Air Fryer Potato Pancakes are my favorite side dish! They're quick and easy and use up leftovers! It's a way to totally transform leftover mashed potatoes into something tasty and unique!

1 cup leftover chilled mashed potatoes
1 russet potato (grated)
1/3 cup flour
3/4 cup sharp white cheddar cheese (grated)
1 egg
1 tbsp chives
1 tbsp minced garlic
1 tsp salt

Steps:

  • In a large batter bowl, mix together leftover mashed potatoes (you want them cold), 1 grated russet potato, flour, cheese, egg and seasonings
  • Line rimmed baking sheet with parchment
  • Using medium scoop, scoop out 8 balls of mixture and place on parchment
  • Flatten scoops of potato patties slightly
  • Place baking sheet in freezer for 10-15 minutes
  • remove from freezer, using metal spatula (thin so it can get under patties - they won't be frozen, just chilled) lay four pancakes into air fryer
  • spritz with olive oil and air fry at 400 for 5 min
  • Open air fryer, flip, spritz with oil, sprinkle with salt and air fry at 400 for 5 min more
  • Serve with sour cream, salt and more chives

These crispy Air Fryer Potato Pancakes are the perfect next-day dish for leftover mashed potatoes! Try them as a side dish for dinner or brunch!

2⅓ cups leftover mashed potatoes (cold)
3 green onions (diced, whites and greens separated)
1 tsp oregano
1 tsp smoked paprika
2 tbsp all purpose gluten-free flour (or regular all purpose flour)
1 egg

Steps:

  • Scoop cold leftover mashed potatoes into mixing bowl.
  • Add diced green onions, flour, oregano, and smoked paprika to bowl.
  • Scramble egg in separate bowl, then add to potato mixture. Combine all ingredients well.
  • Form mixture into potato patties. Place potato pancakes into air fryer basket after oiling or lining with parchment paper or aluminum foil.
  • Cook at 380°F for 10 minutes. Flip potato pancakes halfway through cooking.
  • Plate potato pancakes. Garnish with leftover green onions and serve with a side of sour cream (optional). Enjoy!

4 russet potatoes, peeled
1 medium red onion, finely chopped
1 teaspoon salt
1/2 teaspoon black pepper
1 bunch chives, snipped
1 egg
1 egg white, lightly beaten
1/4 cup flour
3 teaspoons canola oil

Steps:

  • Preheat oven to 350 degrees.
  • Brush 2 baking sheets with 1 tsp oil each.
  • Loosely grate potatoes and onion in food processor and place in large mixing bowl.
  • Season to taste with salt and pepper.
  • Add flour and onion and mix well.
  • Mix in eggs and 1 tsp oil.
  • Spoon out the batter onto baking sheets and flattern slightly.
  • with oven racks in lower and middle positions, bake until brown on the bottom (about 10 minutes).
  • Turn and bake another 5 or until brown.
  • Garnish liberally with chives and serve with sour cream or non-fat yogurt.
  • (Soy versions of these milk-based products will work also).

My mother used to used left over mashed potatoes to make these potato pancakes the next night for supper. She fried hers and they were quite delicious. However, baking is less messy.

1/4 cup butter
3 large onions, finely chopped
4 large eggs
3 cups mashed potatoes
1/2 cup flour
salt and pepper
Tabasco sauce
2 tablespoons water

Steps:

  • Preheat oven to 375°F.
  • In large skillet, melt the butter, then add the onion and cook over moderate heat for 3 minutes, stirring.
  • Remove from heat.
  • In a large mixing bowl, whisk three of the eggs till well blended, then add the cooked onions, potatoes, flour, salt, pepper, Tabasco and stir until mixture is firm.
  • Form the mixture into 16 round pancakes and place on a large greased baking sheet.
  • In a small bowl, whisk the remaining egg with the water, brush the top of each pancake with the egg wash, and bake the pancakes till golden brown, 20-25 minutes.

This recipe was found in one of my first cookbooks,The Good housekeeping Illustrated Cookbook printed back in 1980. I've altered it a bit since then.You can also grate the spuds and onion in a Cuisinart, but the hand grating makes them a little creamier. I also prefer the electric frying pan for more even cooking.My daughter adores these! I usually serve them with some beef tenderloin pieces and fresh pineapple on the side.

4 large russet potatoes, peeled and rinsed
1 medium onion, peeled
2 eggs
1/3-1/2 cup flour
2 teaspoons salt
ground pepper
1 teaspoon baking powder
oil (for frying)

Steps:

  • Into shallow dish,grate potatoes and onion adding them to a bowl of cold water as you grate.
  • You can let them soak in the fridge for a while or get right to work.
  • In a colander lined with cheesecloth,drain shredded potatoes and onion.
  • Wrap potatoes in cheesecloth and squeeze out as much water as possible.
  • (someone with bigs hands is good for this job!) In same large bowl beat the eggs.
  • add the potato-onion mixture, flour,salt,pepper and baking powder.
  • Mix well.
  • In non-stick skillet or electric skillet heat oil to cover surface.
  • (too much oil will make very greasy pancakes) Drop in mixture by 1/3 cupfuls,and flatten with fork or spatula.
  • Fry until golden brown and set, then flip and fry until browned on the other side.
  • Remove pancakes to a paper towel-lined cookie sheet,and keep warm until all pancakes are done.

Potato latkes are usually fried, on top of the stove, but the air fryers on the market right now are a great way to prepare this popular dish. This method yields a crispy latke that can be an appetizer or a dinner side. If you have an oil sprayer, you can use your oil of choice. I used purchased avocado oil spray, to give that beautiful brown color. Serve with sour cream or applesauce, if desired. Refrigerate any leftovers in an airtight container, up to 5 days.

1 (16 ounce) package frozen shredded hash brown potatoes, thawed
½ cup shredded onion
1 egg
kosher salt and ground black pepper to taste
2 tablespoons matzo meal
avocado oil cooking spray

Steps:

  • Preheat an air fryer to 375 degrees F (190 degrees C) according to manufacturer's instructions. Lay out a sheet of parchment or waxed paper.
  • Place thawed potatoes and shredded onion on several layers of paper towels. Cover with more paper towels and press to squeeze out most of the liquid.
  • Whisk together egg, salt, and pepper in a large bowl. Stir in potatoes and onion with a fork. Sprinkle matzo meal on top and stir until ingredients are evenly distributed. Use your hands to form mixture into ten 3- to 4-inch wide patties. Place patties on the parchment or waxed paper.
  • Spray the air fryer basket with cooking spray. Carefully place half of the patties in the basket and spray generously with cooking spray.
