Sometimes you just want that diner taste. Homemade beer battered onion rings will fill the bill!

Number Of Ingredients 6

1 1/2 cups flour
12 ounces beer
1/4 teaspoon salt
2 onions (large Bermuda, Vidalia or Spanish)
vegetable oil
salt to taste

Steps:

  • Combine the flour, beer and 1/4 teaspoon salt, stirring well. Cover and let stand at room temperature 1 1/2 - 2 hours.
  • Peel the onions. Cut into 1/4 inch thick slices and separate into rings. Dip the rings into the beer mixture. Fry in deep hot oil (about 400ºF) until golden brown. Drain on paper towels, and sprinkle immediately with salt.
  • To eat them when they are crispy. Onion rings are best served immediately after frying.

Tailgating season is upon us. What better way to top off some favorites like brats, burgers, or regular hot dogs with some beer braised onions?

Number Of Ingredients 4

4 large sweet onions, sliced
2 Tbsp butter
1 c amber ale or amber beer
salt & pepper

Steps:

  • 1. Heat a large skillet over medium-high heat and add the butter. Let the butter melt and then turn temperature down to medium-low heat.
  • 2. Add onions and let cook for about 10 minutes, stirring occasionally, until tender and translucent. Season with a little salt & pepper.
  • 3. Slowly add the beer and cover the skillet. Let simmer for about 10 minutes.
  • 4. Remove cover from skillet and cook an additional 5 minutes to allow some of the beer to evaporate.

Lacto-fermented onions taste better and have more health benefits than pickled onions. Enjoy with a charcuterie and cheese board or in a savoury cocktail.

3 cups Pearl and Cipollini onions (peeled)
4 cups water
2 tbsp salt

Steps:

  • Once your onions are peeled add them to a mason jar so they are 1 inch from the top.
  • Prepare a salt brine by dissolving salt in water.
  • Pour brine into the mason jar until the onions are covered.
  • Optional: add any additional flavourings such as pickling spices or fresh oregano or basil.
  • Put the lid on the jar and store at room temperature in a dark place like your closet or cupboard.
  • Open the jar once a day to release carbon dioxide. Fermentation fans call this "burping."
  • Continue this process for 3-4 weeks until fermentation bubbles no longer form.
  • Move the fermented onions to your fridge once fermentation has completed and enjoy for the next 3-6 months.

Beef Stew with Caramelized Onions and Amber Lager image

1/4 cup (2 fluid ounces/60 milliliters) vegetable oil
2 1/2 (1.25 kilogram) beef stew meat, preferably chuck, cut into 1-inch (2.5-centimeter) chunks
1 1/2 pound (750 grams) yellow onions, sliced
1 tablespoon unsalted butter
2 teaspoons sugar
2 tablespoons all-purpose (plain) flour
1 1/2 teaspoons dried thyme
3 carrots, sliced
1 bottle (12 fluid ounces/375 milliliters) good-quality amber lager or pale ale
1 cup (8 fluid ounces/250 milliliters) beef or chicken broth
1 tablespoon tomato paste
Salt and ground pepper

Steps:

  • In a large, heavy pot, warm the oil over high heat until hot but not smoking. Working in batches, brown the meat well on all sides, 5 to 7 minutes. Adjust the heat as necessary to keep the meat from scorching. Transfer the browned meat to a plate and repeat until all the meat is browned.
  • Add the onions and butter to the pot and stir over high heat until the onions start to soften, about 5 minutes. Reduce the heat to medium and sprinkle in the sugar. Continue to cook the onions, stirring occasionally, until golden brown, about 15 minutes. Add the flour, thyme and carrots and raise the heat to high. Stir for 1 minute, then pour in the lager or ale, letting it come to a vigorous boil. Stir in the broth and tomato paste and return to a boil.
  • Return the meat and any accumulated juices on the plate to the pot, let the liquid come just to a boil, then reduce the heat to low, cover, and simmer until the meat is tender when pierced and the sauce is slightly thickened, 1 1/2 to 2 hours. Season to taste with salt and pepper. Serve on warmed individual plates.

Beer-Battered Onion Rings image

You probably don't want to know you can make better-than-restaurant quality onion rings in your own kitchen, but these are the best onion rings I've ever had. The recipe is from Cook's Country June/July 2009 from America's Test Kitchens. Make sure you don't soak the onion rounds longer than 2 hours or they will turn soft and become too saturated to crisp properly. Cider vinegar may be used in place of malt vinegar. Use a candy thermometer to make sure the oil gets to 350 degrees. According to Cook's Country, ordinary yellow onions will produce acceptable rings but sweet onions are preferred. The beer soaking with vinegar and salt softens and flavors the raw onion. If the batter is too thick, the rings will be doughy. Too thin, and it will run off. Add the beer gradually until the batter falls from the whisk to form a ribbon trail. Fry the battered onion rings in small batches and transfer them one at a time to the hot oil so they don't stick together.

2 teaspoons malt vinegar

2 quarts peanut oil or 2 quarts vegetable oil
3/4 cup all-purpose flour
3/4 cup cornstarch
1 teaspoon baking powder

Steps:

  • Place onion rounds, 2 cups beer, vinegar, 1/2 teaspoon salt, and 1/2 teaspoon pepper in zipper-lock bag. Refrigerate 30 minutes or up to 2 hours.
  • Heat the oil in a large Dutch oven over medium-high heat to 350 degrees.
  • While oil is heating, combine flour, cornstarch, baking powder, 1/2 teaspoon salt, and 1/4 teaspoon pepper in large bowl.
  • Slowly whisk in 3/4 cup beer until just combined (some lumps will remain).
  • Whisk in remaining beer as needed, 1 tablespoon at a time, until batter falls from whisk in steady stream and faint trail across surface of batter.
  • Adjust oven rack to middle position and heat oven to 200 degrees.
  • Remove onions from refrigerator and pour off liquid.
  • Pat onion rounds dry with paper towels and separate into rings.
  • Transfer 1/3 portion of rings to batter.
  • One at a time, carefully transfer battered rings to oil.
  • Fry until rings are golden brown and crisp, about 5 minutes, flipping halfway through frying.
  • Drain rings on paper towel-lined baking sheet, season with salt and pepper, and transfer to oven.
  • Return oil to 350 degrees and repeat with remaining onion rings and batter.
  • Serve.
