TODAY SHOW BEEF BURGUNDY (SLOW COOKER)

Traditionally served with buttered potatoes garnished with parsley, this version cooks the entire meal in the slow cooker. If you have extra time, marinate meat overnight in red wine, crushed garlic, fresh cracked pepper, fresh thyme, chopped carrots and onions, then pat dry before serving. If you want a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons water or stock. You can also exclude the potatoes and serve over buttered noodles or spatzle.

2 lbs boneless beef chuck roast, trimmed of fat and cut into 1-inch cubes
2 1/2 cups pinot noir wine
1 cup beef broth
3 slices thick cut bacon, cut into 1/8 inch pieces
1 large yellow onion, chopped (approximately 3 cups)
3 -4 medium red potatoes, cut each into 8 pieces (approximately 3-4 cups)
5 medium carrots, 1/2 pieces (approximately 2 cups)
1 cup sliced mushrooms
0.5 (14 ounce) bag frozen white pearl onions, slightly thawed
1 tablespoon tomato paste
2 -3 tablespoons olive oil
3 garlic cloves, minced
1/4 cup all-purpose flour
3 sprigs fresh thyme
2 bay leaves
1/4 cup fresh parsley
salt
pepper

Steps:

  • Place potatoes in bottom of slow cooker.
  • Season beef with salt and pepper, dust with flour and set aside.
  • Cook bacon in large skillet over medium-high heat until most of the fat is rendered. Remove with slotted spoon to slow cooker.
  • Brown meat in bacon fat, working in batches if necessary. Remove meat to slow cooker.
  • Heat olive oil in skillet. Add onions and saute until translucent and fragrant, approximately 5 minutes. Add garlic, sauté for 1 minute. Add carrots and sauté for 5 more minutes. Transfer entire contents of skillet to slow cooker.
  • Optional: Deglaze pan with wine and add to slow cooker.
  • Add all remaining ingredients to slow cooker except mushrooms, pearl onions and parsley. Turn slow cooker to low cooking setting. Cook for 6-7 hours.
  • Add mushrooms and pearl onions. Season. Turn cooking setting to high and allow to cook for 1 hour.
  • Season to taste and transfer to serving dishes. Garnish with fresh chopped parsley.

This classic beef bourguignon is wonderful. We especially enjoy it on a fall or winter day. I typically reduce a significant portion of the cooking time by using the pressure cooker. Each pressure cooker is different, so you would need to refer to your pressure cooker instructions to adjust cooking time.

3 slices bacon, diced
1 lb boneless beef stew meat, cut into 1 inch pieces
2 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
12 ounces mushrooms, halved
1 (14 ounce) can beef broth
1 1/2 cups dry red wine, such as cabernet sauvignon
10 ounces small white pearl onions, peeled (about 24)
1 1/2 teaspoons dried thyme or 1 sprig fresh thyme
1/4 cup flour
1/4 cup water

Steps:

  • Cook bacon in a heavy 4 qrt Dutch oven or large saucepan over medium heat until crisp.
  • Transfer bacon with slotted spoon to a medium bowl; set aside.
  • Brown meat with garlic, transferring it to a plate.
  • Sprinkle evenly with salt and pepper.
  • Add mushrooms to drippings in pan; cook 3- 4 minutes or until mushrooms are browned, stirring frequently.
  • Transfer mushrooms to bowl with bacon.
  • Set aside.
  • Return meat with any juices to pan; add onions, broth, wine, and thyme.
  • Bring to a boil; reduce heat to low.
  • Cover; simmer 1 hour.
  • Combine flour and water, mixing until smooth.
  • Stir into meat mixture.
  • Stir in reserved mushroom mixture.
  • Bring to a boil; reduce heat.
  • Simmer, uncovered, 34- 40 minutes or until meat is tender and sauce thickens, stirring occasionally.
  • Remove thyme sprig if fresh thyme was used.
  • Serve over noodles, rice or potatoes, if desired.

This is my adaptation of Rita's "Recipe#54850" #54850 for making it in the crock pot for A French Love Affair challenge in ZWT 8/France. I have made no changes to the ingredients, only the preparation so that it is suited for the crock pot. I reduced the wine by half to adapt this recipe to the crock pot. It is a delicious recipe!

