
- Add shredded apples to the bran mixture and mix well to blend.
- Add wheat bran mixture to flour mixture and stir to blend (batter will be thick).
- Spoon batter into muffin cups evenly.
- Bake at 375° for 25-30 minutes or until they just begin to brown and test done with a toothpick.
- Cool muffins in pan on a wire rack 5-10 minutes.
- Remove muffins from muffin pan and cool completely.
- *** Preparation time includes preparing the apples. You can make 12 standard size muffins instead of six large but you'll need to reduce baking time to approximately 15-20 minutes or until they test done.
