SUGAR-CANDIED PEANUTS
The secret to making these peanuts is to carefully follow the visual cues at each step of the recipe. You want to achieve just the right balance between crystallized sugar and melted caramelized sugar.

Steps:
- Heat peanuts, sugar, and water in a 12-inch skillet over medium heat, stirring occasionally, until sugar is grainy and crystallized, 15 to 18 minutes. (Sugar should not caramelize.)
- Raise heat to medium-high, and continue to cook, stirring constantly, until sugar just starts to melt again. (Sugar will start to caramelize. Adjust heat if sugar begins to burn or smoke.) Sprinkle with 1 1/2 teaspoons salt. Once peanuts are coated, with some crystallized sugar remaining, transfer to a parchment-lined baking sheet; spread into a single layer using a rubber spatula.
- Transfer sheet to a wire rack, and let stand until cool and hardened, about 30 minutes.

SPANISH PEANUT BRITTLE
This peanut brittle is a must at our house during the holidays. Everyone says it is the BEST Peanut brittle that they have ever tasted. My friend Joy says it is better than See's. The recipe comes from my 1953(almost 50 year old) Better Homes and Gardens Cookbook.It takes time, BUT, well worth it.

- In a heavy skillet (I think an iron skillet works best).
- Combine sugar,corn syrup, and water; cook slowly, stirring till sugar dissolves, cook to soft ball stage(275).
- Add peanuts and salt;Stir and watch so that peanuts don't scorch or burn.
- (They will pop & crack you want them to brown some for best flavor.) Cook to hard crack stage(300-310).
- Add butter and SODA; stir to blend,(Mixture Will Bubble), Pour onto buttered cookie sheet or cover with release foil for easy cleanup(do not butter);Makes2 1/2 Pounds.

SUGAR COATED PEANUTS
I've been making these for years and they're always a big hit for the ones that like peanuts. Be absolutely sure to use raw peanuts with skins on. This is very important.

- 1. Dissolve sugar in water over medium heat. Add peanuts and continue to cook over medium heat, stirring frequently. Cook until peanuts are completely sugared, coated with no syrup. You'll know when they get to this point. It will take approximately 30 minutes.
- 2. Preheat oven to 300. Pour sugared peanuts onto an ungreased cookie sheet, which has been lined with foil or parchment paper. Separate peanuts by using a fork.
- 3. Bake at 300 for approximately 25-30 minutes, stirring at 8-10 minute intervals. Remove from oven and cool. Store in an air tight container.
