2 cup Leftover Chicken (shredded)
1 Egg (beaten)
½ cup Golden Breadcrumbs
½ cup Panko Breadcrumbs
½ tsp Salt
½ tsp Black Pepper
1 tsp Paprika
½ tsp Chilli Powder
2 tbsp Butter
2 heaped tbsp Plain Flour
1 cup Milk
⅓ cup Grated Cheese
½ tsp Garlic Powder
½ cube Chicken Bouillon
½ Onion (diced)
2 tbsp Fresh Coriander Leaves (chopped)

Steps:

  • Melted butter in a pot over medium heat. Stir in flour and mix into a roux.
  • Whisk in milk and keep stirring for about 5 minutes until it starts to thicken.
  • Stir in grated cheese and season with salt, black pepper, paprika, chilli powder, garlic powder, and the crumbled bouillon cube.
  • Once thickened, remove from heat and add in the shredded chicken, chopped onions and coriander. Toss to combine. Set aside to allow to cool down.
  • Mix together both Panko and golden breadcrumbs in a shallow bowl. Place beaten egg in a separate bowl.
  • Scoop a tablespoon of the chicken mixture and shape it into a ball. Dip into beaten egg and then coat with breadcrumbs. Repeat with the remaining chicken mixture.
  • Preheat air fryer to 200°C. Brush the air fryer basket with a layer of oil.
  • Place the chicken croquettes into the basket. Brush them with oil and cook for 5 minutes.
  • Roll the croquettes to the other side, brush with more oil, and cook for another 5 minutes until golden in colour.
  • Allow to cool down for a few minutes before serving.

Making fried chicken in an air fryer is a revelation. You can achieve a crispy crust and juicy interior without all the steps of deep-frying. A soak in seasoned buttermilk adds extra flavor-as little as 1 hour will make a difference, but overnight is even better. Because of the capacity of a standard air fryer, we cook the chicken in batches. You can rewarm the first batch in a 250-degree oven for 10 minutes if you'd like to serve it all hot at once.

3 cups buttermilk
6 garlic cloves, crushed and peeled
Kosher salt and freshly ground black pepper
6 bone-in, skin-on chicken thighs (about 2 pounds)
6 chicken drumsticks (about 2 pounds)
2 cups all-purpose flour
2 teaspoons paprika
1 teaspoon garlic powder
1 teaspoon onion powder
Olive oil cooking spray

Steps:

  • Combine the buttermilk, garlic, 1 tablespoon salt and 2 teaspoons pepper in a large resealable plastic bag or container. Add the chicken pieces, seal and refrigerate at least 1 hour and up to overnight, turning the bag once or twice.
  • When you are ready to cook the chicken, combine the flour, paprika, garlic powder, onion powder, 1 tablespoon salt and 1 teaspoon pepper in a shallow bowl or dish. Stir well with a fork to combine. Drizzle 2 to 3 tablespoons of the buttermilk mixture from the bag over the flour and toss well to create small lumps throughout.
  • Remove the chicken from the marinade. Spray the basket of a 3.5-quart air fryer with olive oil cooking spray and preheat to 360 degrees F.
  • Dredge 3 thighs and 3 drumsticks in the flour mixture, shaking off the excess. Place the pieces in the preheated air-fryer basket, skin-side up without touching. Spray the chicken generously with the cooking spray and air fry until the chicken is cooked through and the crust is crisp and deep golden, about 27 minutes. Check on the chicken halfway through to spray any spots that still look floury with more cooking spray and flip the drumsticks only.
  • When the chicken is done, remove it from the air fryer and season lightly with salt. Repeat the dredging and air-frying process with the remaining chicken. if you like, rewarm the first batch in an oven at 250 degrees F for 10 minutes before serving.

