2 cups sugar
2/3 cup cream
2 ounces unsweetened chocolate
Salt to taste
1/8 tablespoon butter
1 teaspoon vanilla
1/2 cup dry-roasted crickets, chopped (see note)

Steps:

  • In a saucepan, mix sugar, cream, chocolate and salt. Cook over medium heat, stirring constantly until chocolate is melted and sugar is dissolved. Continue cooking, stirring occasionally, until candy thermometer reads 234 degrees, or until a small amount of mixture forms a ball when dropped into ice water. Remove mixture from heat and add butter.
  • Cool mixture to 120 degrees without stirring. Add vanilla and beat vigorously with a wooden spoon until candy is thick and no longer glossy -- about 7 to 10 minutes. Stir in insects. Spread evenly in a buttered loaf pan. Cool until firm. Cut into 2-inch squares.

1 stick unsalted butter, at room temperature, plus more for the pans
2 1/2 cups all-purpose flour, plus more for the pans
4 ounces semisweet chocolate, chopped
1 1/2 cups whole milk
1/2 cup unsweetened cocoa powder (not Dutch-process)
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup vegetable oil
1 1/2 cups packed dark brown sugar
1/2 cup granulated sugar
1 tablespoon pure vanilla extract
4 large eggs
For the frosting:
24 ounces semisweet chocolate, roughly chopped
1/3 cup light corn syrup
2 1/2 sticks (20 tablespoons) unsalted butter, cut into pieces, at room temperature
2 1/2 cups confectioners' sugar

Steps:

  • Make the cake: Preheat the oven to 350 degrees F. Butter two 8-by-2-inch-round cake pans and dust with flour, tapping out the excess. Combine the chocolate, milk and 1/2 cup water in a microwave-safe bowl. Microwave in 30-second intervals, stirring, until the chocolate is melted; whisk until smooth, then let cool. Meanwhile, sift the flour, cocoa powder, baking powder, baking soda and salt into a large bowl; set aside.
  • Beat the butter in a large bowl with a mixer on medium speed until creamy, about 4 minutes. Add the vegetable oil, brown sugar, granulated sugar and vanilla; beat until fluffy, about 4 more minutes. Add the eggs, one at a time, beating until incorporated. Reduce the mixer speed to low and add the flour mixture in three batches, alternating with the melted chocolate mixture; beat until just incorporated.
  • Divide the batter between the prepared pans and smooth the tops. Bake until a toothpick inserted into the centers comes out clean, 45 to 50 minutes. Let cool 20 minutes in the pans, then run a knife around the edges and invert onto a rack to cool completely.
  • Reheat the oven to 350 degrees F. Line a rimmed baking sheet with foil. Using a long serrated knife, cut each cake in half crosswise to make 4 layers. Crumble one of the layers into small pieces on the baking sheet. Bake until dry, about 20 minutes; let cool completely. Cover with parchment paper and crush with the bottom of a saucepan to make coarse crumbs; set aside.
  • Make the frosting: Combine the chocolate, corn syrup and 1/2 cup hot water in a large heatproof bowl set over a pot of simmering water; stir until melted, about 5 minutes. Remove the bowl from the pot and let cool 10 minutes. Transfer to a stand mixer fitted with the whisk attachment and start beating on high speed; beat in the vanilla, then the butter, 1 tablespoon at a time, until fluffy. Gradually add the confectioners' sugar and beat until creamy. Refrigerate, stirring occasionally, until thick enough to spread, about 10 minutes. (If the frosting is too thick, microwave in 10-second intervals for up to 30 seconds to soften.)
  • Put one cake layer on a platter; spread 1 heaping cup frosting on top. Add another cake layer, more frosting and the last cake layer. Cover the top and sides with the remaining frosting. Press the reserved cake crumbs all over the cake.

170g unsalted butter, melted, plus extra for the tin
1 tsp vanilla extract
170g caster sugar
225g self-raising flour
25g cocoa powder
1 large egg, beaten
2 tbsp granulated sugar

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter a 20cm square tin and line with baking parchment. Stir the melted butter and vanilla together in a bowl. Mix the caster sugar, flour and cocoa together in another bowl.
  • Pour the bowl of wet ingredients into the dry and beat together, then add the egg and beat again until combined. Press into the prepared tin. Brush the top with water and sprinkle over the granulated sugar.
  • Bake for 30-35 mins. Leave to cool slightly in the tin for 5 mins before slicing into squares and transferring to a wire rack to cool completely.

South African Chocolate Crunchies image

They are crunchy squares with a yummy chocolate topping. They are easy to make and popular with kids to make and eat. Once made they won't stay around for long. There is a version of these that does not use chocolate but they are not as popular. I have reduced the sugar to 1/2 a cup, if you would like them sweeter use 1 cup of sugar.

1 cup flour
1 cup oats
1 cup coconut
1/2 cup sugar
2 tablespoons cocoa
125 g butter or 125 g margarine
2 tablespoons syrup
1 teaspoon baking soda
1 cup sifted icing sugar
2 tablespoons cocoa
1 tablespoon butter or 1 tablespoon margarine
1 teaspoon vanilla
2 tablespoons milk

Steps:

  • Mix all the dry ingredients for the crunchies, except for the baking soda.
  • Melt the butter and syrup together.
  • Add the baking soda and stir.
  • Pour into the dry ingredients and mix well.
  • Press into a medium sized greased baking pan, about 10 by 8 inches.Use the back of a spoon to press the mixture together and smooth the top.
  • Bake for 20 minutes at 350dgrees F.
  • Mix together all the ingredients for the icing
  • Microwave 1 or 2 minutes until mixture is smooth.
  • Pour the hot icing over the hot crunchies, tilt pan to cover the entire surface of the crunchy.
  • Cut into squares when cool.

CHOCOLATE-FILLED CROISSANTS (PAINS AU CHOCOLAT)

1/2 recipe croissant dough (1 lb 6 oz), chilled
32 bittersweet chocolate batons (6 oz)
Special Equipment
Ruler, pastry brush, parchment paper, 2 garbage bags (unscented), spray bottle with water

Steps:

  • Roll out and cut dough:
  • Roll out dough on a lightly floured surface, dusting with flour as necessary, into an 18- by 10-inch rectangle. Brush off excess flour with pastry brush and trim edges with a pizza wheel or sharp knife. Cut dough vertically into fourths, then horizontally into fourths to make 16 rectangles.
  • Form pains au chocolat:
  • Place 2 batons, flat sides together, along a short side of 1 rectangle about 3/4 inch from edge, letting batons extend over sides. Fold bottom edge of dough over batons and roll up dough around chocolate. Place, seam side down, on a parchment-lined large baking sheet.
  • Make more pastries in same manner, arranging them 2 inches apart on baking sheets.
  • Let pains au chocolat rise:
  • Slide each baking sheet into a garbage bag, propping up top of bag with inverted glasses to keep it from touching pastries, and tuck open end under baking sheet.
  • Let pastries rise until slightly puffy and spongy to the touch, 2 to 2 1/2 hours.
  • Bake pains au chocolat:
  • Adjust oven racks to upper and lower thirds of oven and preheat to 425°F. Remove baking sheets from bags. Spritz inside oven generously with spray bottle and close door. Put pastries in oven, then spritz again before closing door. Reduce temperature to 400°F and bake 10 minutes without opening door.
  • Switch position of sheets in oven and rotate sheets 180°, then reduce temperature to 375°F and bake until pastries are deep golden, about 10 minutes more.
