This easy, delicious Pasta with Butter and Parmesan is my take on the classic Italian dish Cacio e Pepe. Spaghetti is topped with a simple Parmesan pepper butter sauce. It pairs well with a green salad and a side of crusty bread.

12 oz spaghetti (or your favorite noodles)
8 tbsp butter
1 tsp pepper
1 1/2 cups grated Parmesan cheese

Steps:

  • Bring well-salted water to a boil over high heat in a large pot. Add pasta and cook until al dente. Drain, reserving the water for later use. Set the pasta aside.
  • Melt butter in the same pot. Add pepper and toast over medium heat for 1 minute stirring frequently.
  • Remove from the heat. Slowly add 1/2 of the Parmesan, whisking continuously to incorporate into the butter.
  • Add 1/2 cup reserved pasta water and the remaining Parmesan. Whisk until combined.
  • Add pasta to the sauce and toss. If the pasta seems too dry, add reserved water 1/4 cup at a time until desired consistency is reached.
  • Serve warm, with a green salad and a side of crusty bread.

1 lb bucatini
¼ cup unsalted butter
2 tsp black pepper (freshly ground)
1 cup Pecorino Romano cheese (grated)
1 cup Parmesan cheese (grated)
salt (to taste)

Steps:

  • COOK PASTA: Place a large saucepan on high heat and add hot water. Bring the water to a boil then season with salt and add the bucatini.
  • Cook the bucatini for 8 minutes then strain through a colander, reserving one cup of pasta water.
  • MAKE SAUCE: In a second saucepan on medium heat add half of the butter. Once melted, stir in the black pepper and allow to toast for 1 minute. Then add half a cup of pasta water and bring to a simmer, stir in the remaining butter.
  • ADD PASTA: Reduce the heat to low then toss the cooked bucatini, pecorino and parmesan through the sauce. Stir to melt the cheese and form a thick silky sauce, add pasta water gradually if the sauce becomes too dry.
  • SERVE: Serve the bucatini cacio e pepe immediately into warm bowls with an extra crack of fresh black pepper and grating of parmesan cheese.

4 (6 to 8-ounce) strip steaks, 3/4 to 1-inch thick
Kosher salt
2 teaspoons black peppercorns, coarsely crushed
2 tablespoons clarified, unsalted butter
3/4 cup beef stock or broth
3 tablespoons cognac
3/4 cup heavy cream
1 tablespoon green peppercorns in brine, drained and slightly crushed

Steps:

  • Preheat oven to 200 degrees F.
  • Sprinkle steaks with kosher salt and crushed black pepper. Heat butter in a 12-inch, heavy bottomed saute pan over medium heat. Once butter is hot, add steaks and cook until browned on both sides, about 2 minutes per side for medium-rare and 3 minutes per side for medium. Remove steaks from pan and place on a rack set on a sheet pan; place in oven to keep warm.
  • Add the stock to the saute pan and whisk until the crispy bits release from bottom of pan. Allow the liquid to reduce for 3 to 4 minutes over medium-high heat. Add cognac, heavy cream, and green peppercorns to the pan. Increase heat to high and cook, whisking continually, until sauce thickens slightly, just enough to coat the back of a spoon; this will take 5 to 7 minutes.
  • Season the sauce, to taste, with kosher salt. Place steaks on plates, top with sauce, and serve immediately.

12 ounces spaghetti
3 tablespoons unsalted butter
3 tablespoons extra-virgin olive oil
1 tablespoon very coarse freshly ground black pepper, plus more for serving
1 3/4 cups freshly grated Parmesan, plus more for serving

Steps:

  • Bring a large pot of salted water to a boil. Cook the pasta according to the package directions, reserving 1 cup of the cooking liquid before draining.
  • Heat the butter and oil in a large skillet over medium-high heat until the foam from the butter subsides. Add the pepper and cook, stirring, until lightly toasted, about 1 minute. Add the pasta and up to 3/4 cup of the reserved cooking liquid, tossing to coat. Sprinkle the Parmesan on top and continue to cook, tossing, until the cheese is melted and the pasta is well coated, about 2 minutes. Add a little more of the cooking liquid to loosen, if necessary. Season with salt and divide among 4 bowls. Serve with additional Parmesan and pepper.

400 g lombrichelli ((14oz) or tonnarelli, spaghetti alla chitarra, bucatini or normal spaghetti)
200 g Pecorino Romano cheese ((7oz) freshly grated)
Freshly ground black pepper corns (about 4 teaspoons Don't grind too fine.)
Salt (for boiling the pasta)

Steps:

  • Dry fry the roughly ground pepper corns in a small frying pan until they start to release their aroma.
  • Put a pot of water onto boil for the pasta. Use a bit less water than you would normally. Add salt once it starts to boil and bring to the boil again.
  • Cook the pasta al dente according to the instructions on the packet. Take a ladleful of the pasta cooking water and add to the pepper corns. Then keep aside another cupful of the cooking water, drain the pasta and add it to the pan with the peppercorns. I drain the pasta 'wet' meaning it should still have some water with it. Mix the pasta with the pepper.
  • Add the grated pecorino continue mixing very well until the cheese starts to become creamy.
  • If too dry add a little more of the cooking water. If too liquid add more cheese.
  • Serve on heated plates, topped with more grated pecorino and another generous sprinkling of pepper.

4 tablespoons (60ml) extra-virgin olive oil, divided
Coarsely ground black pepper, to taste
Kosher salt, to taste
1/2 pound (225g) spaghetti
2 tablespoons (30g) unsalted butter
2 ounces Pecorino Romano cheese (about 1 cup; 55g), very finely grated on a Microplane or the smallest holes of a box grater, plus more for serving

Steps:

  • Heat 3 tablespoons olive oil and about a teaspoon of black pepper in a medium skillet over medium-low heat until ingredients are fragrant and pepper is barely starting to sizzle, about 1 minute. Set aside.
  • Place spaghetti in a large skillet and cover with water. Season with a small pinch of salt, then bring to a boil over high heat, prodding spaghetti occasionally with a fork or wooden spoon to prevent it from clumping. Cook until spaghetti is al dente (typically about 1 minute less than the package recommends). Transfer 2 to 3 tablespoons of pasta cooking water to the skillet with the olive oil/pepper mixture. Stir in butter. Using tongs, lift spaghetti and transfer it to the oil/butter mixture.
  • Add cheese and remaining tablespoon olive oil to the skillet and stir with a fork until cheese is completely melted. Add a few more tablespoons of pasta water to the skillet to adjust consistency, reheating as necessary until the sauce is creamy and coats each strand of spaghetti. Season to taste with salt and more black pepper. Serve immediately, passing extra grated cheese and black pepper at the table.