1 cup milk
1 cup fresh chicken stock (canned broth may be substituted)
1/4 teaspoon white pepper
2 teaspoons freshly chopped parsley leaves
Salt, to taste (only if using fresh chicken stock)
1/4 pound butter
1 stalk celery, minced
1 cup all-purpose flour
1 1/4 pounds cooked chicken meat, ground in food processor
2 cups milk
2 eggs
1/8 teaspoon salt
3 cups all-purpose flour or cracker meal
3 cups breadcrumbs
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups chicken stock
2 teaspoons chopped fresh parsley leaves
Pinch white pepper and salt
Salad oil or liquid shortening, for frying
Mashed potatoes, for serving

Steps:

  • For the croquette batter: In a heavy pot, heat the milk and chicken stock on the stove and then add the white pepper, fresh parsley and salt, if needed. In a separate heavy pot, melt the butter and add the minced celery. Stir in the flour and cook for 3 minutes. Pour in the hot milk and stock and stir until thickened and smooth. Fold in the chicken meat and allow to cool.
  • Breading the croquettes: Shape 3-ounce portions of croquette batter in the shape of a cone and place on a tray lined with waxed paper. Next make an egg wash from the milk, eggs and salt. Dip the croquettes in the egg wash and then into the flour and let stand a few minutes. Finish breading by dipping the croquettes back in the egg wash and then rolling in breadcrumbs.
  • For the chicken gravy: Melt the butter in a 1- or 2-quart saucepan, and stir in the flour. Pour in the stock and whisk until smooth. Bring to a boil, reduce the heat and cook for 20 minutes. Add the fresh parsley, white pepper and salt, to taste, (if fresh stock was used).
  • Cooking the croquettes: Fry the croquettes in a pot with salad oil or liquid shortening, heated to 350 degrees F, until golden brown, 2 to 3 minutes. Drain well and blot on paper towels. Place on a bed of mashed potatoes and top each croquette with chicken gravy.

4 medium potatoes (1 lb)
½ bell pepper (finely chopped)
1 small onion (finely chopped or 1 tsp onion powder)
¼ cup corn kernels (frozen or fresh)
1 tsp parsley (finely chopped/ or dried parsley)
1 tsp garlic powder (or 4 cloves of garlic)
1 tbsp mixed herbs (oregano, basil, parsley)
1 tsp chilli flakes
¾ - 1 tsp salt (or as per taste)
1/2 cup shredded mozzarella cheese ((or shredded vegan cheese) )
2 tbsp cornstarch (for slurry)
1 cup bread crumbs/ refined flour (for coating)

Steps:

  • Cook potatoes in an Instant pot or stovetop.
  • Remove the potato skins.
  • Then mash or grate it completely using a potato masher.
  • Cool it completely before adding any ingredients.
  • Add chopped veggies, spices and herbs to the mashed potatoes.
  • Make small roundels of equal size from the potato mixture.
  • Then apply oil on both palms. Take a ball, press it lightly to flatten slightly.
  • Put some shredded cheese in centre.
  • Seal it from all ends and roll it to make a ball again.
  • Repeat this for all balls and make stuffed balls.
  • Roll the balls lightly making small logs.
  • Make a slurry of flowing consistency by mixing cornstarch and water.
  • Dip the shaped potato balls or logs into the slurry.
  • Remove from the slurry and roll them on bread crumbs.
  • Repeat this for all stuffed croquettes.

Use an air fryer to make these easy chicken thighs, and add the seasoning or sauce of your choice. It's an easy way to cook chicken when you're busy

4 large or 8 small chicken thighs, skin on
1 tbsp sunflower or olive oil
1 tbsp plain flour
seasoning of choice (use salt and pepper, or ½-1 tsp of either smoky BBQ, ras-el-hanout, garlic granules, celery salt or garam masala)

Steps:

  • Toss the chicken thighs in the oil, making sure they are all well-coated.
  • Mix the flour with the seasoning, then toss with the chicken thighs - it will be a very light coating, but you can double the flour and seasoning if you prefer a thicker coating.
  • Arrange the chicken in one layer on the tray of an air fryer without a paddle, and program to cook for 35 mins. Check the thighs are cooked by pulling the flesh on the underside of one away from the bone - it should come away easily and there should be no pink remaining. Cook for another 5-10 mins if needed. The skin should have bubbled and crisped up, and any excess fat from the chicken will have dripped into the base of the fryer (you can discard this). Don't leave the chicken in the fryer, or the steam will make the skin soft again.

Another way to prepare Dutch Meat Croquettes other than with fresh breadcrumbs or potato. Equally delicious! If you make these into little crumbed balls (called bitterballen), you can eat them, dipped in mustard, as an appetiser with pre-dinner drinks.

