- Heat a nonstick skillet over medium heat; mist with cooking spray. Add the sausage; cook, turning 2 or 3 times, until warmed through and browned, about 8 minutes.
- Thread 1 small or 1/2 large basil leaf onto a small wooden skewer. Add a piece of roasted red pepper, sun-dried tomato, artichoke, and sausage, arranging them on the skewer so that it can stand up on the sausage end. Repeat with the remaining ingredients to make about two-dozen skewers. Serve on a plate with a drizzle of balsamic reduction, if desired.

- In medium bowl, mix oil, vinegar, lemon peel, garlic, Italian seasoning and red pepper flakes. Stir in cheese and mushrooms. Cover; refrigerate at least 1 hour but no longer than 24 hours.
- Cut prosciutto slices lengthwise into 1-inch strips, cut strips into about 3-inch pieces. Drain mushroom mixture.
- Pleat prosciutto pieces and salami half-slices. Spear prosciutto or salami with skewers; add assortment of mushrooms, olives and/or artichokes to skewers. Add cheese cube to end of each skewer. (Each skewer should have 6 pieces.)

- Thread the ingredients onto a long wooden skewer, placing one of each antipasto item on the stick. We used long wood skewers and cut them in half with kitchen scissors or a sharp knife to make sticks about 6" long.
- Make sure to have items such as the tomatoes and the olives on the end to help the other antipasto ingredients stay on the stick.
- The recipe makes 12 antipasto skewers but it's easy to make as many as you want.As an optional step, drizzle with balsamic vinegar and olive oil before serving, or pesto sauce.
