American Green Salad With Cheddar Cheese & Panko Topping image

My absolute favorite salad! The veggies and toppings that I like to use the most at the salad bar, but made at home. Measurements are approximate. I like this the most with a good French or 1000 island dressing. Instead of croutons, buttered panko does the job way better because I have no patience to make my own croutons.

Number Of Ingredients 11

2/3 cup butter lettuce
2/3 cup iceberg lettuce
2/3 cup romaine lettuce
1/4 cup cucumber (sliced very thin and fine)
1/3 cup red cabbage
1/3 cup cheddar cheese, shredded
1/4 cup chickpeas
1 tablespoon carrot, shredded
2 tablespoons finely chopped radishes
1/3 cup panko breadcrumbs
1 tablespoon butter

Steps:

  • In a frying pan, melt the butter then put the panko in and mix until the crumbs are nice and coated. Put in a bowl and let cool for a few minutes.
  • In a large bowl, put all the ingredients together and toss.
  • Serve with a tangy French or 1000 island dressing, or your favorite type.
