Steps:
- In a saucepan heat the dashi and whisk in the miso pastes. Bring to a simmer and add the tofu, scallions, and mirin, if using. Remove from the heat and serve immediately.
- In a saucepan, combine the water and kombu. Bring to a simmer, uncovered, over medium heat. Remove the kombu and discard. Bring the liquid to a boil, add the bonito flakes and immediately remove the pan from the heat. Allow the dashi to sit undisturbed for 2 minutes. Strain through a fine mesh strainer into a medium bowl. Discard the bonito flakes. Use immediately or store, covered, in the refrigerator for up to 3 days.
AMAZING CHICKEN TORTILLA SOUP!
This recipe has been a huge hit with everyone who has ever tried it. We make it almost weekly, and the leftovers are eaten immediately. It is also very healthy! It is a little spicy, so if you don't have too much of a tolerance for spicy foods, you may choose to leave out the seeds of the jalapeño. If you love spicy, like we do, extra cayenne pepper adds even more zing. Enjoy!

Steps:
- Sauté onion, garlic, jalapeño and green pepper with olive oil in a large pot until soft.
- Add all the rest of the ingredients to the large pot and bring to a boil.
- After about 15 minutes, remove the chicken breasts and shred.
- (Two forks work well to pull the chicken apart!).
- Return shredded chicken to the pot and simmer an additional 45 minutes.
- Serve, topped with crushed tortilla chips if desired.
AMAZING FRENCH ONION SOUP
This is a great soup...very inexpensive to make too. It is much easier to eat with the croutons instead of the bread. You can use more croutons if you want.

Steps:
- Saute onions in butter.
- Add sugar and flour to make a paste, then add broth stirring to mix well and simmer for 30 minutes.
- Place 4-6 croutons in bottom of broiler safe bowls/crocks.
- Pour broth mixture over and croutons will rise to the top.
- Add 2 slices of provolone cheese on top of each bowl/crock.
- Put on cookie sheet and broil for a minute or 2 till cheese starts to brown.
- Let sit for a few minutes.

AMAZING BAKED POTATO SOUP
This is a spectacular recipe that I adapted from my old potato soup recipe to be a little more figure friendly. Amazingly enough, it didn't change the flavor much. Adjust the amount of flour to change the thickness of the soup (I like mine pretty thick).

- Melt butter in a large pot. Add flour and mix to make a roux.
- Add milk, evaporated milk, potatoes, cheese, sour cream, salt, and pepper.
- Cook on low heat until hot.
- Ladle into bowls and top with a dolop of sour cream, green onions, and bacon bits.
