SOUTHERN BBQ SPARE RIBS

4 lemons cut in half (the acid in the lemons destroys all of the impurities in the ribs and also acts as a tenderizer
1 stalk celery, large dice
2 carrots, rough chop
1-ounce salt
1 slab beef ribs
1/2 gallon water
1 recipe Chef Toney's BBQ sauce (recipe follows)
1-ounce chopped onion
1-ounce diced garlic
1/2-ounce diced shallot
4 bay leaves
1/2 cup tarragon vinegar
1/2 quart orange juice
1/2 pint brown sugar
1/2 gallon open pit BBQ sauce
1/2 cup prepared mustard
1 cup tomato ketchup
1/2 cup tomato paste
1-ounce diced ginger
1/2 tablespoon cayenne pepper
1/2 cup liquid smoke

Steps:

  • Place lemon, celery, carrots, salt and ribs in a large pot and cover with cold water. Bring to a simmer and cook for 45 minutes to 1 hour or until the meat appears to be falling off the bone. Remove the ribs carefully and place on a sheet tray. Allow them to cool before, basting with Chef Toney's secret BBQ sauce. Cover the ribs and cook in a preheated 325-degree oven for about 30 minutes. Serve immediately.
  • Saute onions, garlic, shallot, and bay leaves. Deglaze with vinegar. Add orange juice and brown sugar, allow to reduce. Add other ingredients, bring to the boil and reduce heat. Allow to simmer for 2 hours.

2 (3-pound) sides pork spare ribs
1 tablespoon Irvine Spices Roasted Garlic Pepper Seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon lemon pepper
2 teaspoons salt
1/2 cup honey
1/2 cup brown sugar

Steps:

  • Rinse spare ribs and dry with paper towels. Prepare a rub by combining Roasted Garlic Pepper Seasoning, garlic powder, onion powder, lemon pepper, and salt in a small bowl and rubbing over entire surface of spare ribs. Follow manufacturer's instructions for the smoker. General rule of thumb is to maintain a temperature range of 255 to 300 degrees F (indirect heat), and smoke for 1 to 1 1/2 hours per pound of meat (probably about 4 1/2 hours or so for sides of pork spare ribs). Towards the end of the smoking time, combine the honey and brown sugar in a small bowl and spread on the spare ribs.
  • Serve family style.

3 pounds pork spare ribs, on the bone, cut into 1 1/2 by 1 1/2-inch to 1 1/2 by 2-inch pieces
6 tablespoons cider vinegar
4 tablespoons dark soy sauce
2 tablespoons rice wine vinegar
1 tablespoon sugar
2 tablespoons honey
Coarsely cracked black pepper, for sprinkling

Steps:

  • Place the spare ribs, cider vinegar, soy sauce, rice wine vinegar and sugar in a large bowl. Add 2/3 cup water and stir to combine. Place the spare ribs and the liquid in a large pot over low heat. Cover the pot and bring to a gentle simmer. Cook until the meat begins to come apart from the bone, about 40 minutes.
  • Remove the spare ribs from the pot using a slotted spoon. Increase the heat to high and let the sauce reduce until it looks glazy, 5 to 10 minutes. Add the honey and sprinkle with pepper and let the sauce simmer, about 1 minute. Pour the sauce over the spare ribs and mix to combine. Serve immediately.

ROSTICCIANA (SPARE RIBS) AND SAUSAGES BRAISED IN BEER AND OLIVES



Rosticciana (Spare Ribs) and Sausages Braised in Beer and Olives image

7 to 8 cups Belgian ale (or your preferred beer)
5 ounces large black olives, such as Cerignola
5 cloves garlic, cut into 3 pieces each
3 sprigs fresh rosemary, leaves picked
1 red onion, cut into thin wedges
Salt and freshly cracked pepper
12 assorted sausages, such as Italian, Irish banger and andouille
1 1/2 racks pork spare ribs, ribs separated
Salt and freshly cracked pepper

Steps:

  • For the sausages: Preheat a grill on high heat.
  • In a medium roasting pan or wide diameter pan, combine the beer, olives, garlic, rosemary and onion wedges. Season with salt and freshly cracked pepper and bring to a simmer. Add the sausages; the liquid should come about halfway up the sides of the sausages. If not, add more beer or water until it does. Braise the sausages until cooked through, 10 to 15 minutes.
  • For the ribs: Sprinkle the ribs liberally with salt and freshly cracked pepper. Grill over high heat, turning frequently, until cooked through and caramelized on the outside, 15 to 20 minutes total. This is not a low and slow method of cooking ribs; it's the opposite, high and fast.
  • Remove the sausages from the braising liquid and grill until there are grill marks on each side, about 5 minutes.
  • Transfer the ribs and sausages to a large platter. Serve the sausages with the braising liquid on the side if desired.

  • A note on cook time: ribs will tell you when they’re done. But just to give you an idea thin ribs (“shiners”) take around 4 hours with this recipe, and meatier ribs 5 hours. Check with the bend test.
  • Start by trimming the breast bone (sternum) off with a knife. Mix the salt, pepper and paprika in a shaker. Note: if you use another type of salt, adjust amount accordingly. This specific ratio is due to the salt and pepper having the same grain size (mesh). Spread on an even layer of the mustard on both sides of the ribs. Now apply an even layer of the rub on both sides of the ribs, and leave them to rest in the fridge for an hour, uncovered.
  • Fire up your grill, prepare it for indirect grilling. Have it running at 225° – 250° F. Use the snake method if you’re using a kettle grill, or even better, a Slow ‘N Sear. Add some wood chunks for smoking on the glowing embers. Place the ribs on the indirect side and close the lid. Smoke them for roughly 2 hours so they get a nice color and bark develops. Spritz the ribs with apple cider vinegar roughly every 45 minutes.