1/4 cup all-purpose flour
1 teaspoon salt
1 teaspoon ground black pepper
2 lbs cubed stew meat
4 tablespoons butter
1 onion, chopped
1 red pepper, diced
3 garlic cloves, minced
1 lb button mushroom, cleaned and left whole
1 lb white pearl onion, peeled
4 carrots, peeled and sliced into 1/2 inch pieces
1 cup red wine
1 bay leaf
3 tablespoons fresh parsley, chopped
1 teaspoon dried thyme

Steps:

  • In a small bowl, combine the flour, salt and ground black pepper.
  • Coat the beef cubes with this mixture.
  • Melt the butter in cast iron pot over medium high heat. (Or if not worried about fat fry 3 bacon slices till browned remove and use the fat in place or with the butter).
  • Add the meat and brown well on all sides.
  • Add the onion, carrots, mushrooms, red pepper, and garlic to it.
  • Saute for 5 to 10 minutes, or until onion is tender.
  • Add the wine, bay leaf, parsley, and thyme.
  • Transfer the ingredients from the skillet to the crock pot.
  • Stir once and then cover with crock pot lid.
  • Cook on low for 6-8 hours.
  • Garnish with parsley and crumbled bacon.
  • Serve with crusty French bread and enjoy!

6 bacon strips, diced
1 boneless beef chuck roast (3 pounds), cut into 1-1/2-inch cubes
1 can (10-1/2 ounces) condensed beef broth, undiluted
1 small onion, halved and sliced
1 medium carrot, sliced
2 tablespoons butter
1 tablespoon tomato paste
2 garlic cloves, minced
3/4 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon pepper
1 bay leaf
1/2 pound fresh mushrooms, sliced
1/2 cup burgundy wine or beef broth
5 tablespoons all-purpose flour
2/3 cup cold water
Optional: Hot cooked noodles and minced fresh parsley

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Use a slotted spoon to remove to paper towels. In the drippings, brown the beef; drain. , Place beef and bacon in a 5-qt. slow cooker, Add the broth, onion, carrot, butter, tomato paste, garlic, thyme, salt, pepper and bay leaf. Cover and cook on low until meat is tender, 7-8 hours., Add mushrooms and wine. Combine flour and water until smooth; gradually stir into slow cooker. Cover and cook on high until thickened, 30-45 minutes. Discard bay leaf. If desired, serve with noodles and parsley.

4 slices bacon
2 lbs beef stew meat
2 carrots, cut into chunks
1 onion, sliced
1/2 cup all-purpose flour
1/2 teaspoon dried marjoram
1/4 teaspoon garlic powder
1/4 teaspoon pepper
12 ounces condensed beef broth
1/2 cup Burgundy wine (or other dry red wine)
1 tablespoon Worcestershire sauce
3 cups sliced fresh mushrooms
16 ounces egg noodles, uncooked
2 tablespoons chopped fresh parsley

Steps:

  • Cook bacon until crisp; drain, and crumble.
  • Place beef, bacon, carrots, and onions in the bottom of the crock pot.
  • Whisk together flour, marjoram, garlic, and pepper with broth, wine and Worcestershire sauce.
  • Pour mixture into crockpot.
  • Cook on high for 1 hour.
  • Reduce to low and cook for 5-6 hours.
  • Add mushrooms to crock pot.
  • Cook on high for 30 minutes or until mushrooms are cooked to your liking.
  • While mushrooms are cooking, prepare noodles according to package directions.
  • Serve beef over noodles garnished with parsley, if desired.

I made this for dinner tonight and it was quite good. I did add more garlic and also rosemary and thyme to add a little more flavor and because both of those herbs mix so nicely with red wine in cooking. I also used extra onions and mushrooms. Feel free to experiment with seasonings and veggies though the recipe as is is more classic. This is an extremely simple recipe for an old classic and practically foolproof. Your crockpot may cook slower or quicker though, so be aware of that.

2 lbs cubed beef stew meat

  • In a large bowl or plastic food bag,combine flour, salt, pepper and beef; mix well then put into a 3 1/2 or 4-quart slow cooker, larger if you are using extra vegetables.
  • Add all remaining ingredients; mix well.
  • Cover; cook on LOW setting for 10 to 12 hours or until carrots and beef are tender; garnish with oregano.
