ALMOND FLOUR PANCAKES
These super fluffy pancakes are a great gluten-free alternative to the usual pancakes made with wheat-based flours. Using almond flour also makes the pancakes super tender and a little harder to flip. Just be patient and wait until they are cooked as instructed on the first side before turning them over.

Steps:
- Add 3 tablespoons of the butter to a large bowl and melt in the microwave, 30 to 60 seconds. Allow the bowl to cool slightly, then add the brown sugar and almond milk and whisk to combine. Add the eggs and whisk until smooth. Add the almond flour, baking powder and salt and whisk until the mixture becomes a thick batter. Let the batter rest for 10 minutes.
- Heat a large nonstick sauté pan over medium heat. Add 1/2 tablespoon of the remaining butter to the pan and swirl to coat. The butter should bubble vigorously but not brown. If it begins to brown, turn the heat down slightly. Scoop a heaping 1/4 cup of the batter into the pan, using a small spoon to help coax the batter out and spread it to about 4 inches in diameter. Repeat to add one more pancake, taking care leave at least one inch in between. Cook until the surface of the pancakes is smooth with several tiny bubbles starting to pop up and the underside is golden brown, 3 to 4 minutes. Be patient because undercooked pancakes will be very hard to flip.
- When the pancakes are ready, gently work a thin, wide spatula underneath each one, then flip and cook 1 to 2 minutes more until the second side is golden brown. Transfer to a platter and cover loosely with foil to keep warm. Carefully wipe out the pan and repeat with the remaining butter and batter to make 4 more pancakes in 2 batches.
ALMOND FLOUR
I use almond flour with many of my recipes but it is very costly. I want to experiment with a few inspirations for the holidays therefore decided to make my own almond flour. I had a huge bag that I purchased a while ago to make a nut crunch. I used my food processor but I bet you can do the same with a coffee grinder as well. My advice would be to pulse it because I fear if you over blend you will end up with almond butter. It came out perfectly so now off to cooking land!

Steps:
- Preheat oven to 350°F (180°C). Line a 12-hole muffin tray with paper cases. Slightly oil the paper cases with oil spray. Set aside.
- Peel, mash the ripe bananas on a chopping board with a fork. It's ok if there are bits of banana left. It adds moisture to the muffins. Measure 3/4 cup and place it in a mixing bowl.
- In the same mixing bowl, add eggs, vanilla extract, and melted coconut oil - make sure the oil is not too hot, or it can 'cook' the eggs. Add the stevia drops or granulated sweetener if you want to boost the sweetness of the muffins (read note 1). Whisk until the eggs are well beaten and a consistent liquid batter forms.
- Stir in the dry ingredients into the wet ingredients using a spoon to gently incorporate: almond flour, salt, baking powder, and cinnamon. The batter should be thick, moist, and look slightly grainy.
- Fill each muffin cup with about 1/4 cup of batter, smoothen the top with the back of a spoon and sprinkle sliced almond on top of each muffin.
- Bake the muffins on the center rack of your oven for 20-25 minutes or until golden brown and a pick inserted in the center of the muffins comes out clean.
- Cool the muffins down on a wire rack for a few hours before serving.

- Pancakes. For a subtle nutty flavor, substitute almond flour for one-quarter of the flour—whatever type you’re using—in your pancakes, or try these pancakes made entirely with almond meal.
- Scones. To boost the protein in your scones, swap one-quarter of the flour for almond meal. Or, make these deliciously crumbly almond scones that are lightened with a bit of arrowroot flour.
- Breading. Use almond flour in place of bread crumbs or flour to make a crust for fish or chicken tenders. For a crunchier, gluten-free coating, like the one on these chicken wings, use chopped almonds instead of very finely ground ones.
- Pasta. Add protein to your fresh pasta by swapping one-third of the flour for almond meal. Try this recipe for a completely gluten-free version.
- Gluten-free cookies. Use almond flour to make chewy-crisp cookies, like these simple honey-tahini ones or these fat gingersnaps. Or make crunchy, protein-rich biscotti.
- Macarons. With nothing more than sugar, almond flour and egg whites, you can create the cookies for French macarons. Now all you need is a filling! And maybe some food coloring.
- Almond cake. With just as few ingredients in a different ratio, you can make a cake, like this almond-honey cake from F&W Digital Award Winner Anja Schwerin.

- To make almond flour in a food processor: Place a cup of raw or blanched almonds in the bowl of a food processor fitted with the blade attachment and pulse for 50-60 times in 1-second increments. Stop and scrape the sides of the bowl of the processor every 10 seconds to make sure that they are ground evenly.
- To Make Almond Flour Using a High Powered blender: Place 1 cup of (raw, blanched, or slivered) almonds in the bowl of the blender, set the switch control switch to 2 or 3 (or one of the lower speed settings) and pulse for 20-25 one-second pulses. As it was with the food processor, I recommend stopping the blender and scraping the sides of the bowl a few times during the process.

7 REASONS TO LIMIT ALMOND FLOUR USE (+WHAT TO USE FOR KETO ...
From allthenourishingthings.com
- — Almonds are not sustainably farmed. Since 1965, American almond consumption has increased ten-fold. The state of California is the only state that produces almonds because their cool winters and mild springs are perfect almond-growing weather.
- — Almond flour is high in phytic acid. Unless you’re buying sprouted almond flour, or unless you’re soaking and dehydrating almonds (or buying them) and making your own almond flour, almond flour is high in phytic acid.
- — Almond flour can be constipating. Actually, nuts in general, eaten in high quantities are constipating. And, I’m not just talking about nut flours.
- — Almond flour is high in poly-unsaturated fats (PUFAs). Poly-unsaturated fats contain Omega-6 fatty acids — fatty acids which are essential to our health.
- — Our perception of how many nuts we’re eating is skewed… big time. One slice of cake, one muffin, one pancake, or one waffle made with almond flour contains more than a small handful of almonds.
- — It’s expensive. Nuts in general are expensive. Nut flours are expensive. Heck, grain-free flours are expensive! Coconut flour is an exception here. In comparison to almond flour, cassava flour, tiger nut flour, and other grain-free flours, coconut flour is relatively cheap.
- — It’s not safe for nut-free school zones. Food allergies are on the rise. Awesome parents and schools have teamed up to make more and more schools safe for students with life-threatening food allergies to foods like nuts and peanuts.
