60 MINUTE DINNER ROLLS
These are some of the best dinner rolls I've made! The recipe came from a cookbook that my hometown puts out called High Altitude Country Kitched Vol.1 Oct.1995 thru July 1999. This recipe can give you homemade rolls in just 60 minutes!!! What could be better than freshly baked hot rolls to compliment a dinner?! These are wonderful hot right out of the oven or cold the next day for sandwiches! Hope you enjoy them as much as I do!

Steps:
- Preheat oven to 425 degrees F.
- In a large bowl, thoroughly mix 1 1/2 cups flour, sugar, salt and undissolved dry yeast. Set aside.
- In a saucepan, combine milk, water and margarine or butter.
- Heat over low heat until liquids are very warm (120 to 130 degrees F). (Margarine does not need to melt).
- Gradually add warm milk mixture to the dry ingredients.
- Beat at medium speed for 2 minutes, scraping bowl occasionally. (I use my KitchenAid Mixer).
- Add 1/2 cup flour and beat at high speed for 2 minutes, scraping bowl occasionally.
- Stir in enough additional flour to make a soft dough.
- Turn dough out onto lightly floured board; knead until smooth and elastic, about 5 minutes.
- Place in a greased bowl, turning to grease the top.
- Cover and place the bowl over a pan of water that is about 98 degrees.
- Let rise for 15 minutes.
- Punch dough down and turn out on a lightly floured board.
- Shape into rolls and place them on a well grease pan.
- Cover and let rise in a warm, draft-free place for about 15 minutes or until almost doubled in bulk.
- Bake at 425 degrees F for about 12 minutes.
90-MINUTE DINNER ROLLS

- In a large bowl, combine 3/4 cup flour, sugar, yeast and salt. In a small saucepan, heat the milk, water and butter to 120° -130°. Add to dry ingredients; beat just until moistened. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Cover and let rest for 10 minutes., Divide dough into 12 pieces; shape each piece into a roll. Arrange in a greased 9-in. round baking pan. Cover and let rise until doubled, about 35 minutes. , Bake at 375° for 20-25 minutes or until golden brown. Remove from pan to a wire rack to cool.

EASY DINNER ROLLS
They are so good and ready in just a couple hours!

Steps:
- Combine 3 cups flour, undissolved yeast, sugar, egg, and salt in a large bowl or in the bowl of your stand mixer fitted with dough hook.
- Heat milk until very warm (110°F to 120°F).
- Add warm milk to flour mixture. Knead 2 minutes at medium speed, scraping bowl occasionally if needed. Add 1/2 cup flour; knead 2 more minutes.
- Add remaining 1/2 cup flour. The dough should be pulling away from the sides of the bowl and very soft. (If the dough seems too wet you may need more flour. Add in 1/4 cup increments until the dough has pulled away from the sides of the bowl while kneading.)
- Cover with a clean towel and let REST 30 MINUTES.
- Remove towel and punch down dough.
- Divide dough into equal pieces and shape into balls. Place in greased 9x13 inch pan. Cover with plastic wrap and REST in a warm place - over 70°, preferably 75° - until doubled in size, about 30 minutes. (I had 6 left over and added them to a greased 7-inch pie dish and baked as directed.)
- Bake in preheated 375°F oven for 12-17 minutes or until golden brown.
- Brush with melted butter while warm.
- Sprinkle kosher salt on top if desired.

- Beat very hard, then add the remaining 1 1/2 cup flour.

I made these one time to go with soup that we were having for dinner. I made the dough balls too big and/or let them rise too much and they ended up being huge, but they were good and they were easy to make.

Steps:
- Mix warm water, oil, sugar and yeast; let rest for 10 minutes until yeast activates.
- Add salt and beaten egg; blend well.
- Add flour, one cup at a time until soft dough if formed.
- Knead on a floured surface 5-10 minutes or until dough is smooth and elastic.
- Shape into small balls (walnut sized) and put into a greased baking pan.
- Let rise at least 5-10 minutes.
- Bake at 425 degrees for 15-20 minutes.
- *If you have more time, you can let the rolls rise in the pan until they have doubled in size.

- Fit mixer with whisk attachment. Add in 1/3 cup sugar, warm milk, 5 Tbsp butter, egg and salt to yeast mixture. Blend (butter will remain separated at this point and that's fine).
- Switch mixer to a dough hook attachment. Add remaining 2 1/2 cups flour and mix until dough is nearly smooth and is elastic, about 4 - 5 minutes (dough should be slightly sticky).
