CAKE:
2 1/2 cups sugar
1 1/2 cups all-purpose flour
1/4 teaspoon salt
2 1/2 cups fresh egg whites, about 12 to 16 eggs
1 teaspoon cream of tartar
1 teaspoon vanilla extract
1 teaspoon fresh lemon juice
LEMON CREAM CHEESE FROSTING:
1 1/2 (8-ounce) packages cream cheese, softened
1/4 cup butter, softened
1/4 cup fresh lemon juice
1 (16-ounce) package powdered sugar
2 teaspoons lemon zest

Steps:

  • CAKE: Preheat oven to 375°F. Position the oven rack 1/3 from the bottom of the oven. Line a 13 x 9-inch pan with aluminum foil - allowing 2 inches overlap over the sides of the pan. Do not grease the pan or the foil. Sift together sugar, flour & salt. Set aside. With an electric mixer, beat egg white & cream of tartar on high until stiff peaks form. Slowly, fold in the sugar/flour mixture, 1/3 cup at a time. Do not over-mix - fold only until just blended after each addition. Carefully, fold in vanilla and lemon juice. Gently spoon batter into prepared pan. Note - batter will reach to the top or almost to the top of the pan. Place the pan in the preheated 375°F oven. Bake 30-35 minutes or until a toothpick inserted in the middle comes out clean. Remove the cake from the oven and turn over and onto a very lightly floured (clean) cloth or onto a wire cooling rack that has been sprayed with cooking oil. Let the cake cool with the pan in place until completely cooled - approximately 1 hour. Once cake has cooled, remove the pan and peel off the foil. Spread Lemon-Cream Cheese Frosting over the entire cake or cut the cake into pieces then frost. Garnish with Holly Cupcake Decorations. LEMON CREAM CHEESE FROSTING: Using a stand-mixer, beat cream cheese & butter at medium speed until creamy and light. Add lemon juice and beat just until blended. Gradually add powdered sugar on low speed just until blended then stir in lemon zest. NOTES: This cake can be baked in an ungreased angel food cake pan for 30-35 minutes. Or in 3 ungreased 9-inch round pans for 15-18 minutes or until a toothpick inserted in the middle comes out clean.

2/3 cup(s) confectioners sugar
8 large egg whites(room temperature)
1/4 teaspoon(s) salt
2/3 cup(s) granulated sugar
2 tablespoon(s) granulated sugar
2 teaspoon(s) vanilla extract
1 pound(s) strawberries, fresh
1 cup(s) heavy whipping cream(or you can use your favorite prepared whipped topping)

Steps:

  • Preheat oven to 350 degrees F. Grease 15 1/2-inch by 10 1/2-inch jelly-roll pan. Line pan with waxed paper; grease waxed paper. Into small bowl, sift flour and confectioners' sugar.
  • In large bowl, with mixer at high speed, beat egg whites and salt until soft peaks form. Sprinkle in 2/3 cup granulated sugar, 2 tablespoons at a time, beating just until whites stand in stiff, glossy peaks when beaters are lifted. Beat in vanilla.
  • Sift flour mixture, one-third at a time, over beaten egg whites; fold in with rubber spatula just until flour mixture is no longer visible.
  • Spread batter evenly in prepared pan. Bake 25 to 30 minutes or until cake springs back when lightly touched. Cool completely in pan on wire rack. Invert cake onto cutting board; carefully peel off waxed paper.
  • While cake cools, prepare strawberries and whipped cream. Set 5 or 6 smaller berries aside; reserve for garnish. Hull and slice remaining strawberries. In large bowl, with mixer at medium speed, beat cream and remaining 2 tablespoons granulated sugar until soft peaks form. Reserve 3/4 cup whipped cream. Fold strawberries into whipped cream remaining in bowl.
  • Assemble cake: With serrated knife, cut cake into 3 equal strips, about 10-inch by 5-inch each. Place 1 cake strip on platter; spread with half of strawberry whipped cream. Top with 1 more cake strip then with remaining strawberry whipped cream. Top with remaining cake. Spread reserved whipped cream on top of cake. Cut each reserved strawberry in half; use to garnish platter and top of cake. Refrigerate if not serving right away.

Angel Food Sheet Cake for Striped Ice Cream Cake
1 cup blueberry jam
2 pints vanilla ice cream, softened
2 pints raspberry sorbet, softened
1 pint peach sorbet, softened

Steps:

  • Line a 9-by-13-inch baking dish with plastic wrap. Place half the baked angel food cake in bottom of dish. Spread jam over top. Spread ice cream over jam. Freeze until firm, about 1 hour.
  • Spread raspberry sorbet over ice cream layer. Freeze until firm, about 2 hours. Spread peach sorbet over raspberry layer; top with remaining angel food cake. Wrap in plastic wrap; freeze overnight.
  • Remove plastic from top of cake, and turn out cake onto a cutting board; unwrap, and trim edges. Slice cake, and serve immediately.

1 (20 oz) can of crushed pineapple (in it's juice)
1 box (16 oz) angel food cake mix
PREHEAT OVEN TO 325° TO 350° (DEPENDING ON YOUR OVEN)
FRESH FRUITS AND COOL WHIP ARE OPTIONAL

Steps:

  • 1. Spray your jelly-roll pan with a non-stick spray (I use Bakers w/flour in the spray). Start preheating your oven as it does not take long to mix up this cake!!!
  • 2. Combine your crushed pineapple "with it juice" and angel food cake mix in a mixing bowl. Your batter will be fluffy.
  • 3. Pour your batter into the prepared baking sheet cake pan (jello-roll pan with sides). Bake approximately 30 minutes; do not over bake...time will depend on your oven.
  • 4. When baked drizzle with your favorite glaze recipe or dust with powdered sugar, let cool, cut and gobble it up...=;D You can serve with Cool Whip and Fresh Fruits if you desire (remember...to keep your dessert Weight Watchers friendly, use fat free whipped cream).
  • 5. P.S. You can always choose to bake it in muffin tins for cupcakes, square baking dish, a spooringform pan or a 9x13" baking cake pan. If you choose other pans then bake according to the temperature and time on the cake mix box for that pan.

Inspired by Recipe#3794. I found that the blueberries and juice get more evenly distributed than peaches do, for more fruit flavor in every bite! Note: This works best if you have the "1-packet" type of angel food cake mix. If you have the "2-packet" kind, you can empty both packets into the bowl together, but you may end up with a slightly denser cake. Feel free to try this with other kinds of fruit in juice. I'd like to know how it turns out! I've already made it with pineapple, peaches, and blueberries. I might try strawberries next....

2 cups boiling water
16 egg whites
2 tablespoons baking powder
2 teaspoons cream of tartar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sift cake flour, sugar, and salt three times then stir in the boiling water. Let cool.
  • Beat egg whites, cream of tartar, baking powder, vanilla and almond flavorings until stiff peaks form. Fold into the flour mixture and pour batter into one ungreased 12x18 inch baking pan.
  • Bake at 350 degrees F (175 degrees C) for 35 minutes. Cool cake inverted in pan, laying a tea towel underneath the cake to absorb the steam. Frost as desired once the cake is cooled.
