I live in a wonderful Amish community and the ladies here are wonderful cooks. This is a lovely cole slaw recipe for those who like slaw without mayonnaise.

1 medium head cabbage, cored and shredded
1 medium onion, finely chopped
1 cup white sugar
1 cup vinegar
1 teaspoon salt
1 teaspoon celery seed
1 teaspoon white sugar
1 teaspoon prepared mustard
¾ cup vegetable oil

Steps:

  • In a large bowl, toss together the cabbage, onion, and 1 cup sugar. In a small saucepan, combine the vinegar, salt, celery seed, 1 teaspoon white sugar, mustard and oil. Bring to a boil, and cook for 3 minutes. Cool completely, then pour over cabbage mixture, and toss to coat. Refrigerate overnight for best flavor.

2 tablespoons bacon drippings or vegetable oil
1/4 cup packed brown sugar
3 tablespoons vinegar
1 cup water
1/4 teaspoon salt
Dash pepper
4 cups shredded red cabbage
2 apples, peeled and sliced

Steps:

  • In a large skillet, combine drippings or oil, brown sugar, vinegar, water, salt and pepper. Cook for 2-3 minutes or until hot, stirring occasionally. Add cabbage; cover and cook for 10 minutes over medium-low heat, stirring occasionally. Add apples, cook, uncovered, for about 10 minutes more or until tender, stirring occasionally.

1 head cabbage, shredded fine
1 red bell pepper, chopped fine
1 onion, chopped fine
2 c sugar
1 c white vinegar
1 tsp mustard seed, crushed
1 tsp celery seed
salt and pepper to taste

Steps:

  • 1. I have used my food processor to chop the ingredients and I have done it by hand. Either way will be work as long as you cut everything "fine".
  • 2. Combine cabbage, red bell pepper, and onion.
  • 3. Mix sugar, vinegar, mustard seed, celery seed, salt and pepper. Pour over cabbage mixture. Stir to combine.
  • 4. Chill overnight or for several days. Keeps well in refrigerator. Enjoy!

½ cup white sugar
½ cup cider vinegar
¼ cup cold water
1 teaspoon salt
½ teaspoon mustard seed
½ teaspoon celery seed
8 cups shredded cabbage
½ cup chopped celery
½ cup chopped green bell pepper
1 tablespoon chopped pimento pepper

Steps:

  • In a jar with lid, combine the sugar, vinegar, water, salt, mustard seed and celery seed. Cover tightly and shake vigorously until sugar is dissolved. Chill dressing for several hours or overnight.
  • In a large bowl, toss together the cabbage, celery, green peppers, pimento and dressing until evenly coated. Cover and chill until serving.

1/2 cup chopped onion
2 medium tart apples, peeled and coarsely chopped
5 cups shredded red cabbage (2 pounds)
1/4 cup cider vinegar, plus
2 tablespoons cider vinegar
1/4 cup brown sugar, plus
2 tablespoons brown sugar
1/2 teaspoon ground allspice
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • In a heavy saucepan, cook the bacon, onion, and apples over medium-low heat until onions are limp, about 3 minutes. Add the cabbage. Cook about 10 minutes, uncovered, over medium heat until the cabbage wilts, stirring now and then. Add the remaining ingredients. Reduce heat to low, cover, and cook for 20 minutes. The cabbage should be moist, but not juicy. If liquid accumulates, remove lid at the end of the cooking period to cook off some liquid.
  • If sauerkraut is not served at a holiday table, this might be a very delicious substitute. The addition of bacon to the traditional sweet-and-sour red cabbage gives it smoky undertones. This can be made in advance and reheated.
  • For vegetarians, substitute a LITTLE smoke flavor for the bacon.

1 large red cabbage
4 tablespoons bacon fat
1 medium onion, chopped coarsely
1/2 teaspoon salt
2 tart apples, cored and sliced (Granny Smith is my favorite)
1/4 cup boiling water
1/2 cup vinegar
1/3 cup brown sugar

Steps:

  • Remove the outer leaves and hard core from cabbage and chop coarsely.
  • Heat the bacon fat in a large skillet or kettle. Add onions and slowly cook until tender.
  • Add the cabbage and salt. Cover and steam for 10 minutes.
  • Add apples and 1/4 cup boiling water.
  • Cover and simmer over low heat for 1 hour or until the cabbage is tender.
  • Add the vinegar and sugar and continue to cook 15 minutes longer.
  • Serve hot.
  • NOTE: Sugar and vinegar amounts can be varied according to your family's tastes.

Remove from heat and allow to cool completely in the refrigerator (at least 4 hours, or overnight). Season with salt and pepper, to taste.
  • Combine all vegetables in a large bowl and pour cooled dressing over top. Note: you will not need all of the dressing, so I suggest that you add the dressing slowly until the vegetables are coated completely, but not too soggy. You can keep any extra sauce in the refrigerator for up to 1 week and use it as a salad dressing, as a marinade for chicken, or as a stir-fry sauce.