600 g fresh veal (or use left-over chicken or turkey, 1lb 5oz) or 600 g beef (or use left-over chicken or turkey, 1lb 5oz)
salt and pepper
75 g butter (2 1/2 oz)
1 tablespoon vegetable oil
1/2 cup white wine
1 small onion, finely chopped
1 clove
2 bay leaves
1/4 teaspoon ground nutmeg or 1/4 teaspoon mace
2 sprigs parsley, finely chopped
3/4 teaspoon thyme
2 teaspoons lemon zest (or a squeeze of lemon juice)
2 cups water (or chicken stock)
40 g all-purpose flour (1.5 oz)
cornstarch
3 eggs, separated into yolks and whites
4 cups fine breadcrumbs (beschuit) or 4 cups crushed dutch rusks (beschuit)
vegetable oil, to deep-fry

Steps:

  • If using left-over chicken or turkey, chop it finely and set aside. Continue with the recipe from Step 3, using stock to make the sauce rather than water, and add the chicken or turkey to the sauce at Step 6.
  • If using veal or beef, season with salt and pepper to taste.
  • Place a large pan over medium-high heat and melt 2 tablespoons of butter. Add the veal or beef, wine, onion, clove, bay leaves, nutmeg or mace, parsley, thyme, lemon zest or juice and water. (Use chicken stock if you have chosen to use chicken or turkey.) Bring to a boil, then reduce heat and simmer for 45 minutes to an hour. By this time the meat should be tender (or if using poultry, the stock will be bursting with flavor).
  • Strain the stock and reserve, along with the meat. Finely chop or cut the meat into into small pieces.
  • Melt the remaining butter in the pan, stir in the flour and keep stirring for a few minutes on low heat. Don't let it brown. Slowly and gradually add the stock and cook over moderate heat, stirring until the sauce is smooth and thick. Add more flour, or corn starch to thicken the sauce if necessary. Cool slightly and add the 3 egg yolks and mix well (reserve the whites for later).
  • Add the veal, beef, chicken or turkey, mix well and season to taste. The mixture should be thick and stiff by this time.
  • Set the mixture aside to cool thoroughly. When ready, cut or separate the stiff, thick mixture into rolls about 1.5" thick and about 3" long.
  • Spread the crumbs on a clean, dry chopping board. Slightly beat the eggwhites in a deep plate until just incorporated. Roll the croquettes through the breadcrumbs, then through the egg whites and again through the crumbs. (Make sure that the second coating of crumbs is even and thick and no meat mix sticks out, otherwise the croquettes may burst when being deep fried).
  • Deep fry the croquettes in batches of four or five for about 4 minutes, or until they are golden brown. Drain on absorbent paper.
  • Serve hot, with French fries or fresh chunks of bread. The best way to season is to slather with mustard, as the Dutch do!

2 cups roasted chicken, shredded (cooked leftovers)
1 (10 1/2 ounce) can condensed cream of chicken soup
1/4 cup 2% low-fat milk
1 (6 ounce) box seasoned stuffing mix, mix for poultry (or Copycat Stove Top Stuffing Mix)
1 large egg, slightly beaten
2 tablespoons onions, chopped fine
2 tablespoons celery, chopped fine (optional)
breadcrumbs, for dredging
1/4 cup vegetable oil, for frying (may need more or less)
1 (10 1/2 ounce) can condensed cream of chicken soup
1 cup 2% low-fat milk

Steps:

  • Mix well the chicken, soup, stuffing mix, egg, onion, and celery. Refrigerate 3 hours minimum.
  • Create a 'log' shape from about 3/4 cup of mixture. Gently drop onto the counter to flatten the bottom to form a traditional 'cone' shape. (about 3" high, 2" in diameter), or form patties for a simpler method.
  • Roll croquettes in bread crumbs. (At this point, you can freeze them for up to two months or cover them and place them in the fridge overnight to serve the following day. Just bring them to room temperature when ready to use if frying them).
  • Fry in about 1/4" of oil in skillet over medium heat turning occasionally till golden brown on all sides and bottom, about 10-15 minutes. For a healthier version, they can be baked at 350F for about 25-30 min (from the freezer, bake 45-50 minutes). Keep warm in 200 degree oven.
  • MAKE THE SAUCE: Meanwhile, In a small saucepan, stir the remaining can of soup with milk, stirring until warmed and creamy.
  • Pour over croquettes or serve sauce on the side. Traditionally served atop a mound of mashed potatoes for a wonderful presentation.
