NEW WIFE TUNA SALAD
My husband says this tuna salad is even better than his mother's. Not too pickly tasting, mild with a nice blend of flavor. You can add more mayo for a creamier salad.

Steps:
- Combine tuna, eggs, onion, and celery in a large bowl.
- In a small bowl, stir together mayonnaise, relish, honey mustard, celery seed, seasoned salt, and pepper. Pour over the ingredients in the other bowl, and stir gently to coat. Serve at room temperature or chill until ready to serve.

AUNT ANNIE'S CHICKEN CHILI
My sister, Ann, hates to cook but has several delicious recipes in her repertoire that she makes again and again. This is one of those recipes. It is a little different from most chicken chilis as it includes black beans and beer and olives. Excellent comfort food! Enjoy.

Steps:
- Heat 3 T. oil in dutch oven and saute chicken until no longer pink.
- Remove chicken and wipe pot dry.
- Heat remaining oil and saute onion, garlic, pepper and cumin 5 minutes.
- Stir in chili powder, oregano, tomatoes, tomato sauce and beer.
- Add chicken, cover and simmer for 20 minutes.
- Add beans, corn and olives.
- Simmer 15 minutes longer.
- Stir in cilantro.
- Top with cheddar and sour cream.
- Serve.

- Drain out the oil from the tuna into a pan.
- Remove the tuna into a bowl and with the help of a fork, flake it.
- Heat the tuna oil.
- In that add the garlic and fry for little while then add the onion and sauté.
- Add the tuna then the tomatoes.
- After a while add sugar, salt, parsley and crushed pepper.
- Fry for little while then add the olives and the spaghetti.
- Cook for 2-3 minutes and then remove transfer into an oven dish.
- Top with grated cheese.
- Preheat the oven to 230°C.
- Place the dish in the oven and cook till cheese turns golden.

Steps:
- In a heavy skillet, melt 1 tablespoon butter with 1 tablespoon olive oil over medium-high heat.
- Add the next 4 ingredients; saute for about 5 minutes or until almost tender.
- Add the tomatoes and next 6 ingredients; bring to a boil.
- Lower heat and simmer for about 5 minutes; season with salt and pepper to taste.
- In a shallow bowl, add flour and garlic powder; stir to combine.
- Season tuna with salt and pepper; set aside.
- Coat tuna with flour mixture; shake off excess.
- In another large skillet, melt remaining butter and olive oil over high heat.
- Add tuna, sauting for 2 minutes on each side or until opaque on the outside.
- Add the tuna to the sauce (in the other skillet); return to a simmer and simmer about 2 minutes or until tuna is opaque in the center.
- Cook pasta in a big pot of boiling salted water until just tender.
- Drain pasta and divide among 4 plates.
- Place tuna over bed of pasta.
- Spoon sauce over tuna and pasta.
- Sprinkle with parmesan cheese.
